- We are going strong with the retro recipes! This time around it's Watergate salad! This bright green, creamy concoction is full of pineapple, marshmallows, pecans and of course whipped topping and pistachio pudding. A true throwback to the 70s or is it? I am also going to share some information with you on the origins of this delicious "salad" that is really a dessert. #Homemade #RetroRecipe #WatergateSalad
This is truly a throwback and anyone who grew up in the 1970s knows exactly what this is. Maybe you haven't had it in a while or maybe it is a regular guest at your holiday dinner or church potluck. In any case if you love all things creamy, pineapple-ee and marshmallowee, then you are going to love this.
The best part of this salad is that it is easy to make. Toss everything in a bowl and stir it up. Put it in the fridge and you are good to go. You can eat it right away or you can chill it and it is even more delicious. You can make this with one or two boxes of pudding mix. I must admit, the two boxes made this ultra sweet. So make it your own.
Mix up the nuts or leave them out. I used pecans, but you could use pistachios, walnuts or slivered almonds if you prefer. Do you like more marshmallows? Toss them in. Like less, back off a little. You see where this is going right? You can customize this to suit your taste. You could even add cherries and coconut to this for even more flavor. Or you could serve them on top when dishing this up for a cool summer dessert.
The origins of this salad are vague but here is what I learned:
The origin of the name “Watergate salad” is obscure. The recipe was published by General Foods (since merged into what is now Kraft Heinz) and called for two General Foods products: Jell-O instant pistachio pudding and Cool Whip whipped topping, a whipped-cream substitute. According to Kraft, "There are several urban myths regarding the name change, but we can’t substantiate any of them." Several competing explanations exist.
Kraft Corporate Affairs said: "We developed the recipe for Pistachio Pineapple Delight. It was in 1975, the same year that pistachio pudding mix came out." Kraft, however, didn't refer to it as Watergate Salad until consumers started requesting the recipe for it under the name. "According to Kraft Kitchens, when the recipe for Pistachio Pineapple Delight was sent out, an unnamed Chicago food editor renamed it Watergate Salad to promote interest in the recipe when she printed it in her column." Neither the article nor editor has been tracked down, however.
The Denver Post, in the Empire Magazine of June 27, 1976, published a recipe for Watergate Salad. Rumor has it that Watergate salad was a concoction thought up by a sous chef at the Watergate Hotel, and it was then served at brunch on most weekends. Watergate Salad took off in popularity during and after the presidential scandal which shares the same name. However, the Denver Post article does not verify this rumor, noting like most sources that the origins of the name are obscure.
Syndicated household advice columnists Anne Adams and Nan Nash-Cummings, in their "Anne & Nan" column of October 9, 1997, reported that name came from the similar "Watergate Cake" (which shares most of the same ingredients) "The recipes came out during the Watergate scandal. The cake has a 'cover-up' icing and is full of nuts. The salad is also full of nuts." Both cake and salad were part of a trend for satirically-named recipes such as Nixon's Perfectly Clear Consomme and Liddy's Clam-Up Chowder.
In 1922 Helen Keller published a similar recipe, calling for canned diced pineapple, nuts, marshmallows, whipped cream and other ingredients. "I ate it first in California, so I call it Golden Gate Salad". Similar "fruit salad" and "pineapple salad" recipes had been published in the 1910s, and "Golden Gate Salad" was served in some American hotels.
I hope this has been a fun trip down memory lane for some of you and I hope that if you haven't met watergate salad that you will give this a try sometime soon and love it!

One of my favorites. I can remember my Mom making Watergate Salad for ever Holiday Christmas, Thanksgiving, Easter, 4th of July. She would add the cherries at Christmas. Fond memories of my Mom!

I was born in 1983. I remember being a kid and having this around the holidays. We always called it the "green stuff".
Every family has a different name. I grew up with another Jello dessert with cottage cheese, crushed pineapple, strawberry jello and cool whip. We always called it “pink goop”. Lol!
I love my American friends! You all will call anything salad. Why could I not have been forced to eat this kind of salad as a kid?!!! :)

This has been one of my favorite holiday desserts since I was little. My Grandma would always make it for me, unfortunately she passed away a couple months ago so this will be my first Thanksgiving without her and her amazing Watergate.

My parents are from Springfield Missouri, you can't throw a rock without hitting a church and this is revival season. Summer time. It didn't matter if they were Baptist which is what we were raised as or not if they were having a revival or Vacation Bible School my Mother was sending us off to them. She didn't care where it was, she cared about how long her 5 children would be gone. They served this at every one of those churches.
I make this all the time. It's delicious. I don't use nuts though because of allergies.

It’s a staple. My family would riot if I left it out. I make Ambrosia for Easter and a cherry version for Christmas. I’ve always heard it was called “Watergate Salad” after the Watergate Hotel claiming the recipe came from one of their chefs.

Please do the original homemade jello pudding pops!!! I loved the ones my mom made back in the seventies. We would mix them up, pour them into our popsicle mould (Tupperware of course), and then the torture of having to wait would begin. She finally figured out to make them at night before bed that way I would forget about them, and they would be ready for after lunch. Just the best treat on a summer afternoon!

But my mom added _maraschino cherries;_ & instead of pecans, she used chopped _Snickers bars._ So delicious!

Looks yummy and I remember my Mother making this salad!
Made this for pot luck Thanksgiving dinner about 15 yrs ago, the bowl was a huge one from Tupperware. The family celebration I took it to had never had it, there was not one tsp left in the bowl. The recipe I used also called for maraschino cherries that was fantastic in the salad, need to drain and cut in half. Now being diabetic I use the sf pudding and sf Cool Whip, you honestly can not tell the difference.
I always put the pudding on first and then add the pudding mix. I mix it together before I add the pineapple and walnuts.

Oh my goodness, my grandma used to make this at EVERY holiday dinner! Hers had pineapple and grated carrot. I didn't like it at all as a little kid but then it grew on me.

I have never had this! We do a lime jello with whipped topping and canned pears. We call it “Green Glop” and it’s a Thanksgiving essential. Comes out the same color even though the only ingredient in common is the whipped topping!
We always had Watergate salad for the holiday''s while I was growing up.. I make it for Christmas Eve/Christmas Day dinners. We make it without the marshmallow though. We just use the Pineapple, pudding mix and whipped topping.. We don't add extra nuts either.. I may try adding more nuts like you did... it sounds like it would add more of a crunch to it.

AVeryHappyLife My grandma make orange jello with shredded carrots and crushed pineapple in it. I couldn’t even taste the Rae shredded carrots so I gobbled it up, she and a cafeteria served cut in squares on lettuce leaves plated. Yum!

I make ice cream with pistachio instant pudding in it. The pudding mix itself has dark specks in it. I tried to remove them until I discovered they were bits of pistachio.

This looks so yummy! 😋 We don't have Cool Whip over here in Germany. Has anybody tried it with plain yoghurt or maybe Greek yoghurt?
You could try. But yogurt is too thick and nothing like whipped topping. For a more similar substitute I recommend whipped cream that has been slightly sweetened and stabilized with gelatin.

This used to be available at every grocery store deli by the pound. I'm not sure when it disappeared.
covid made a lot of things disappear from deli counters far and wide and they have just never returned. Stores saw their bottom line improve with less overhead and they started seeing how much they were tossing and decided what they were paying for to go in the trashi. So there you go.

sewkidd I make mine with cottage cheese as well and whipped topping walnuts and pineapple with lime jello. The lime jello is really refreshing in the summer.

The flecks aren't from the pineapple, it's the nuts in the pudding mix.
