As a baker (pastries and cake decorator) for 40+ years, I can honestly say that I find that the right additions to boxed cake mixes (many of which are in this video) really do make them taste better than most bakery cakes! And since the box cake companies have all decreased their original amount of dry mix from just over 18 ounces to just over 15 ounces (yet they sure didn't decrease the price of them!), the additional ingredients added will result in more cake batter. I have a few tips to share that may help you and/or others. When making a boxed cake mix, I find it's better to first blend all of the wet ingredients together, then add the dry ones, and then mix for the time specified on the box. This helps ensure the eggs and other wet ingredients are well blended but without over mixing the dry ingredients because it's often over mixing the flour (cake mix) that can result in less desirable results. Just be sure to mix for the full amount of time instructed on the box after adding the dry ingredients, or that can also give you less desirable results. Another tip is to not bake cakes quite as long as the instructions say to because the cakes are hot enough when removed from the oven that they continue to cook for a bit longer afterward. As for using dark, non stick pans, if you line them with parchment rounds (bought pre cut or cut your own), that will help prevent them from becoming too dark on the bottom and will prevent them from sticking (but you still need to grease the pans as instructed). I actually do this with all types of cake pans, except for bundt pans. To prevent the cake from sticking to the paper (as the cakes were being stacked and iced), if you turn them out on a wire rack about 10 minutes after removing them from the oven, the paper won't stick to them. It's the moisture from the condensation that forms as they cool that causes the paper to stick to them, so cooling racks are a must for me. Be sure to allow the cakes plenty of time to cool before icing because the icing will melt if you don't, causing the top layer to slide right off. But cakes actually tend to do better when they are allowed plenty of cooling time because it gives them a chance to 'settle', resulting in a more stable cake. And a more stable cake is far less likely to break or crack when lifted to place on the cake plate or when placing one layer on top of another, as well as less likely to split or crack after being stacked and iced. As for things you can add to a boxed cake mix, I also add a small box of INSTANT pudding mix, using a flavor that compliments the flavor of the cake I'm making And I use milk instead of the water called for. Just replace the water with the same amount of milk (whole, reduced fat, or skim). You can also use half liquid coffee creamer (flavored or plain) with half milk or half water. But if using flavored creamer, just make sure the flavor of the coffee creamer compliments the flavor of the cake. I always add extra vanilla extract. If you are making chocolate or Devils Food cake, adding a teaspoon of coconut flavoring gives it a special, unique taste, but without making it taste like coconut. Orange flavoring and instant coffee powder also go well with chocolate, but you can experiment with any combination of flavors of cake mixes and flavorings to get the ones you prefer. If you like maraschino cherries, you can drain them, then puree them into a paste and add that to the batter (there will be no noticeable bits of cherries in the baked cake). You can save the juice from the cherries to use as your liquid, but you may have to add another liquid to equal the amount of water called for in the instructions. You can also do the same with icings. Just make sure the flavoring(s) you use compliment the flavor of the cake. And, like you, I always add extra eggs! If I want a denser cake that will stack well, such as for a wedding cake, I'll use two extra eggs, but if I want a lighter cake, I'll use just one extra egg. But it's really just a personal preference, whether it's a two layer cake or a multi-tiered cake. Adding ½ to ¾ cup sour cream to the batter also helps give it moistnesss. Simply add it in with the wet ingredients. I also add melted butter to box cakes, but I add the full amount of oil the instructions call for, then add 1/2 to 1 stick melted butter, too (the amount is purely a taste prefence). This way, it has the lighter moistness the oil gives it, plus the yummy butter flavor. Since butter solidifies at room temperature, I've found that, in some box cakes, using only butter can make it a bit too dense. Lastly, to help get a nice, even top on your cakes, spread the batter as smoothly as you can and, then using both hands, 'spin' the filled pans in the same direction on a flat surface, such as your counter top. This will 'sling' more batter out towards the side of the cake, leaving less batter in the center to form a dome on top. Just be careful not to spin it off onto the floor. 😉 Also, decreasing the oven temp by about 25 degrees (F) will often help result in a more level cake and with a finer crumb. But if you do decrease your oven temp, you'll have to bake it a bit longer than you otherwise would. When your cake is cooled and ready to frost, these tips will help you get a smooth finish, with no crumbs in the frosting. After applying the frosting on the bottom layer, then adding the top layer, apply a 'crumb coat' (a thin layer of frosting) on the entire cake and let it chill in the fridge for a few minutes to set. This will seal in the crumbs, keeping any from the final layer of frosting and giving your cake a much neater, cleaner look. After the crumb coat has set, apply a generous amount of the final layer of frosting. I prefer to do the sides first, then the top. If you want a nice, smooth finish on your icing, just dip your metal spatula in very hot water, wipe dry, and then run it over the icing for the final finish. You can remove any excess frosting during this process; I find it easier to apply a lot of frosting, then remove the excess as I smooth it out. You may have to dip it several times to get the whole cake smooth, but it gives a beautiful finish to the cake. My basic butttercream frosting recipe and Whipped Frosting recipes: This a basic American buttercream frosting, and it's super easy to make and is delicious! The following is the amount I make when making frosting to fill and frost a 2 or 3 layer cake, with enough left over to pipe flowers, borders, etc. If you only want enough to fill and frost a cake, you can just cut the amount of ingredients in half. Ingredients *1 pound (4 sticks) room temperature butter (I like salted because it cuts down on the sweetness, but you can use unsalted. Although with unsalted, you will have to add a bit of salt to the icing). *2 pounds powdered (icing) sugar *2 tablespoons vanilla extract (I use only real vanilla, never clear or imitation) *1/4 - 1/3 cup heavy cream, light cream, or milk for desired consistency Directions Beat butter until it's lighter in color, soft and creamy (butter becomes much lighter in color if you beat it at least 5 minutes). Add sugar, beginning with a cup or two at a time, then gradually adding all of the sugar. If you add it all at one time, you will have a huge cloud of sugar all over your kitchen and on you, so be sure to also mix on low until it's incorporated well. Add the vanilla extract, then the cream or milk a bit at a time until you get the consistency you want, then beat until frosting is smooth and creamy, and all ingredients are fully incorporated. It's best to start out with less liquid, then add more as needed so you don't end up with your frosting too thin. But if it does become too thin, just add a bit more sugar until it's as thick as you want. And if it's too thick, then just add a bit more of the milk or cream as needed. The amount of liquid needed sometimes varies because the warmer it is in your kitchen, the less liquid you may need for the frosting. NOTE: This icing will keep for 3 days at room temperature (covered), 2 - 3 weeks in the refrigerator (covered), and can be frozen for 3 - 4 months if well sealed. If refrigerated or frozen, just set out to come to room temperature (keep covered), then beat again before using. I prefer to use salted butter to cut down on the sweetness, but you can use unsalted butter if you prefer (or half salted and half unsalted). But if you use unsalted butter, you need to add a pinch of salt to the icing. As for the liquid, you can also use undiluted evaporated milk or liquid coffee creamer, including the flavored ones, if you want to give it a seasonal flavor, such as pumpkin spice for Thanksgiving or Christmas. There are many different flavors of liquid coffee creamers, so just select one that will compliment the flavor of your cake. FOR A WHIPPED FROSTING: Beat one quart of very cold, heavy (whipping) cream until it is about half-way whipped (thick, but just before forming peaks), then add one large box or two small boxes of INSTANT pudding mix (any flavor) and beat until thick - which will only take another minute or two. This makes plenty of whipped frosting to fill and frost a 2 or 3 layer cake. But this one must be stored in the refrigerator! FOR A STABILIZED WHIPPED CREAM FROSTING Whip 1 cup cold mascarpone with ½ cup powdered sugar and 1 teaspoon vanilla extract just until smooth and creamy. Add 1 ½ cups very cold heavy cream, and whip just until smooth. If you prefer a sweeter cream, add more powdered sugar to taste before adding heavy cream (I use 1 cup). This must be stored in the refrigerator! If you prefer to use a canned frosting instead of making your own, the canned frosting will be lighter, fluffier, and increase in volume if you first whip it with an electric mixer, or whip vigorously by hand with a whisk.

I'm 64, and I've never had a birthday cake. We were too poor , growing up, and as an adult, I never married or had kids, so I've pretty much ignored my birthday because it's never been a big deal. But, I must admit I teared up, watching this young woman decorate the top of the cake with the green frosting. She's a wonderful young woman, and I'm sure her grandfather deserves the kindness she shows him in doing this for hm. AND, I love chocolate cake, so I've made the boxed ones with the "jar" of frosting, but it's really not good at all. So, I plan on following her tips and trying to make one her way. Only thing I'll have to look up is how to make the frosting, my fav part. The store-bought frostings are really bad, so her "buttercream" one sounds very good, by comparison.

Our daughter married a young man who is very much like her grandfather. She also married him on the anniversary of her grandparents. They married in 1941 so she married in 2014. All five of our children loved their grandparents and they knew it!

I made the mistake of getting into a conversation on Pinterest (of all places!!) and these nuts were using ‘f’ words, calling each other names, questioning their parentage...I try to keep my “teacher voice” - - or writing, as it were - - to a minimum, but I had to scold them. I know it wasn’t my place, but there are tons of kids floating around there, and besides...Pinterest?? We make muffins, and pickles, and learn how to turn a can of green beans into a soufflé with magic sauce. We don’t need that stuff!

My mother decorated cakes. I used to watch her, growing up. She always kept a glass of hot water on the counter as she decorated. She would dip her icing spatula in it every couple of minutes. This would keep the spatula clean and warm so that the icing would spread easily and smoothly.
Another tip is to separate the yolk and egg whites. Mix the yolk in with the batter. Mix the egg whites separately till fluffy then fold into the pre mixed battter as last step. The cake will be fluffy and moist!

Kbh, that's very Australian to whip the egg whites into stiff peaks and fold into the cake batter last.. some people add a teaspoon of custard powder Would probably only need 3 eggs and leave out the jello, for a lighter fluffier cake. Good way to make a market ginger fluff sponge🤔🌿🌻
Same here. I do the same thing & sometimes i use juice. My last triple lemon cake sold at a charity auction for 150.00$😅 and after that i actually sold some. These box hacks really do work!!
I do, too! I have seen so many cake videos on UA-cam where the one making the video never responds to anything other than the ones that say "It's beutiful", etc. But Nerissa goes above and beyond so many other videoers (is 'videoers' a word? lol), even though she's got her hands full with all she does. And I like that (and her!) a lot.
I learned almost 50 years ago that you freeze the unfrosted cake and then put on the frosting. That way the cake doesn't crumble for the icing process.
I love this!!!! Made these into cupcakes for my son's 1st bday party. Tried 3 different flavors before his party to see which one I liked more. I think I've eaten 20 cupcakes in the past 3 weeks alone. LOVE THEM.

you did an amazing job! wanted to give you a tip as I worked as a cake decorator in a bakery for a number of years. Ok the Tip: you can take a spray bottle filled with water and spray the cake as you smooth the icing with your spatula. It will help make the icing as smooth as possible and will cut down on the crumbs. again beautiful job and good luck I'm sure your Grampa loved it!
Make sure the cakes, are completely cooled before putting them on parchment paper. If they are not cooled they will sweat, causing them to stick. Use a wire rack to cool cakes so that air will surround them. I can't wait to try this cake!
my grandma always made a triple chocolate cake using pudding mix, milk and extra egg. omg it's so good. basically chocolate cake mix, chocolate pudding and an entire bag of chocolate chips sprinkled all over the top. they melt down into it and it's like heaven lol

The Cake Doctor. A wonderful book I picked up at a thrift store. She has tons of recipes for cakes using boxed cake mixes and then adds her special twist. She also explains what the different ingredients contribute to the cake as far as texture, taste, how it rises, etc. I've never made a cake from that book that I didn't love.
I have that book too! My mother used to put jello pudding in her cakes when I was a child of around 8 years old & I’ve done it ever since! It really makes difference!! This is a very inexpensive cake & cake idea!!
Has anyone noticed how small cake mixes are these days? You used to be able to get a decent size bundt cake using one box mix, the butter, the jello pudding, and we often used a packet of Dream Whip which gave it lots of volume (but possibly too-fine texture). In those days the average box mix was 22-24 oz; then they suddenly were 18 oz. That makes a huge difference and I couldn't figure out what I was doing wrong, the cake came out flat and small. Not sure but I think they are now about 15 oz. (That's almost 40% less product!!) I haven't made cake lately cos I know a standard sheet cake will only be about an inch and a half tall, where they originally would be 2-3" high. A bundt cake needs to be at least 4" high. Maybe I'll try using two boxes, but it sure would be nice if they just remained consistent. I'd gladly pay a little more to be able to rely on the product to do what it has always done.
I've never cut the tops off my cake. My dad always taught me that u can put them bottom to bottom and I've done it that way my whole life. Your cake does look yummy

I don't know how many times a friend had been eating something I made, asking "This is great bro! What's the recipe?" And I'm all, "MAN! ION'TKNOW! I threw stuff in the pot till it taste good! Dats it!"😆
Here's a few tips I learned from a Wilton class about 35 years ago. Put your cakes in the freezer after they've cooled. So much easier to frost a frozen cake, than a room temp cake. You can brush off the crumbs before frosting so that your frosting has fewer crumbs in it. Put a tablespoon (or more) of your icing on the cake round before you put your bottom layer on it. That will help hold your cake in place. Put your first layer down with the flat side facing up. You want your two flat sides facing each other in the middle. Put down a few strips of waxed paper that will extend just about an inch under the cake. When you are done frosting, you will remove them to leave a clean edge. Use your outer frosting and pipe about a 1/2" thick layer of that frosting around the top of your first cake layer. Then carefully spoon your filling in the middle and gently spread it out close to the frosting. This will eliminate any of your filling getting mixed with the frosting on the outside.
Hi how do you store the cakes over night before adding the spreads or anything the next day? And do you need to add that water and sugar mix to the cakes before storing them overnight ?
Both of my grandfathers passed away before I was born and watching you bake your grandpa a cake brought me to tears. I always longed for a grandpa and it’s so nice to see you love and honor yours. I agree with this as well I’m a young 14 year old baker, and in my recipes I add a splash of Vanilla to some of my cakes, and to my buttercream and everyone ask me my secret but it’s not a secret. Adding melted butter and milk makes a difference.
A vanilla cake mix or a butter cake mix, a stick of butter and 1 egg makes delicious cookies. My grands love making cookies when they are here. Its a quick little recipe

My daughter was tasked with getting a cake for a last minute baby shower. No local bakeries could meet the deadline so she called me, her dad. I have been known to like to make a cake every now and then so she asked if I would be able to do it. I accepted the challenge but the pressure was on to deliver something amazing. I followed this recipe to a T and it was a big hit. One thing I learned while trying to achieve a smooth buttercream icing was that after the crumb coat was set up and it was time to frost, not to have the cake too cold. The buttercream started to cool off from the cake and become too stiff to smooth out nicely. I said a few bad words. Thank you for making this video.
I hope you like it ! not too sweet but it is our family favorite to this day .I started it in 1984 there was so much heavy cream and I asked the LORD what to make with the Cream and that is when I made it for the first time i made a chocolate Cream too rich by itself so I decided to put it on my chocolate cake and use it as a filling and the frosting and that was 1984 my kids were 9 and 11 That was the first of the next 5 children all -call it Mom's Cake I just always maked it for Raymond my first he is with Jesus
The cake I chose was a white box mix. White chocolate pudding. I added a tsp of vanilla. Used 5 lg eggs and had a 28 min bake time. This is the most amazing box hack cake Ever!! It's almost in a pound cake category. I did the middle frosting with heavy whipped topping and ground up strawberry jello about less than 1/2 c. and strawberry preserves mixed in...the gelatin helped thicken it like a frosting consistency. Frosted the outside with cream cheese. I dusted chocolate over the top as the flavor profile was Neopolitan and it came out Perfect!!
Very good tutorial. I love vanilla buttercream frosting! I always break the eggs separately because not only can eggshells end up in the mix, but also blood from the eggs.
Have you tried making it with 1 LG box instant vanilla pudding, 1 cup sour cream, 1 cup oil (or butter) 4 eggs, and 1/2 cup of milk? The sour cream makes it so moist! This is how I make all my box cakes. I will try your way next time and see how they compare.☺️ Thanks for the video!

Just made this cake for early Thanksgiving!~I used 4 large eggs, put in pumpkin eggnog in place of the milk, and some irish creme liquor! Made a half batch of butter creme with more irish creme in it, just taste-tested it, wow! Very rich, and satisfying!!!
I am 71 years old and never had anyone make a birthday cake for me. When I was growing up there were 6 kids in my family and my parents didn’t have money to buy much of anything. As far as birthday cakes we never had one nor did we get anything for our birthday. This video made tears come to my eyes as she made that beautiful cake for her granddads birthday. My birthday is in March. Loved the decoration on her cake.

OMG......So here is my update. I don't think I could've handled keeping the oil in the recipe and the additional butter. This instructions for this video were perfect as is! I baked this cake for my husband's birthday yesterday and I literally can not stop eating it! We had chocolate frosting on our though. Thank you so much for this video. I've baked cakes for years for weddings, birthdays and other special occasions and always used boxed mixes. I've done these same hacks, however, I used duck or goose eggs when I could get them. Great job!
Wedding cakes??!! OMG! I know you didn't make some poor bride's wedding cake with box mix?! How much did you charge her? Every wedding cake I know of was very expensive.....so with your add ins, you possibly spent less than $20 and profited hundreds! Some wedding cakes cost over $1000 depending on the size. I really hope that's not what you did...😢😢😢

This cake looks wonderful! Can't wait to try! If your raspberry frosting seems a bit soft just refrigerate it after you have spread it on the bottom layer for about 20 minutes it will help firm it up. Then you can lay the flat side of the cake against the frosted middle. The cake will be just slightly rounded at the top but it still looks great and will taste wonderful and it will help keep your middle frosting from squishing out at the sides. Just an old hack I learned. Enjoy baking everyone!
I have been baking cakes like this for the last 20 years. My father replaced the water with milk, added extra eggs. He replaced the oil with mayonnaise. Ovens will bake differently because of the elevation where you live. Also the air moisture and air pressure has a lot to do with this. I made this recipe with a yellow cake mix and it turned out fantastic. FYI, the batter was much thicker than a regular box cake mix batter so I used a total of five eggs. It was still thick, but no worries because the cake was so freaking good! Thank you, thank you thank you!

I always doctor cakes like this with my favorite frosting which is one package instant pudding mixed with 1 cup of cold milk then folded into one tub cool whip. So good!

Making a lemon crunch cake rn & using this method w/ a few tweaks: 1 scoop Minute Maid lemonade mix as well as 1 box of Lemon Starburst Jello mix (in place of the pudding mix) that I found at Walmart. Oh & I use 1 cup heavy cream instead of milk. I always make strawberry crunch cake & wanted something different so I made lemon crunch for the exterior once I ice the cake. ❤️

I"ve made this cake several times in diff flavors. Lemon, Chocolate, Yellow, and Strawberry. Each time it was a huge hit. My fav is the chocolate. My daughter doesnt like chocolate cake but she tried a piece anyway and said OMG Mommy.... this cake is so moist and good. Let ‘Em Eat Cake! Thanks for vid. There’s comments asking why use the box mix at all? There are so many ways to have your cake and eat it too! Box cakes have been around since the 1930’s so they have all the ingredients already just right for you. Adding more to it for flavor and to make it special makes sense. If you want to make scratch cakes there’s more info than ever online to learn. I learned as a kid with box mixes then took formal classes in the 80’s. But I will make them either way. So whether box, scratch or a combo of the two - any way you get there - make it good and enjoy your cake!

The cake itself was pretty and tasted good but I think if I want a cake to taste like it's from the bakery I will have to make it from scratch (God help us all). Or I can just get it from the bakery. I tried it. Delicious! I used “whippy” icing instead. I also found a tip for using cut-up strips of an old towel, wetting them, safety pinning around each layer pan before oven. THEN I found “cake strips” on Amazon for cheap. Guess what? Using those keeps everything level while baking and NO MORE CUTTING TOPS OF LAYERS to make them “even”. 🤗

My only child...a daughter...partnered with a guy who turned out to be someone who never wanted children. She's well over 40 now, so I suggested perhaps fostering children, or adopting. He didn't want to do that either...because it means the attention he currently gets would have to be divided. All my friends have grandchildren...and they are the JOY of their lives. I love that my friends are happy...but I can't help but feel sad sometimes.
Great video. Yummy cake. Long time ago we added 1/2 oil and 1/2 mayo and three eggs. It makes a nice moist cake. I don't make cakes now and have not done that in years. Love how you just focus on the cake and don't start out with the camera on you. Great directions.

This is so good just a little hint. Put some confectioners sugar on your parchment for vanilla cakes and cocoa on parchment for chocolate. It helps me alot
As a baker (pastries and cake decorator) for 40+ years, I can honestly say that I find that the right additions to boxed cake mixes (many of which are in this video) really do make them taste better than most bakery cakes! And since the box cake companies have all decreased their original amount of dry mix from just over 18 ounces to just over 15 ounces (yet they sure didn't decrease the price of them!), the additional ingredients added will result in more cake batter. I have a few tips to share that may help you and/or others.
When making a boxed cake mix, I find it's better to first blend all of the wet ingredients together, then add the dry ones, and then mix for the time specified on the box. This helps ensure the eggs and other wet ingredients are well blended but without over mixing the dry ingredients because it's often over mixing the flour (cake mix) that can result in less desirable results. Just be sure to mix for the full amount of time instructed on the box after adding the dry ingredients, or that can also give you less desirable results.
Another tip is to not bake cakes quite as long as the instructions say to because the cakes are hot enough when removed from the oven that they continue to cook for a bit longer afterward. As for using dark, non stick pans, if you line them with parchment rounds (bought pre cut or cut your own), that will help prevent them from becoming too dark on the bottom and will prevent them from sticking (but you still need to grease the pans as instructed). I actually do this with all types of cake pans, except for bundt pans.
To prevent the cake from sticking to the paper (as the cakes were being stacked and iced), if you turn them out on a wire rack about 10 minutes after removing them from the oven, the paper won't stick to them. It's the moisture from the condensation that forms as they cool that causes the paper to stick to them, so cooling racks are a must for me. Be sure to allow the cakes plenty of time to cool before icing because the icing will melt if you don't, causing the top layer to slide right off. But cakes actually tend to do better when they are allowed plenty of cooling time because it gives them a chance to 'settle', resulting in a more stable cake. And a more stable cake is far less likely to break or crack when lifted to place on the cake plate or when placing one layer on top of another, as well as less likely to split or crack after being stacked and iced.
As for things you can add to a boxed cake mix, I also add a small box of INSTANT pudding mix, using a flavor that compliments the flavor of the cake I'm making And I use milk instead of the water called for. Just replace the water with the same amount of milk (whole, reduced fat, or skim). You can also use half liquid coffee creamer (flavored or plain) with half milk or half water. But if using flavored creamer, just make sure the flavor of the coffee creamer compliments the flavor of the cake. I always add extra vanilla extract. If you are making chocolate or Devils Food cake, adding a teaspoon of coconut flavoring gives it a special, unique taste, but without making it taste like coconut. Orange flavoring and instant coffee powder also go well with chocolate, but you can experiment with any combination of flavors of cake mixes and flavorings to get the ones you prefer. If you like maraschino cherries, you can drain them, then puree them into a paste and add that to the batter (there will be no noticeable bits of cherries in the baked cake). You can save the juice from the cherries to use as your liquid, but you may have to add another liquid to equal the amount of water called for in the instructions.
You can also do the same with icings. Just make sure the flavoring(s) you use compliment the flavor of the cake. And, like you, I always add extra eggs! If I want a denser cake that will stack well, such as for a wedding cake, I'll use two extra eggs, but if I want a lighter cake, I'll use just one extra egg. But it's really just a personal preference, whether it's a two layer cake or a multi-tiered cake. Adding ½ to ¾ cup sour cream to the batter also helps give it moistnesss. Simply add it in with the wet ingredients.
I also add melted butter to box cakes, but I add the full amount of oil the instructions call for, then add 1/2 to 1 stick melted butter, too (the amount is purely a taste prefence). This way, it has the lighter moistness the oil gives it, plus the yummy butter flavor. Since butter solidifies at room temperature, I've found that, in some box cakes, using only butter can make it a bit too dense.
Lastly, to help get a nice, even top on your cakes, spread the batter as smoothly as you can and, then using both hands, 'spin' the filled pans in the same direction on a flat surface, such as your counter top. This will 'sling' more batter out towards the side of the cake, leaving less batter in the center to form a dome on top. Just be careful not to spin it off onto the floor. 😉 Also, decreasing the oven temp by about 25 degrees (F) will often help result in a more level cake and with a finer crumb. But if you do decrease your oven temp, you'll have to bake it a bit longer than you otherwise would.
When your cake is cooled and ready to frost, these tips will help you get a smooth finish, with no crumbs in the frosting. After applying the frosting on the bottom layer, then adding the top layer, apply a 'crumb coat' (a thin layer of frosting) on the entire cake and let it chill in the fridge for a few minutes to set. This will seal in the crumbs, keeping any from the final layer of frosting and giving your cake a much neater, cleaner look. After the crumb coat has set, apply a generous amount of the final layer of frosting. I prefer to do the sides first, then the top.
If you want a nice, smooth finish on your icing, just dip your metal spatula in very hot water, wipe dry, and then run it over the icing for the final finish. You can remove any excess frosting during this process; I find it easier to apply a lot of frosting, then remove the excess as I smooth it out. You may have to dip it several times to get the whole cake smooth, but it gives a beautiful finish to the cake.
My basic butttercream frosting recipe and Whipped Frosting recipes:
This a basic American buttercream frosting, and it's super easy to make and is delicious! The following is the amount I make when making frosting to fill and frost a 2 or 3 layer cake, with enough left over to pipe flowers, borders, etc. If you only want enough to fill and frost a cake, you can just cut the amount of ingredients in half.
Ingredients
*1 pound (4 sticks) room temperature butter (I like salted because it cuts down on the sweetness, but you can use unsalted. Although with unsalted, you will have to add a bit of salt to the icing).
*2 pounds powdered (icing) sugar
*2 tablespoons vanilla extract (I use only real vanilla, never clear or imitation)
*1/4 - 1/3 cup heavy cream, light cream, or milk for desired consistency
Directions
Beat butter until it's lighter in color, soft and creamy (butter becomes much lighter in color if you beat it at least 5 minutes). Add sugar, beginning with a cup or two at a time, then gradually adding all of the sugar. If you add it all at one time, you will have a huge cloud of sugar all over your kitchen and on you, so be sure to also mix on low until it's incorporated well. Add the vanilla extract, then the cream or milk a bit at a time until you get the consistency you want, then beat until frosting is smooth and creamy, and all ingredients are fully incorporated.
It's best to start out with less liquid, then add more as needed so you don't end up with your frosting too thin. But if it does become too thin, just add a bit more sugar until it's as thick as you want. And if it's too thick, then just add a bit more of the milk or cream as needed. The amount of liquid needed sometimes varies because the warmer it is in your kitchen, the less liquid you may need for the frosting.
NOTE: This icing will keep for 3 days at room temperature (covered), 2 - 3 weeks in the refrigerator (covered), and can be frozen for 3 - 4 months if well sealed. If refrigerated or frozen, just set out to come to room temperature (keep covered), then beat again before using. I prefer to use salted butter to cut down on the sweetness, but you can use unsalted butter if you prefer (or half salted and half unsalted). But if you use unsalted butter, you need to add a pinch of salt to the icing. As for the liquid, you can also use undiluted evaporated milk or liquid coffee creamer, including the flavored ones, if you want to give it a seasonal flavor, such as pumpkin spice for Thanksgiving or Christmas. There are many different flavors of liquid coffee creamers, so just select one that will compliment the flavor of your cake.
FOR A WHIPPED FROSTING:
Beat one quart of very cold, heavy (whipping) cream until it is about half-way whipped (thick, but just before forming peaks), then add one large box or two small boxes of INSTANT pudding mix (any flavor) and beat until thick - which will only take another minute or two. This makes plenty of whipped frosting to fill and frost a 2 or 3 layer cake. But this one must be stored in the refrigerator!
FOR A STABILIZED WHIPPED CREAM FROSTING
Whip 1 cup cold mascarpone with ½ cup powdered sugar and 1 teaspoon vanilla extract just until smooth and creamy. Add 1 ½ cups very cold heavy cream, and whip just until smooth. If you prefer a sweeter cream, add more powdered sugar to taste before adding heavy cream (I use 1 cup). This must be stored in the refrigerator!
If you prefer to use a canned frosting instead of making your own, the canned frosting will be lighter, fluffier, and increase in volume if you first whip it with an electric mixer, or whip vigorously by hand with a whisk.

I'm 64, and I've never had a birthday cake. We were too poor , growing up, and as an adult, I never married or had kids, so I've pretty much ignored my birthday because it's never been a big deal. But, I must admit I teared up, watching this young woman decorate the top of the cake with the green frosting. She's a wonderful young woman, and I'm sure her grandfather deserves the kindness she shows him in doing this for hm.
AND, I love chocolate cake, so I've made the boxed ones with the "jar" of frosting, but it's really not good at all. So, I plan on following her tips and trying to make one her way. Only thing I'll have to look up is how to make the frosting, my fav part. The store-bought frostings are really bad, so her "buttercream" one sounds very good, by comparison.

My mother decorated cakes. I used to watch her, growing up. She always kept a glass of hot water on the counter as she decorated. She would dip her icing spatula in it every couple of minutes. This would keep the spatula clean and warm so that the icing would spread easily and smoothly.
I've been baking 22 yrs come January, I do this too😊❤️
Another tip is to separate the yolk and egg whites.
Mix the yolk in with the batter.
Mix the egg whites separately till fluffy then fold into the pre mixed battter as last step.
The cake will be fluffy and moist!

I learned almost 50 years ago that you freeze the unfrosted cake and then put on the frosting. That way the cake doesn't crumble for the icing process.
I love this!!!! Made these into cupcakes for my son's 1st bday party. Tried 3 different flavors before his party to see which one I liked more. I think I've eaten 20 cupcakes in the past 3 weeks alone. LOVE THEM.

you did an amazing job! wanted to give you a tip as I worked as a cake decorator in a bakery for a number of years. Ok the Tip: you can take a spray bottle filled with water and spray the cake as you smooth the icing with your spatula. It will help make the icing as smooth as possible and will cut down on the crumbs.

Make sure the cakes, are completely cooled before putting them on parchment paper. If they are not cooled they will sweat, causing them to stick. Use a wire rack to cool cakes so that air will surround them.

I made this cake tonight and the best box cake I've ever made and will be doing it this way more often! I used the 9x13 pan and it came out perfect.
The Cake Doctor. A wonderful book I picked up at a thrift store. She has tons of recipes for cakes using boxed cake mixes and then adds her special twist. She also explains what the different ingredients contribute to the cake as far as texture, taste, how it rises, etc. I've never made a cake from that book that I didn't love.

I have that book too! My mother used to put jello pudding in her cakes when I was a child of around 8 years old & I’ve done it ever since! It really makes difference!! This is a very inexpensive cake & cake idea!!
Has anyone noticed how small cake mixes are these days? You used to be able to get a decent size bundt cake using one box mix, the butter, the jello pudding, and we often used a packet of Dream Whip which gave it lots of volume (but possibly too-fine texture). In those days the average box mix was 22-24 oz; then they suddenly were 18 oz. That makes a huge difference and I couldn't figure out what I was doing wrong, the cake came out flat and small. Not sure but I think they are now about 15 oz. (That's almost 40% less product!!) I haven't made cake lately cos I know a standard sheet cake will only be about an inch and a half tall, where they originally would be 2-3" high. A bundt cake needs to be at least 4" high. Maybe I'll try using two boxes, but it sure would be nice if they just remained consistent. I'd gladly pay a little more to be able to rely on the product to do what it has always done.

I've never cut the tops off my cake. My dad always taught me that u can put them bottom to bottom and I've done it that way my whole life. Your cake does look yummy

Here's a few tips I learned from a Wilton class about 35 years ago. Put your cakes in the freezer after they've cooled. So much easier to frost a frozen cake, than a room temp cake. You can brush off the crumbs before frosting so that your frosting has fewer crumbs in it. Put a tablespoon (or more) of your icing on the cake round before you put your bottom layer on it. That will help hold your cake in place. Put your first layer down with the flat side facing up. You want your two flat sides facing each other in the middle. Put down a few strips of waxed paper that will extend just about an inch under the cake. When you are done frosting, you will remove them to leave a clean edge. Use your outer frosting and pipe about a 1/2" thick layer of that frosting around the top of your first cake layer. Then carefully spoon your filling in the middle and gently spread it out close to the frosting. This will eliminate any of your filling getting mixed with the frosting on the outside.

I agree with this as well I’m a young 14 year old baker, and in my recipes I add a splash of Vanilla to some of my cakes, and to my buttercream and everyone ask me my secret but it’s not a secret. Adding melted butter and milk makes a difference.

My daughter was tasked with getting a cake for a last minute baby shower. No local bakeries could meet the deadline so she called me, her dad. I have been known to like to make a cake every now and then so she asked if I would be able to do it. I accepted the challenge but the pressure was on to deliver something amazing. I followed this recipe to a T and it was a big hit.
One thing I learned while trying to achieve a smooth buttercream icing was that after the crumb coat was set up and it was time to frost, not to have the cake too cold. The buttercream started to cool off from the cake and become too stiff to smooth out nicely. I said a few bad words. Thank you for making this video.

The cake I chose was a white box mix. White chocolate pudding. I added a tsp of vanilla. Used 5 lg eggs and had a 28 min bake time. This is the most amazing box hack cake Ever!! It's almost in a pound cake category. I did the middle frosting with heavy whipped topping and ground up strawberry jello about less than 1/2 c. and strawberry preserves mixed in...the gelatin helped thicken it like a frosting consistency. Frosted the outside with cream cheese.
I dusted chocolate over the top as the flavor profile was Neopolitan and it came out Perfect!!

I always break the eggs separately because not only can eggshells end up in the mix, but also blood from the eggs.
Have you tried making it with 1 LG box instant vanilla pudding, 1 cup sour cream, 1 cup oil (or butter) 4 eggs, and 1/2 cup of milk? The sour cream makes it so moist! This is how I make all my box cakes. I will try your way next time and see how they compare.☺️ Thanks for the video!

Just made this cake for early Thanksgiving!~I used 4 large eggs, put in pumpkin eggnog in place of the milk, and some irish creme liquor! Made a half batch of butter creme with more irish creme in it, just taste-tested it, wow! Very rich, and satisfying!!!

I am 71 years old and never had anyone make a birthday cake for me. When I was growing up there were 6 kids in my family and my parents didn’t have money to buy much of anything. As far as birthday cakes we never had one nor did we get anything for our birthday. This video made tears come to my eyes as she made that beautiful cake for her granddads birthday. My birthday is in March. Loved the decoration on her cake.

OMG......So here is my update. I don't think I could've handled keeping the oil in the recipe and the additional butter. This instructions for this video were perfect as is! I baked this cake for my husband's birthday yesterday and I literally can not stop eating it! We had chocolate frosting on our though. Thank you so much for this video. I've baked cakes for years for weddings, birthdays and other special occasions and always used boxed mixes. I've done these same hacks, however, I used duck or goose eggs when I could get them. Great job!

Every wedding cake I know of was very expensive.....so with your add ins, you possibly spent less than $20 and profited hundreds! Some wedding cakes cost over $1000 depending on the size. This cake looks wonderful! Can't wait to try! If your raspberry frosting seems a bit soft just refrigerate it after you have spread it on the bottom layer for about 20 minutes it will help firm it up. Then you can lay the flat side of the cake against the frosted middle. The cake will be just slightly rounded at the top but it still looks great and will taste wonderful and it will help keep your middle frosting from squishing out at the sides. Just an old hack I learned. Enjoy baking everyone!
I have been baking cakes like this for the last 20 years. My father replaced the water with milk, added extra eggs. He replaced the oil with mayonnaise. Ovens will bake differently because of the elevation where you live. Also the air moisture and air pressure has a lot to do with this. So she's correct about cooking cakes to doneness with a toothpick. This does make a very rich tasting cake. It's awesome.

I made this recipe with a yellow cake mix and it turned out fantastic. FYI, the batter was much thicker than a regular box cake mix batter so I used a total of five eggs. It was still thick, but no worries because the cake was so freaking good! Thank you, thank you thank you!

I always doctor cakes like this with my favorite frosting which is one package instant pudding mixed with 1 cup of cold milk then folded into one tub cool whip. So good!

This woman added more ingredients to an 'easy cake' than you would put in a normal cake...
Making a lemon crunch cake rn & using this method w/ a few tweaks: 1 scoop Minute Maid lemonade mix as well as 1 box of Lemon Starburst Jello mix (in place of the pudding mix) that I found at Walmart. Oh & I use 1 cup heavy cream instead of milk.
I always make strawberry crunch cake & wanted something different so I made lemon crunch for the exterior once I ice the cake. ❤️

My Great Aunt used to add pudding mix to boxed cake mixes, too. She also used Bundt cake molds and sprinkled powder sugar on top of her cakes instead of using icing.

I"ve made this cake several times in diff flavors. Lemon, Chocolate, Yellow, and Strawberry. Each time it was a huge hit. My fav is the chocolate. My daughter doesnt like chocolate cake but she tried a piece anyway and said OMG Mommy.... this cake is so moist and good. I just used a store bought frosting but next time I will make my own frosting from scratch and see how it goes.

Hi I love this. I can't wait to try this. Oh here's a tip that I use for my cake mixes, substitute the oil for apple sauce. It doesn't matter which brand or flavor you use because you won't taste it.
Been substituting the oil for apple sauce & it's a game changer & healthier, but I have never substituted milk for the water 🤔 looking forward to it ☺️

There’s comments asking why use the box mix at all?
There are so many ways to have your cake and eat it too!
Box cakes have been around since the 1930’s so they have all the ingredients already just right for you. Adding more to it for flavor and to make it special makes sense.
If you want to make scratch cakes there’s more info than ever online to learn. I learned as a kid with box mixes then took formal classes in the 80’s. But I will make them either way.
So whether box, scratch or a combo of the two - any way you get there - make it good and enjoy your cake!

@@breannasumner6207 I don't know if I did something wrong because the cake was so dense. I thought it would be light and fluffy. It was good but pretty thick. The cake itself was pretty and tasted good but I think if I want a cake to taste like it's from the bakery I will have to make it from scratch (God help us all). Or I can just get it from the bakery. Lol
I tried it. Delicious! I used “whippy” icing instead. I also found a tip for using cut-up strips of an old towel, wetting them, safety pinning around each layer pan before oven. THEN I found “cake strips” on Amazon for cheap. Guess what? Using those keeps everything level while baking and NO MORE CUTTING TOPS OF LAYERS to make them “even”. 🤗

I would have LOVED being a Grandma, and I think I would have been a pretty good one too! My only child...a daughter...partnered with a guy who turned out to be someone who never wanted children. She's well over 40 now, so I suggested perhaps fostering children, or adopting. He didn't want to do that either...because it means the attention he currently gets would have to be divided. All my friends have grandchildren...and they are the JOY of their lives. I love that my friends are happy...but I can't help but feel sad sometimes.

Long time ago we added 1/2 oil and 1/2 mayo and three eggs. It makes a nice moist cake. I don't make cakes now and have not done that in years.

My mama, sister, husband, one daughter, grandpa and numerous cousins have December Birthdays. My mama made a big deal out of our birthdays growing up because she always had to choose whether or not to open her gift on her birthday or save it till Christmas. If she saved it, she had to forego her birthday. If she opened it, that meant she had nothing while her eight other brothers and sisters all got a gift to open on Christmas. You are not alone!

I do the same hack but add 1/2 C Spiced Rum/1/2 C milk instead.Then add 1/4 C Spiced Rum to a simple butter/powdered sugar glaze.YUMMO!
This is so good just a little hint. Put some confectioners sugar on your parchment for vanilla cakes and cocoa on parchment for chocolate. It helps me alot
