What was the final texture like? Was it as fluffy as a 3 Musketeer? I watched a video earlier where she mixed chocolate and cool whip. Her rendition appeared to be to fluffy and not chewy enough. I was thinking of combining marshmallow cream and cool whip for a better texture but im not sure how those two things would mix.
I found it quite similar - fluffy, but with a nice chew. I haven't tried it with Cool Whip. That might be good as well. The only way to find out which you'd like best is to try them both! 😁
I've looked into chocolate callets briefly, and would really like to use Callebaut, but apparently soy lecithin is in literally literally ALL chocolate callets. There is a few chocolate bars without it, but very overpriced. Yes, i am one of those soy avoiders, sorry.
I can't explain why, I love the flavor of fresh raspberry, syrup or jam, but something horrible happens to it when extracted; it comes out tasting like musky cough syrup in recipes. No surprise to me that raspberry 3 muskateers was a flop, but vanilla, strawberry, and chocolate reliably hit the mark for taste. Flavors I'd like to try out in this nougat version- nutella (hazelnut chocolate), toffee, espresso, and perhaps a revised raspberry with a dab of frozen raspberry jam in the center of a vanilla nougat during the molding process prior to dipping. Candy companies like See's & Russel Stover figured out how to avoid raspberry extract because their versions taste bright & fine.
