I’ve always liked the food on Air India. It’s full flavour. It was a nice surprise to get naan or roti with your meal too. I’m looking forward to trying this new menu one day!
@Sam, what the man is representing is not at all a pan Indian dish. It is only the North Indian cuisine, which the chef is trying to present as pan-Indian. They do it deliberately in order to establish the North Indian hegemony throughout India, in terms of food or promoting undeveloped Hindi as the "national language" of India.

Hey you partly right but i have had you so called both airlines food and they suck compared to what airindia offers with authentic flavourful real hand made stuff.. just dont judge on visial try it out before discounting airindia
This really makes you appreciate how much work and dedication goes into making airline food. I'm sure most other catering companies use machines, but Indians take pride in making their food by hand and making sure it's the highest quality.
I flew Air India several times in the 90s... unless their standards have vastly improved, NEVER AGAIN. Coming from someone of Indian heritage, there is also just no getting around how Indian passengers en masse tend to behave. Western social decorum is not a thing, such as suppressing bodily noises, and being considerate of fellow travelers such as when waiting to use the lavatory. Speaking of the lavatory... various Indian foods are well-known for being unfriendly to the GI tract... so... yeah.... 😑

It's your stomach not being used to the kind of food... Not the spice, just the region... Tatas are working on different aspects of the airline experience. 3. just see the welcome drink, every airline has only orange, mango, apple juice, sparkling water, wine, champagne. But colorful drinks will lift your mood. 4. Tata have a lot of experience in hospitality. 5. Taj Sats Kitchen which delivers food to ME3, SIA from Delhi is owned by Tata. 5. Vistara has a very impressive food and service. 6. Cabins will be overhauled with new interiors. 7. see ex-Delta one Suites, 777-200 ULR, with decent cabins and good food and service, AI will become one of the best in the world as no way GoI is involved in this now. Very impressive. I have been hoping that since air India was taken over by TATA That the overall product would improve and I do believe it’s coming. It’s a long way to go but looking at what they’re doing now with food is certainly a huge step in the right direction.
You can already see they are starting to take this makeover seriously. The presentation and meals are looking better, and the new menu is looking good.

You will see a totally revamped airline with a new livery. They own one of the finest hotel brand in the world -The Taj Group of Hotels. Air India had first started their very own kitchen called 'Chefair' under a subsidiary company which also owned and managed Centaur Hotel in Santacruz. Food prepared by them was way better than any flight kitchens which came later. Unfortunately they closed down and opted to resource from Flight kitchens.
With the new menu and extreme level of hygiene, it seems like Air India will regain its former glory soon .. btw thanx for covering this kitchen... Love from India🇮🇳

I always prefer Airindia for my international travel. The best food, hospitality, and mostly non-stop flights. I really like the food taste and quality. I never feel that i have missed my home food

Just a dedicated group of passionate chefs preparing vibrant Indian cuisine for people around the world in keeping with traditional Indian cooking techniques/principles and the sourcing of the finest local ingredients. It would be an interesting battle to see air india take on the gulf carriers and some European carriers. Unless air india is cheaper, frequent fliers would go for the gulf carriers. Indian service mentality would struggle to compete with how the gulf carriers have. Even transiting in a big Indian airport is way more hectic than doing it in the middle east major airports. Yet air india would do good due to our huge population

When the Indian flyers have an option to have an equally good product to go the US from India, they will not take other airlines and have a layover in Singapore, Dubai, Doha, or Abu Dhabi. All these airlines will lose a huge customer base from India who are traveling to the US and coming back to the India from the US.*
exactly. And now with lot of people from villages, small towns, tier -2,3 cities going abroad and working, for them, Air India will be very convenient. From a Big US City like ORD, SFO, JFK, LAX to DEL or BOM is great. But once they get the new aircraft, they should start 3 or 4 times weekly flights to HYD, MAA, CCU as well from US and Europe. It will even further take away the market share from the ME3 & SIA. New Drinks, with pomegranates, other fruits is a awesome innovative idea, which no other airline did think of, just giving champagne, orange or apple juice and Sparkling water. Remember ME3, SIA are there not because of their own people. But we indians are the majority ones who are still working 24 hours a day, behind the scenes. Lot of it is done by machines anyways. New airports being constructed at DEL, BOM should be good and offer seamless connectivity with a awesome price point. I cannot wait TATA to get all of their Wide body and shake the ME3 and SIA.

After tata's takeover I used fly in Air India in domestic but still I prefer Emirates for international. But they are getting better day by day, soon i will start AI for international too.

There are some good changes done in the AirIndia esp in the overseas business class. They are giving good quality nightware and good vanity kit also. Even the quality of food improved.

That's just the one instance. Remaining chefs are wearing elastic gloves while preparing the sandwiches, wraps, arranging the treys etc. Those samosas are going into the deep fryer anyway which will kill the germs in an instant. Don't know what's there to cry about this. However the utensils need to be replaced with newer ones.
6:58 It is ridiculous. Worked 35 years without commercial kitchen hygiene international standards knowledge? Allowing workers processing food without wearing gloves? Placing uncooked food and cooked food in one fridge? Yellowish dirty uniforms. They need a new professional catering director from Emirates, Qatar or Singapore Airlines.
SQ now owns 25% of AI by the way. Also this kitchen serves several International carriers including Lufthansa, Oman, Saudia so pretty sure contracts would have been terminated if standards were not met. Also Sam would have highlighted these issues unless of course it was a publicity gimmick.
Regarding some of the workers not wearing gloves, would like to mention that a lot of these items are just not convenient to make wearing gloves. Like those naans and rotis in that earthen oven with charcoal inside, or those balls dipped in batter and fried in that cauldron of boiling hot oil. Anyway everything is cooked at such high temperatures and so much spices no bacteria will survive anyway.
yeah Vistara also uses Taj sats. they have updated their meals pretty quickly. Lets see Sky chef pick up pace with Air India . Taj, Vistara and Air india are all owned by Tata group now
Any idea why haven't they already shifted to Tajsats ? Vistara's food is amazing. They have coffee with Starbucks branding in business and first class in vistara. But still haven't seen them in Air India. I wonder if they are waiting for the A350-900s to unleash all the power at their disposal. New livery, a new female mascot with the maharaja, new welcome drinks as shown in the video and maybe even Starbucks branding?
There is a world of difference between the Emirates Kitchen and Air India kitchen in terms of technology, hygiene and standards. Air India is still 10 years behind, but am glad the Tata realize this and are making an effort to upgrade the planes, service, and food. I wish them good luck!

i am an indian and i feel they can do better. This looks okayish and bland. Use of aluminium foil containers, poor presentation skills and general neglect towards hygiene and kitchen aesthetics. i really hope this is temporary and Air India will rise as the one of the most prestigoius and respected airline in the world. Kudos to the crew for the hard work.

As a restaurant owner in Mumbai, looking at the quality of staff we attract, this is a top class kitchen. It is clean & hygienic. The general Indian population dislikes doing hygiene tasks and getting them to do so is a mountainous effort in itself. Kudos to Skychef in maintaining this kitchen. It is excellent according to Indian standards. Skychef should start working with articulated robot arms instead of unskilled workers to increase quality & output.
Dirt, dead skin, hair and sweat on bare hands are natural favour enhancing spices that make the food more authentic favour. No gloves = less plastic waste pollution = more environmental friendly = less cost on gloves. Using bare left hand to handle food after butt washing in toilet that can enhance the food more tasty. Without wearing masks, chefs' saliva is also a favour enhancer to the food. Dirt from greasy dirty walls, benches, old utensils without covered by lids/food wrap are also offering more favour to the food. Cockroaches would love to taste the food in uncovered utensils which is good for adding extra favour and protein to foods. Yummy!

A different perspective to how much goes into this industry.
It would be an interesting battle to see air india take on the gulf carriers and some European carriers. Unless air india is cheaper, frequent fliers would go for the gulf carriers. Indian service mentality would struggle to compete with how the gulf carriers have. Even transiting in a big Indian airport is way more hectic than doing it in the middle east major airports. Yet air india would do good due to our huge population

*TATA is going to take the market share from Singapore Airlines, Emirates, Qatar, and Ethiad. When the Indian flyers have an option to have an equally good product to go the US from India, they will not take other airlines and have a layover in Singapore, Dubai, Doha, or Abu Dhabi. All these airlines will lose a huge customer base from India who are traveling to the US and coming back to the India from the US.*
exactly. And now with lot of people from villages, small towns, tier -2,3 cities going abroad and working, for them, Air India will be very convenient. From a Big US City like ORD, SFO, JFK, LAX to DEL or BOM is great. But once they get the new aircraft, they should start 3 or 4 times weekly flights to HYD, MAA, CCU as well from US and Europe. It will even further take away the market share from the ME3 & SIA. New Drinks, with pomegranates, other fruits is a awesome innovative idea, which no other airline did think of, just giving champagne, orange or apple juice and Sparkling water. Remember ME3, SIA are there not because of their own people. But we indians are the majority ones who are still working 24 hours a day, behind the scenes. Lot of it is done by machines anyways. New airports being constructed at DEL, BOM should be good and offer seamless connectivity with a awesome price point. I cannot wait TATA to get all of their Wide body and shake the ME3 and SIA.

There are some good changes done in the AirIndia esp in the overseas business class. They are giving good quality nightware and good vanity kit also. Even the quality of food improved.

That's just the one instance. Remaining chefs are wearing elastic gloves while preparing the sandwiches, wraps, arranging the treys etc. Those samosas are going into the deep fryer anyway which will kill the germs in an instant. Don't know what's there to cry about this. However the utensils need to be replaced with newer ones.

6:58 It is ridiculous. Worked 35 years without commercial kitchen hygiene international standards knowledge? Allowing workers processing food without wearing gloves? Placing uncooked food and cooked food in one fridge? Yellowish dirty uniforms. They need a new professional catering director from Emirates, Qatar or Singapore Airlines.
SQ now owns 25% of AI by the way. Also this kitchen serves several International carriers including Lufthansa, Oman, Saudia so pretty sure contracts would have been terminated if standards were not met. Also Sam would have highlighted these issues unless of course it was a publicity gimmick.
I am so glad that they are mindful and wearing gloves while cooking and washing their hands some Indians don’t even wash their hands 2:13
Regarding some of the workers not wearing gloves, would like to mention that a lot of these items are just not convenient to make wearing gloves. Like those naans and rotis in that earthen oven with charcoal inside, or those balls dipped in batter and fried in that cauldron of boiling hot oil. Anyway everything is cooked at such high temperatures and so much spices no bacteria will survive anyway.

yeah Vistara also uses Taj sats. they have updated their meals pretty quickly. Lets see Sky chef pick up pace with Air India . Taj, Vistara and Air india are all owned by Tata group now

Any idea why haven't they already shifted to Tajsats ? Vistara's food is amazing. They have coffee with Starbucks branding in business and first class in vistara. But still haven't seen them in Air India. I wonder if they are waiting for the A350-900s to unleash all the power at their disposal. New livery, a new female mascot with the maharaja, new welcome drinks as shown in the video and maybe even Starbucks branding?
There is a world of difference between the Emirates Kitchen and Air India kitchen in terms of technology, hygiene and standards. Air India is still 10 years behind, but am glad the Tata realize this and are making an effort to upgrade the planes, service, and food. I wish them good luck!

i am an indian and i feel they can do better. This looks okayish and bland. Use of aluminium foil containers, poor presentation skills and general neglect towards hygiene and kitchen aesthetics. i really hope this is temporary and Air India will rise as the one of the most prestigoius and respected airline in the world. Kudos to the crew for the hard work.

As a restaurant owner in Mumbai, looking at the quality of staff we attract, this is a top class kitchen. It is clean & hygienic. The general Indian population dislikes doing hygiene tasks and getting them to do so is a mountainous effort in itself. Kudos to Skychef in maintaining this kitchen. It is excellent according to Indian standards. Skychef should start working with articulated robot arms instead of unskilled workers to increase quality & output.
Now Air india kitchen is Taj kitchen.. Earlier it was Taj flight catering department in hotels.. And Airport kitchens..

The new menu is something I'm eagerly anticipating, but when handling food, kindly wear gloves.
Dirt, dead skin, hair and sweat on bare hands are natural favour enhancing spices that make the food more authentic favour. No gloves = less plastic waste pollution = more environmental friendly = less cost on gloves. Using bare left hand to handle food after butt washing in toilet that can enhance the food more tasty. Without wearing masks, chefs' saliva is also a favour enhancer to the food.
Dirt from greasy dirty walls, benches, old utensils without covered by lids/food wrap are also offering more favour to the food. Cockroaches would love to taste the food in uncovered utensils which is good for adding extra favour and protein to foods. Yummy!
Unlike many other airline kitchen's this kitchen may not be so stylish. But the flavor / taste that comes out in the boxes are unbeatable.
