    As the author of the book you cooked these five recipes from (my name is Jeffrey Eisner), I'm so glad and honored you tried FIVE of my recipes! You did a GREAT job! It's always an honor to have someone use your recipes as a blueprint and then put their own twists on it to make it their own. As for the Thai Basil Fried Rice, I wouldn't have suggested regular basil as that's definitely a more Italian/Mediterranean flavor, but rather fresh tarragon leaves as mentioned in the book - they give a similar flavor to Thai basil with that anise touch which isn't as easy to find. Again, great job!

    Becky…I just want to give a personal thank you to you and your channel. I used to cook, bake and even garden a little all the time until a few years ago when I ran into some health problems and couldn’t do those things. I got out of the habit of scratch cooking and the joy it brings. I recently started watching your videos and they have sparked my love of all those things again.     Hi Becky, the fried rice recipe calls for Thai basil which has a different flavor profile than Italian. You should try it and maybe grow some next year. It really took off for me & I LOVE the flavor!

      I recommend growing Thai basil and Holy basil. Thai basil has a mild licorice taste. Holy basil (tulsi) is also used medicinally, and adds a spicy basil flavor.

    I can’t tell you how much I LOVE your channel!! I’ve been telling my husband for years that we need food in the freezer for nights I don’t want to cook but I never knew what to make and freeze. I’ve made Italian stuffed peppers, honey sesame chicken, fajita bowls, and the smashed chicken. ALL DELICIOUS!! You’ve motivated me to turn my leftovers into new meals and transformed how I think in the kitchen. I have always loved cooking, baking and generally all things kitchen but now I have new motivation and a new outlook!! That’s saying a ton! I can’t get enough of your videos. You are so enjoyable to watch and I love that you open the video with hello friend because you make your audience feel like we are your friends. Thank you for all that you do a thousand times over!!!     Hello Becky!! I just wanted to let you know (I didn’t know either until this past year) that with sesame oil you want to add it to your dishes towards the end as the flavor greatly diminishes when sautéed under high heat. Hope this helps! ❤ thank you for all you do.

    After watching one of your earlier instant pot videos, I purchased one about two weeks ago. I'm in heaven! I studied and studied and made sure I knew how this sucker works, so I wouldn't feel nervous about PRESSURE lolol. I just last night made an impromptu chicken and rice dish, oh yes, in MINUTES, and I just have to say without your encouragement I don't think I'd even have tried. Thanks for all you do to inform and encourage, as well as inspire. You're one of a kind.

    A dumpling shortcut that works well is to use flour tortillas. Just treat each one as fresh dough rolled out and cut each tortilla into the shapes you desire. It puffs up just like regular dumplings.made by hand.

    For those who do not have an instant pot and are older, use your pressure cooker instead. :)
    I did not want to miss these delicious recipes she makes, but have the old "instant pot", the pressure cooker. Love these recipes! The chicken and dumplings look amazing!

    Throw a towel over the lid when you do a manual pressure release. It prevents you from potentially burning yourself and it keeps the steam/water from going everywhere.

    Becky. My grandma always made me a bunch of her veggie soup before she would go to Florida for the winter. I recently made it in the instant pot and it was soooo easy.
    Cook a roast in the instant pot for about an hour on manual with just a few cups of water or broth and salt and pepper. When that finishes pull out the roast and put in 2 to 4 diced potatoes, a diced onion, 3 diced carrots, 1 to 2 can of diced tomatoes, can of peas, 2 cans green beans and a can of corn (I leave all the juice from the veggies. I don't drain any of them) . Season with more salt and peppr and cook on manual for 10-12 minutes. When that is finished add in your shredded roast and serve. So yummy and brings back memories! Hope you enjoy it too! It makes quite a bit but freezes beautifully! She would always freeze a bunch of tubs for me to last all winter!

      @@rosemaryus-ct6151 I don't like frozen potatoes either but for some reason this works. I don't freeze any of my veggies except for corn bc of that reason but when they are in this soup and cooked already it reheats just like it was fresh made

      @@rosemaryus-ct6151 I usually use a 2-3 lb roast just depends on how much meat you would like in it. The potatoes do hold up really well after being frozen. I dice them as I like small pieces of everything in the soup so you don't notice a texture change. I am sure all fresh veggies would work just as good. You shouldn't need to adjust cooking times either as I do fresh onions, carrots and potatoes when I cook it. Everything else is veggies I have canned except for the corn that I like to freeze. It's not a very specific recipe just add how ever much of each veggie you like. I usually do pi to for everything but the green beans and tomatoes I do a quart. I also do a manual pressure release both times as I am not patient lol. It reheats just as if it was freshly cooked.

    Becky, I have a suggestion for you: If you're going to divide a recipe for double or triple it, it would be well worth it for you to write (or type up) those measurements before you start cooking. You'd only have to do the math and note the amounts once, and then you would be able to ensure that you're not miscalculating things on the fly. Easier to duplicate it if you want to prepare the dish again without having to try to remember what you did, as well as make any modifications you want.

      fyi that's multiplying a recipe; dividing is doing half a recipe. and this is good advice. my recipe book back home had lots of notes in it lol.

    FYI. You can roll the dumplings out with a little more flour and leave the extra flour on them when you put them in the pot. It will thicken the the gravy without having to use cornstarch.

    I purchased the cookbook after watching your video! I’ve had my instant pot for years and have a number of cookbooks for it but this one is top notch!!! Made beef and barley soup the other day which was fantastic but tonight I made the sausage and shells. Good golly it’s absolutely delicious 😋- we added some red pepper flakes at the end and enjoyed this with crusty Italian bread. Love your channel and enjoy finding new recipes to try.

    Coming back to say I ordered this cookbook and so far, I've made the pork ribs, butternut squash risotto and the sausage and spinach soup; the ribs were good, but the risotto and the soup were amazing! The risotto made a huge amount, just fyi. The soup was so good though and I already bought the ingredients to make it again this week; it's enough to share with my brother who had surgery last week and a friend who suffered a great loss last week. Thanks for this great video and resource Becky!

    I love your videos, Becky! One idea - would it make sense to split these longer videos with multiple recipes into several shorter videos? I think it would be easier for viewers to search for specific recipe videos later, and it might make your life easier by having five videos from all this work instead of one.

    Becky, I got so excited to see you holding Jeff's first cookbook. I've got them all, and I don't think there's one recipe I've tried and didn't like. My favourite one isn't in this cookbook (it's in a different one) but you can find it on his website, and it's his Chicken Fajita Pasta. I salivate just thinking about this recipe. You and Josh need to try it! There's a YT vid for it, too!

    When I've seen recipes that have the dumplings rolled out and cut like that they call it chicken n slicks in the south. These recipes look great! I feel like I need that cookbook!

    You can put a dish towel over the steamer when you release. It's a little easier/cleaner!

    Becky, Using quality Cajun style sausage is a very wide market range in taste and heat of the sausage. I am Louisiana born and raised and I can tell you that if you are going for strictly heat, you can certainly find that kind of Cajun style sausage nearly anywhere. However, if you want quality sausage and superior taste in the sausage, you are far better served in tasting different types of Cajun style sausage and selecting a taste and heat range that complements the dish you are adding the sausage to. Believe me, the tasting is a really good way of selecting Cajun style sausage. Cajun style sausage is not all about the heat! It is about a the taste you want in your finished dish! I still order mine made and shipped frozen to me where I now live, in northern Arkansas! I use a sausage that is mild in heat but delicious in taste, no matter what dish I am cooking, or adding the sausage to, for me, the taste is superior! Have fun tasting different sausages and, if I may suggest, try test tasting Boudin! You and your hubby will absolutely LOVE Boudin!!! I have not found a mild Boudin yet! Boudin about the taste, but is also about the heat! Have fun taste testing! 😋😍

    I always add tiny frozen peas to my chicken & dumplings. Just right after you turn the heat off toss in the peas stir & serve. Gives you your veggies. I also add bell peppers.

    A quick hint - when you are using the saute function, you can stabilize the inner pot by clipping it to the outer pot with a binder clip. Saves you from burning your fingers! These recipes look fabulous - I have ordered my copy of the cookbook!

    All your instant pot meals look amazing. One comment - an Italian carbonara does not contain cream and it is the heat of the pasta which cooks the eggs. The Italian carbonara comes together in the same way as you made yours in the instant pot.

      The original is also made with guanciale instead of pancetta. Not easy to find and probably more expensive, but really good.

I have cooked a few from his cookbook too and they were delicious!     Here in the South we do not put the dumplings in until you have a rolling boil as it makes the dumplings puff up more.

    When you cook pasta in the instant pot it will be liquidy at first but after a few minutes the pasta absorbs the liquid. I make spaghetti in there all the time.

    I was at our cabin following a recipe for my new to me instant pot AND Thank goodness I had previous seen this video cause the recipe I was following was not good but it turned out to be the perfect base for the spaghetti carbonara sans bacon. So all I did was add the pasta, added another 8 minutes, and poured some cream presto change-o it went from epic fail to winner winner chicken dinner. Thanks so much

    With your 1st dish, the carbonarra you schould try it with peas. It's extra good + adds a lil color..

    In regards to the soups, when I make soups like this I make the whole recipe or double batch and then put the leftovers in single serving freezer safe containers. Then you can have soup for a quick lunch or dinner! I love these in the winter time.

    Jeff at Pressure Luck is great and so are his books. I have a few! Another couple books that should be on your shelf is Rootitoot. Ruth was a magnificent lady who created a great following of pressure cooking newbies. I highly recommend anyone that has a pressure cooker buy her book/s. Many wonderful easy homemade goodness recipes.

    Great video! I’ve requested this book from the library to look through to see if it has enough recipes I like before I order it.
    I love my Instant pots - as long as I’m already in the kitchen, I like to do several things at the same time. A tip my daughter shared with me is to toss a dish towel over the top when doing a quick release, it muffles the sound and reduces the steaminess in an already hot kitchen.

    So glad you used this cookbook. I enjoy watching him cook and purchased this book as a result. But admittedly, I have not cooked a single recipe from it. I WILL now!     I always enjoy watching you cook. I however, do not have the passion for it like you do, I wish I did but I don’t. The beautiful dishes you create although they look delicious, aren’t usually something I’d do because they’re just more involved then I want to commit too. HOWEVER, you have been rocking the quick meal ideas! These are recipes I feel like I can wrap my brain around and have a meal on the table that my husband will appreciate and I didn’t spend huge amounts of time preparing. Maybe one day I’ll be better in the kitchen (doubtful, I’m a grammy) but for now I’ll just live vicariously through you, and I’ll jump in on the wonderful ideas that better suit my time, skill and desire. You’re an amazing young lady who offers encouragement and inspiration to all ages. Thank you.

    I don’t know if you like yogurt, but I love Greek yogurt and making it in the instant pot is soooo easy! I just strain it overnight and it gets super thick, almost like cream cheese!

      I make yogurt every week with my IP…it’s so easy and the kids love it! After I let it drain overnight to make it thick I use my immersion blender to get it nice and creamy

      I make yoghurt in my slow cooker, it’s delicious. I recently used kefir natural yoghurt and it was thicker and even tastier ❤

    I have a brand new instapot I've had for nearly 7 or 8 years and never used it. Until now because I'm going to purchase that book right now and bring out my instapot and start using it as sin as the book arrives.
    Thank you so much for making these videos for us all. The instapot had always intimated me is why I've never used it. Now that I pressure can I don't think the instapot will be so intimidating anymore.

    Seen the Carbonara done with that many ingredients all mixed up like that kind of hurts as an actual Italian 😅 it would just take pecorino cheese, guanciale, eggs and pepper. The traditional way is actually easier. Anyways love you channel, it’s very comforting in the evening to watch. You are so hard working and kind it’s great to watch!!

    Hi Becky! Jeffrey's cookbooks are great. I wish all were set up like them. Also, don't forget that the Instant Pot has 3 different saute temp settings. Low/Med/High. I normally use High

    My favorite easy-peasy drop dumpling is to put a cup of flour in a bowl and mix in one egg with my fingers until I have a crumbly combined mixture somewhat like cooked sausage crumbles in texture sitting in some extra flour. They are kinda like spaetzle. So you take the crumbles out of the flour and drop them into the finished pot of soup and simmer about 15 in. They will thicken the soup as well.
