    Introduction
    Watermelons were originally cultivated for their high water content and were stored to be eaten during dry seasons, not only as a food source but as a method of storing water. Watermelon is a sweet, commonly consumed fruit of summer, usually, as fresh slices, diced in mixed fruit salads, or as juice. Watermelon juice can be blended with other fruit juices or made into wine. It can be even served as a curry. The seeds have a nutty flavor and can be dried and roasted, or ground into flour. Watermelon rinds may be eaten, but their unappealing flavor may be overcome by pickling, sometimes eaten as a vegetable, stir-fried or stewed.
    For Making Watermelon Curry Base
    3 tbsp Garlic Cloves
    1 tbsp Oil
    2 tsp Cumin Seeds
    1/2 tsp Red Chilli Powder
    1/4 tsp Turmeric Powder
    1 tsp Coriander Seed Powder
    1 Green Chilli (Juliennes)
    2 cups Watermelon Pulped
    Salt To Taste

    I was doubtful, but this recipe tastes both spicy and deliciously refreshing! I'll keep it in mind for every watermelon season.

    I am almost 70 yrs old. I cannot vouch for the regional origin of this curry, but my maternal grandmother (Who hailed from the princely estate of Azamgarh & was married in a place called Saharanpur, UP, India,) would serve us this 'tarbooz ki sabzi' with pooris..(She would also retain some of the juicy light green pulp on the pieces, found just under the dark green skin too). We kids got it as a special treat in the 1950's & 60's.

    Kya bawa abhi jabhi tarbooz ka season jane ko hae, tabhi tumko ye curry yaad aayich..
    People make different sweets and even sabzi with it's rind.
    I happen to eat watermelon with this one Egyptian bosun, who was astonished to see us eating only the pink part of the fruit. He asked us in his broken accent, why no finish this white part. We eat full in home..
