Hello, I would like to know what other Indian foods you would make to compliment this dish. I have some dry yellow peas, I think they are used in Indian cooking. Is that right?
to make it a classic meal you can just make plain rice and a dal (lentil soup). Look for dal recipes that use yellow lentils (they go best with the slight sourness of the rind). Yello pea will work as well.
The watermelon rind cooked very well. I didn't have special spices for curry and I wish I had because the curry spice available here had way too much cumin for my taste. I like a subtle hint of it. But I would do this again only with the right spices. And I had it with white rice and yellow pea dahl, which came out good with the chile árbol (tree chili pepper).
