@justinian333 some people just speak differently from what is considered normal for any number of reasons. I had an incredibly monotone, quiet voice until I was in my early 20s. Now I'm a lot more expressive but it took a lot of effort lol
Egg suggestion: tap the fat end lightly with a spoon until you hear a snap, then THEN tap it all over to crack the shell, THEN peel. The air in the fat end separates the egg from the membrane, which is the snap sound you hear. Works every time
Also older eggs peel much better than fresher ones, so if you save a section of your carton for boiling and the ones up front for everything else then you shouldn't have any issues

They all looked better than anything you would equivalently pay for in the US. There are those clay grills that use the crazy complicated expensive charcoal that seem to be casually used indoors in Japan. I know the grills are on Amazon.

Also, for the Beef Gyuudon in your first recipe, usually sugar is also added to the sauce, which might help cut the salty flavour to it. I have a hack for peeling eggs easier. Just take a tea spoon and insert it in between the egg and the membrane/egg shell and work around it gently until it is all separated

Hey, FutureCanoe! There are several reasons for uneven heating on the stovetop. The burner might be too large for the pan, the cookware could be warped, or the heating element might be damaged or dirty. These are just a few possibilities, but I hope this helps a bit.
This! And if I might add, part of the reason it could be sticking is because the tofu hasn't developed the crust. It needs longer in the heat to get golden. Once it gets to this stage the tofu should come right off. Another reason could be more oil was needed. Hope that helps too!

IDK if anyone actually does this, but I've found that doing a little corn starch dredge on the tofu helps prevent sticking, and makes it look better, and have a better texture.
At minute 4:00 it could be because you crowded the pan too soon and ofc there are always hotspots when working with fire so you have to keep rotating the pan and moving it slightly.
you should put a little oil in the pan and wipe it around the whole surface before turning the gas on. that will make your pan non-stick. if you put oil in the pan after it is hot, it will not work. the reason is, when the pan is hot, it starts to emit gases. if you put the oil after it is hot, the oil does not coat the pan surface properly because of the hot air coming out of the pockets. if you oil the pan when it is cool, oil goes into the tiny pockets and coats the surface more evenly. i don't know if you read all the comments, but i hope you read mine to avoid the exercise of rigoruos pan surface cleaning :)
I won't lie, but the simmered beef bento you recreated looked Crazy tasty, and I believe you did your best with the Mitarashi dango. Oddly enough, they remind me of roasted marshmallows. Good job overall!
