Did you leave both top and bottom vents fully open? Was total cook time 40 minutes? Pretty wings. I used my vortex first time last night and followed the directions precisely,which called for 1 hour total cook time. I took them off after 45 minutes and they were too done...tasty and beautiful color but too done. I should have removed them at the 30 minute mark.
Yeah, I had both vents fully opened - I noticed the same thing... Sometimes I get a really good heat going, and I think it depends on what charcoal I use. Some brands of charcoal just burns hotter than others. It could also be dependent on which grill (size, brand, and size of Vortex, etc). So the same thing has happened to me once, and then again, sometimes I cook them for an hour and they still need more time. I would say that these directions are guidelines and that the best approach is to cook to temperature not to time. I have a Thermapen that I use that measures the correct temp in a couple of seconds and I use it all the time. And I would rather be a little bit over than under with chickens anyway - I am not worried personally but people tend to freak out over undercooked chicken. So cook it a couple of times more - eventually you will nail how your kettle grill works with the Vortex and you will get crispy and flavorful chicken wings every time. Hope this response helped? @@BigSwedeBBQ Probably because I bought an off brand, was thinking of putting the vortex at the very bottom of the grill where the vents are and then it would fit but not sure if it would still work properly that way.

Are you using a small vortex with a 22.5 kettle? If so how come you went with the smaller one. I got a medium vortex, just wanna make sure I got the one that works best for wings like those
Big V I bought the one they had in stock at my local bbq store and I found that it works great - you really don’t need a lot of charcoal to get great airflow
@@BigSwedeBBQ I just ordered a smaller size for my 22 inch kettle. Figured it would put off plenty of heat for a couple dozen wings or so. The smaller diameter cone will allow more indirect cooking surface area also. You can always add more briquettes and hardwood.

Why not use the vortex to preheat the charcoal. Seems like it would work just ad well

I don’t know exactly how hot the indirect heat gets when using the vortex - I would guess around 400F - the direct heat easily gets to over 750
