Amazing time lapse! How did you isolate parts of the mesh in such a way that the parts you are not working on disappear?

When in object mode you can use " / " key to isolate..you can also use "H " to hide, Alt +H to unhide , " Shift + H"to hide unselected..

2:10 how do you adjust the angle of selected vertices?

You can Select the vertexs...and press
S > X > 0.....(s - scale / x y z axis / zero amount)

Ehrm, nice video but that is indeed a Roman helmet, not "Spartan"
