Take a pack of bacon and prepare it how you like (I usually sprinkle pepper and chili powder or rosemary on mine). Place the bacon on a wire rack in the cold oven. Turn on to 400° and let it preheat. As soon as it beeps that it reached the temperature, turn the oven off, but leave the door closed. Fifteen minutes later, you've got bacon that's the perfect balance of crunchy and chewy. 😉
Black pepper, brown sugar, and red pepper flakes (à la Alton Brown). Gotta try the maple syrup, though.

I honestly didn’t know what to make of this guy when I saw his first video but he is quickly becoming one of my favorite food channels. He seems to know his shit and he doesn’t have these outrageously complex recipes and tips. Makes me what to dent my fridge.
