  • Loco Moco is a classic Hawaiian comfort food that consists of white rice topped with a hamburger patty, a fried egg, and brown gravy. It's known for its hearty and satisfying nature, often served as a breakfast meal but popular any time of day.
    The dish was reportedly invented in the late 1940s in Hilo, Hawaii, at the Lincoln Grill. According to local lore, a group of Lincoln Wreckers Sports Club teenagers were looking for something different to eat-something cheap yet filling that differed from the usual sandwich. They asked the proprietors, Richard and Nancy Inouye, to put a hamburger patty over rice, topped with brown gravy to keep it moist, and a fried egg. They named it "Loco Moco." The "loco" part came from one of the teenagers’ nicknames, "Crazy," and "moco" (which amusingly means 'mucus' in Spanish) was added simply because it rhymed, with no particular meaning in mind.
    Loco Moco has since evolved and can now be found in various forms throughout Hawaii and beyond, sometimes using different types of meat like Spam, chicken, or pork. Chefs and restaurants have also put gourmet spins on the dish, utilizing higher quality cuts of beef, adding additional toppings like onions, mushrooms, and bell peppers, or crafting unique types of gravy.
    This dish has become a staple in local Hawaiian cuisine and a symbol of the blending of cultural influences within the islands, showcasing Asian (rice and soy sauce) and Western (hamburger and gravy) culinary elements. It’s a beloved part of Hawaiian diner fare and a must-try for visitors wanting to experience local food culture.

    I'm from Hawai'i, Loco Moco is an easy and filling meal. We love our rice in Hawai'i and most of us buy plate lunch at L&L and Loco Moco is a favorite along with BBQ chicken, teriyaki beef, garlic shrimp plate... mmm 🤤🤤🤤🤤🤤Chicken Katsu, Tonkatsu.... I could go on...

      There's a menu item at "Hawaiian Style Cafe" in Waimea, HI on the Big Island called the "The Big Mok (Loco Moco)" that includes Spam, and two types of link sausage (Portuguese and local) instead of the beef patty, but all of the other goodies shown in Rik's version. Their version of Loco Moco is one of the reasons that I love the place. The point is that you can likely mix it up with meats and still be authentic. As Rik puts it, it's in the gravy...

    Hawaiian food is so good. I love teriyaki chicken served with rice and Hawaiian Mac salad. It’s a carb bomb but very filling.

    That looks delicious. That's how I like homemade burgers. Just meat, salt and pepper. My Mum used to make her own burgers. Just served with baked beans and sometimes, egg and homemade chips. But I'll definitely try it with rice and onion gravy. Thanks for another great recipe idea, Rik.

      @@soniahamilton9914 Isn't that maybe just a perception? All cuisines have comfort food and don't forget that Hawaii became the US's 50th State so of course there's an American influence in its food. I think that, especially in UK, we are sold a lot of nonsense about cuisines and cultures. And when you think about it, our curries and Chinese food are only a version of what's eaten there, and sometimes a very vague one too. I do believe there's a huge liking for Spam in Hawaii too. I wouldn't say that was too tropical either, would you? I'm going to give this one a try too. Hope you enjoy yours! 😊👍

    If you told me I was going to have burgers covered in thick gravy I would recoil remembering my junior school days in the early 80's! But this is not that! WOW! I love it! Mrs Parr should have cooked it like this and I would have eaten it instead of getting a detention for quote 'not wanting to eat the pigs food' haha

    Beef, onions, [mushrooms] Worcestershire, black pepper (additions to taste) gravy over potatoes, rice, pasta, toast (any starch will do). These combinations are some of my most utilized "go-to meals"; Salisbury Steak at #1. Keep being awesome.

    great combination for my cooking of the supper meal because my roommate prefers to have minced meats due to his minimal dentistry. I enjoy pineapple as a commenter suggested and he likes onions. Great technique to reheat the cooked burgers in the gravy... Less cooking pans are a real plus especially in gardening season which is just starting in Salmon Arm region of British Columbia Canada.

    In Hawaii, there is perhaps only one food that is more engrained in the island culture than pineapple - and that food is Spam.     Years ago i had this chinese dish a few times in Dubai. Mince beef in gravy on rice with spring onions on top. No idea how they made it, but it was so so good and reminded me of this

      Yes you are right about the dish. It's Chinese minced beef with gravy over rice, seasoned with soy sauce, oyster sauce, and sometimes a touch of Chinese five-spice. It's usually garnished with chopped spring onions and served over steamed rice. I haven't made it in years, its not too difficult I may do that for the channel. Best, Rik

    Great idea, it is so cool you done this as I heard of it first time yesterday on a bill and lisa video where they sampled food in Las Vegas. I hadnt heard of this and didnt know its origins but it sure looked a nice meal. Thanks for giving us the class!!     Aloha, Rik! You could slip in some of that TVP like you do in the lamb pie,lol! Most folks wouldn't notice... Good job with the Loco Moco! That place that originated it is called Cafe 100, they were ready to retire but decided this year to stay open because of the loyal client base. Its a takeaway place. There are very few places to eat here and many are closed on Sundays. If you ever get to this part of the world I would love to give you and your wife a tour!

    Simple is my favorite type of recipe.
    Basic ingredients. And I grind my own hamburger meat from store bought stew beef, sirloin, and round steak and freeze. I worked in a deli/meat department as a teenager and saw what was put in hamburger then. I really don't like most store packaged hamburger now. Except from a butcher shop.
    Basic is best

      Well not a real loco moco then though. But grilled pineapple on the side would be nice, my sauce is a bit different, on top goes spring onions for me. I like the (Japan) loco loce rice burgers❤️

    Oh this is so funny to see this! It's also served over mashed potatoes (supposedly). I have a Japanese friend in Oahu. I told her I made this but didn't top it with the egg (have a thing about eggs on top of stuff). She immediately informed me that then I didn't make Loco Moco... I made Salisbury Steak on mashed potatoes. LOL Which actually I had because the recipe I used didn't use soy and had onions and mushroom gravy over potatoes, not rice.. so it WAS just Salisbury Steak. :) I now have to try the real deal (and with the egg). Did you know that Hawaii has like 15 different varieties of Spam? It's like their national meat, and has evolved since our soldiers introduced it during WWII. Most people in the US won't even touch the stuff (and we only have one kind). What are your oven settings for browning up the extra onions? Shirley in NH

      Take a look at a big supermarket you will find a verity of Spam,maybe not as many as Hawaii ,but quite a lot,I want to try the turkey,I heard that was a good type.😊

I, for one, do like span, especially in a sandwich with a big slab of Velveeta (another thing most people turn their noses up at). lol But then growing up poor you learn to like a lot of things and never turn up your nose at any food. lol Hawaii just fascinates me with what they have done to plain old Spam... they have teriyaki, bacon, smoked. oven roasted turkey... even pumpkin spice!       @@user-zc3lc1ks7h I spent six months in Manchester NH,a few years back,and I couldn’t believe how big the supermarkets were there,I believe a lot of people come over the state line from Mass.Because of space,and real estate prices,here in the NYC area the supermarkets are on the small side.I like spam,never tried it until a few years ago,I make fried rice with it,and cubed in omelette,I would like to try the Hawaiian dish with the rice,and nori,the name just went out of my head.As I said before I want to try the turkey one,as I saw someone tasting them all,and he really liked that one,and the original one.Nice speaking with you,and be safe.😌

      @@JanetBrown-px2jn You might be thinking of Musubi... sticky rice and spam layered and wrapped in nori (soy or teriyaki is involved too). Looks appealing but not sure I would like the nori part. Mass people also cross into NH because we have no sales tax. Also being a country gal from Gene Autry, OK I have never understood how people live in NYC (or any city)... and how they can possibly shop for food. Up here being in the woods just half hour from Canada our grocery stores are probably the size of yours. I also just found out that Spam has 20 flavors, including cheese, chorizo, and others I have no clue what they are. Very nice speaking with you too. :)

    I have never had Loco Moco but it looks delish! I know Hawaiians love Spam if you know any recipes using that ingredient. I love topping things with a fried egg, especially Pad Grapao!

    We love this and make it occasionally for any meal. Also good with Kahlua Pork. First time we had this was at CC Jon’s in Honaka’a on the Big Island. It was famous but sadly has closed. Maybe you can make Malasada’s for dessert.

    Looks delicious, but basic things usually are, without all the additives... I'm having lunch and boy, can I taste that onion gravy! I've been to Hawaii many times and never heard of this, I'll just have to make it myself!

    I see he’s using long grain rice the medium grain rice is the preference of Hawai’i. First time I tried this as a child in the late 60’s saw it on the menu at a drive inn in Wai’anae on the island of O’ahu called Bayside Drive Inn it was listed on the menu as “The Hungry Man”😁🤙

    Looks delicious Rik. Any chance you might have F**gots on the menu any time soon. My mum used to buy the famous Brains brand when we lived in the UK and I really do miss them. Haven't had one for about 35 years (can't buy them in NZ). I also really miss the famous crispy pancakes (with homemade chips and beans, of course). x Laura in NZ

    I have a question for you Rik. What do you think makes the best gravy, stock cubes or powdered gravy mix?

      Its a good question and down to preference - Powdered gravy mix certainly helps in the thickening of the gravy. Stock cubes seem to have a more intense flavour. Both good and depending on what you have available. If the gravy is a onion gravy and you cook the onions then add flour, cook, that will act as a thickener so stock cubes will more than likely have a stronger flavour. (most cases) Cooking the same way using the powder will give a more subtle gravy. Really its choice! Best, Rik

    If you watch Beryls channel on UA-cam you see how with just little changes,food is very similar around the World.I love Salisbury steaks,and hamburgers,rice,and eggs,but something about that type of gravy with rice seems off to me.When as a child I told my Mom I liked rice,she made it for me with English style gravy,and I just didn’t like it that way.Indian,Chinese,and Mexican style gravies to me go with rice.😊

      180-200 for about 8 - 12 mins (ish) depending on how many onions you do. Also the onions had already had a little pre fry. Thank you. Best, Rik

    When I was at school I was told that the most common meat on the islands was Pork , something to do with the taste and texture being comparable with Long Pig (aka human flesh). That being said I am mildly surprised that the dish isn’t made of pork.

    I’ve had Moco Loco on the island of Kauai in Hawaii. Your recipe is similar to the Hawaiian versions. Moco Loco is one of my favorite “pig-out” meals. 👍👍👍👍👍😎
