  • Shepherd's Pie is a traditional British dish with a rich history and a beloved comfort food for many. It's known for its savoury lamb meat filling and creamy mashed potato topping.
Shepherd's Pie originated in the United Kingdom and Ireland. The dish was a practical solution for using leftover roasted meat. Initially referred to as "Cottage Pie" when made with beef, the term "Shepherd's Pie" began to be used when the dish was made with lamb or mutton, reflecting the shepherd's connection to sheep.
The base of Shepherd's Pie is typically made with ground lamb, cooked with onions, garlic, and sometimes vegetables such as peas, carrots, and corn. The flavour is enriched with broth, tomato paste, and Worcestershire sauce, and it's seasoned with herbs like rosemary and thyme. The dish is topped with a layer of mashed potatoes, which may be garnished with cheese before baking for a golden crust.
The dish is assembled by placing the meat mixture in a baking dish, covering it with the mashed potatoes, and baking it in the oven until the top is golden and crispy. This method ensures the flavors meld beautifully, and the topping gets a delightful texture.
Shepherd's Pie is a staple in British and Irish cooking, often served in homes and pubs. It's particularly appreciated for its comforting qualities and ability to be filling and economical, making it a popular choice for family dinners and gatherings.

You're brealing my heart Rik. You simply can't get real shepherds pie in the US. We've a thousand "British" and "Irish" pubs here and every damn one of them features cottage pie as Shepherds. I've even come across one (you'd better sit down) that uses beef and pork! On;y way is to make is myself when I can get the lamb mince. Lamb in general is hard to come by because Americans have only had overcooked gamey lamb. Cheers!

Great stuff Rik. I’ve always found the pretty-much essential thing is the age and fattiness of the sheep involved. Taste-wise (even if not fashion-wise!) fat is GOOD. In my Highland Scottish childhood we all ALWAYS made it out of old-as-possible MUTTON, if that wasn’t available (but it always was), then HOGGET, and never out of relatively ‘tasteless’ lamb. We still stick to our own ‘old’ minced-mutton but SADLY that seems to be getting harder to find in your average butchers. We’ve all always browned the mutton-mince well first before adding the more-tender veg. And isn’t the choice of potatoes important too? They do need to be good and fluffy. As a final thing, out of choice I’d always leave the well-browned (not just ‘beige’) mince and its softened veg to ‘develop’ in the fridge for 3-4 days before adding the ‘ploughed-field’ topping and finishing it in the oven. I like to think that I could tell the difference blindfold! (We often then freeze it before the topping stage too, then defrost it, add the spuds and then into our old-fashioned oven for half an hour or so)

Spectacular, Rick! And easy!! Bravo!!! Because German guests were visiting "Stateside" and wanted to try BISON, which is a VERY LEAN meat, I modified the recipe by adding more butter in the onion/garlic/veg stir! Admittedly, I was in a hurry, because everyone was hungry--I cubed the taties small to boil faster, and hurried the celery, carrots, and peas a bit. But the flavors of all came through, and the carrots and peas were NOT mushy. A total success!! Thank you! And we were obliged to retitle it "Prairie Pie." haha

A lovely recipe! One of my favourite dishes. Sometimes I'll add parsnips to it as well. The sweetness and sharpness they add compliment the lamb nicely. That's a very good tip about not 'over mashing' the potatoes. It causes the starches to over develop and makes the potatoes more paste like. Thanks for mentioning the difference between cottage and shephard's pie. In the US many times, they substitute beef and still refer to it as 'shephard's pie'. It is harder to find lamb in some places. If you think about it though, a shephard tends to sheep/lamb not cattle, but I think they use beef for convenience. Cheers mate!

It was very nice, but I mentioned to my father who was a 'gourmand' that I thought it was a little 'gamey' and he said that if everything tasted like beef there would be no point in trying something different.

In NZ we make our Shepherds Pie using left over roast hoggett/wether/ewe. We put the meat through either an old fashioned hand cranked mincer that we screw onto the bench (👍for best results) or through a mincer attachment on a Kenwood or similar. We also put quartered onions through the mincer, catching the juice from the onion and adding some or all of it, back into the minced meat and onion mix. Add Tomato sauce, p &s and top it with fluffy mashed potato, create furrows using a fork for knobs of butter to melt into when its in the oven - makes a lovely crunchy top. Best served with tomato sauce & buttered bread😋 No need for other veg as we've had our 5 plus the day before with the roast😛 That's Real shepherds pie. Anything else is classed as Cottage pie down here.

YOU make MY kind of food! I grew up in USA with my mom's version of Shepherd's Pie made with green beans, (YUM!) so that's what I know. My kids grew up with it, also and everyone loves it. I now make it vegetarian with faux beef crumbles -- I guess mine is now called "Sheep Lovers Pie" 🥰

When I was growing up, it was common practice to take the leftover roast from Sunday dinner and put it through a meat grinder (almost all households had one) and that was the basis for shepherd's (cottage) pie. This was the typical Monday dinner. After I grew up, no one had meat grinders anymore, so shepherd's pie was made with store-bought mince. It was never quite the same, but still remains for me a much-loved dish.
