Love those pork loins. I like to make the thick pork chops as well and saving a roast is perfect for later. I'm a sauce guy so those pork chops loaded with sauce were killer! I love the 145 degree minimum temp. Pork is so much more juicier at that temp.
Yea I was running low on my Mambo Sauce and I didn't want to mix any other sauce w it because I love the taste, otherwise I usually like just dunking them while in the sauce.
