I don’t know if it’s because of the lockdowns, COVID weirdness, my health issues, or whatever... but I used to be a dynamo, getting a huge amount of work done in a day. Not so much lately. And then about a week ago I chanced across your channel and now I’m hooked. With RA I have limits on what I can do before I’m worn out. Somehow you’ve given me new hope and motivation! Now I do all I can, take a break - and here’s the new part - after my break I get back up and get moving again instead of giving up and crashing on a sofa to read. I don’t know what your magic is, but I am thankful for it!
That is absolutely beautiful. I love the way you said what you said, and made your point. Clear and concise. I can’t blame my lack of interest and lack of motivation on my health, but like you, I’m stuck. I don’t want to do anything other than read and watch UA-cam. I make deals with myself to get certain things done. I watch this young lady, with all of her positive energy and bubbly personality, and wish I could go back and get a do-over. But there are no do-overs in life. If I didn’t have a job, I’d never leave the house. So I am blessed and thankful for my job, and coworkers, because I know I must stay away from slippery slope of depression. Modify my ways of doing things, or find new ways. This week has been a huge challenge as we’ve cut, tedded, raked and baled hay for our horses. Naturally our 20-something sons both went MIA, so it has been slow going. Now we just have to send it up the hay elevator and stack it. I’ve got an appointment Tuesday for a new pain management treatment, and I think I’m really going to need it! One foot in front of the other, one task at a time. I hope you find your peace and continue to enjoy your work and your colleagues. Mine are a lively bunch, and I, too, am grateful for the structure of my job - it definitely helps stave off the temptation to be lazy!

I love how DETAILED you are...you don't assume everyone knows why you ...don't wash the chicken or pre-cook lasagna noodles if you're going to freeze them first, etc. Thanks for sharing. When you make the Caribbean jerk chicken, slice a pineapple lengthwise and hollow it out. add white instant rice with shredded carrot into the pineapple with a 1/4 cup of water and cover with foil. Let the heat of the grill cook that rice for you.... It's a go-to side for us. Another idea for boneless skinless thighs is to throw in onions and bell peppers with garlic and a pinch of cumin... You've got chicken faijitas and great for taco night. We usually batch cook thighs and then vacuum seal them for quick heat and serve meals.
One of my favorite marinates is italian dressing (I use olive garden) lime juice, and honey! It is BANGIN!! Bummer about your lasagna! Your meals are so simple and great!
In the summer, I like a lot of salads. When I make pasta salads, i cook the pasta in the morning. Or I buy some rotisserie chicken and make 4-5 different dinners with it.
I actually did around the same idea since I was going out of town for around three weeks too plus cleaned the whole house, cleaned my sheets, got my freezer cleaned out and organized, and my pantry, and then last my fridge cleaned out. So when I get home I only have to fill up my fridge with dairy, and fruits and vegetables pretty cool! Thanks for everything and all you're tips it's been really helping me, I hope you have a great vacation I know I have so far.
For tater tot casserole I use ground beef onion and garlic, I also use fresh mushrooms too but no peppers. I also used adobo peppers once ( in can ) cook meat …..layer mushrooms and Mexican shredded cheese with the mushroom soup / milk mixture. Add tots and bake covered then uncover add cheese bake til crisp. Cool cover freeze
Love watching your videos - I get a lot of ideas from you and I'm single! Only one mouth to feed but you have taught me to marinade my chicken as soon as I get it home from the store. One thing I learned a while ago was to get most of the air out of the bag when sealing it is to slowly lower the bag into a big bowl or sink of water. The pressure on the outside of the bag forces the air out as you lower the bag. Just be careful to zip it up and not get any water in the bag. I use my big stock pot to do this - I leave the pot in the sink because I'm short and can't reach down into the pot if it's on the counter. :)
Our favorite summer go to is pork tenderloin. In our stores, it comes 2 per pack, and is often on sale buy one get one. We will season with a dry bbq rub, and wrap in bacon secured with toothpicks. We put it on the smoker for a few hours and it’s delish!!
Hubby got a black stone grill with side burner and loves cooking on it, plus we have a cuisinart small gas grill we use. I bought him a ninja bake/air fryer (kinda like toaster oven) it is awesome and quick so easy to use as oven, holds whole frozen pizza too!
I would have added that onion and pepper with the steak and chop flank steak. Nothing is more yummy then steak with onions and peppers... well maybe if you add mushrooms with it.
We love to grill in the summer. My husband will do a huge batch of chops, chicken breasts, burgers, sausages and hot dogs, then we have it for two or three meals. I always make potato salad, coleslaw or taco salad to go with.

I have been freezing meat with marinades for quite some time. It makes things easier after a day of working. It also comes in super handy for grilling. I especially like Zesty Italian dressings and have used Balsamic Vinaigrette dressing as marinade. It's a little something different.
We love to grill chicken thighs but first we marinate them in pickle juice and some cayenne pepper and we put it in salads it's delicious. My husband loves to smoke ribs and salmon. Have a blessed day Kimmy and Fam💗

I use a lot of foil. I buy mine from Sams or Costco, usually in the food service/restaurant supplies. 500 linear feet for around $23. That’s longer than a football field! It’s very heavy duty and lasts forever! The worst part is finding a place to store it for easy access. It’s pretty heavy to tote around the kitchen.
So I went ahead and took this suggestion and made some meals from this video and your Aldi video from your sisters house with things I had on hand. We are back from a 2 week trip out west….. 8 states and 9 National Parks …… I’m EXHAUSTED and so glad I did the prep ahead! Thank you so much for this idea!!!!!
One of my fav chicken marinades is just olive oil, white wine vinegar and Monterey chicken seasoning. It’s basic, but tenderizes so well. Great for chicken breasts for sandwiches, grilled or not.

Spray one side of Saran Wrap with oil...helps wrap not stick to food before you have to remove before baking. Sauce: If you add a little water to those sauce bottles and shake them up, you’ll get SO much more of the sauce!!!!!
In the UK, The Food Standards Agency advises NOT to wash poultry. They say that the washing process causes splashing that spreads bacteria. They advise ensuring you cook to the correct temperature, but NOT washing.

I always find it interesting how there’s different ideas in different countries, I’m from Australia and never have I boiled my dried lasagne sheets before assembly, as long as they are fully covered by meat and sauce, they soften during the baking process. Washing chicken??? I’ve never heard of it, let alone done it. I’ve never been sick from not washing chicken.
I don’t boil my noodles, either. That way they come out al dente, which my family prefers. Washing chicken is recommended by many, but studies have shown it sprays more germs around than not washing it. I don’t wash mine, either.
Love just a simple steak on the grill, a side tossed salad with tomato and feta in it, and fresh french bread. Also do a lot of sausages- Georgia Fat Red Hots, Hot Italian Sausage with peppers and onions. Usually a pasta salad on the side.

The days after a vacay are so hard as we are getting into the swing of things and putting everything away, not having to cook is an amazing idea.

My go to lazy summer meal is probably those premade frozen burger patties from Sams and Sams beef hot dogs on the grill. The big box of hotdogs is the way to go when you have a big family that loves them. I like these options because they are so customizable. Anyone can put anything on their burger or hotdog. We love BBQ chicken. So you make little pocket out of tin foil and add chicken, yellow squash and bell pepper, and onion. Then pour on top with Italian dressing and green goddess dressing. So good
So many great things to do with chicken. Love it! You spend sooo much time in the kitchen. You really need to invest in a good set of knives for chopping all those vegetables. A short little paring knife and a big Vadallia onion don't mix. A Santuko knife and a mid-sized serrated paring knife would be a great addition to your kitchen cutlery.

Here's my go to recipe : Chicken any style OG sauce as we call it 😁 (Italian dressing) Green bell peppers Onions Salt pepper Add favorite spices Italian Seasonings work well hint OG is Italian (you want believe how many richards want a cheeseburger , umm we are pasta only sir 🤔🤣) In dish pan I heat 390 oven for about 30 to 40 mins Cook till chicken done Serve over favorite rice
If you're out of ricotta but still want lasagna, you can use a jar of Alfredo sauce. I do a layer of red sauce (with it without meat), noodles, Alfredo, shredded cheese, repeat. So good and easy!!
Your 3 chicken breast you said you earmarked for salads you could dump what is left of the Italian dressing and grill it for salads. It would be amazing!

I really enjoyed this video. Just a couple of tips if interested ... I feel like it's a good idea before starting food prep/cooking to have soapy water in the sink. Doing so makes it easy to go put your hands right in to wash them off without having to touch a faucet. Also when bagging meats with marinades consider putting the marinade in first and then the meat and close the bag. Since you squish it all together anyway the end result will be the same but the marinade won't squeeze out of the top as you close the ziploc.
I have a whole list of things I am gonna grill this summer. One my mom use to do was steak or teriyaki chicken kabobs on the grill. I am gonna do those and probably freeze some since I have almost 5lbs of stew meat.

I know this is a year old, but I had to just laugh because last night I was going through my fridge to see what I need to use up and I have 2 open Sweet Baby Ray's BBQ sauce bottles of the exact same size and fill level in my fridge! SO crazy! Also, a marinade that I LOVE for grilling chicken legs is a mixture of mostly Dale's Original Steak Seasoning (it's a liquid - think they make a chicken one but I use the original steak one regardless of if it's chicken, steak, shrimp, salmon, etc.) with some mustard (I don't care for mustard usually but it is AWESOME in this marinade), soy sauce, melted butter and Tony Chachere's Creole seasoning. It is SO good! I just discovered you and have been binge-watching your videos! Thank you so much for sharing all your awesome food adventures!
Can you do a video on organizing your freezer. We have the chest type and everything gets pushed to bottom. Never know what is in there unless we empty it. 🤨

@Deb DeMark, in previous video she thaws out the casserole the night before and cooks on a temperature and bakes it. As for the crockpot meals she dumps frozen and cooks on low or high depending on the food. Probably the food being grilled like steak it is thawed first. Chicken could be grilled frozen just take longer but my opinion could thaw a little bit to separate pieces.

If I have too many peppers and onions, I dice and freeze them. I do the same with strawberries, peaches and blueberries too!

My go to lazy summer meal is probably those premade frozen burger patties from Sams and Sams beef hot dogs on the grill. The big box of hotdogs is the way to go when you have a big family that loves them. I like these options because they are so customizable. Anyone can put anything on their burger or hotdog. My family hates hot dogs all 6 of us. Ugh I wish they would eat them. But it's 1 of the only things they won't eat
I have changed the tater tot casserole too. In addition to how you do it, I add sharp cheddar cheese...because cheese lol.
I always added chunks of cheddar cheese to the meat portion and shredded cheddar on top..
We add cheese and call it cheeseburger casserole

We love BBQ chicken. So you make little pocket out of tin foil and add chicken, yellow squash and bell pepper, and onion. Then pour on top with Italian dressing and green goddess dressing. So good

So many great things to do with chicken. Love it! You spend sooo much time in the kitchen. You really need to invest in a good set of knives for chopping all those vegetables. A short little paring knife and a big Vadallia onion don't mix. A Santuko knife and a mid-sized serrated paring knife would be a great addition to your kitchen cutlery.

Here's my go to recipe :
Chicken any style
OG sauce as we call it 😁 (Italian dressing)
Green bell peppers
Onions
Salt pepper
Add favorite spices
Italian Seasonings work well hint OG is Italian (you want believe how many richards want a cheeseburger , umm we are pasta only sir 🤔🤣)
In dish pan
I heat 390 oven for about 30 to 40 mins
Cook till chicken done
Serve over favorite rice

If you're out of ricotta but still want lasagna, you can use a jar of Alfredo sauce. I do a layer of red sauce (with it without meat), noodles, Alfredo, shredded cheese, repeat. So good and easy!!
You can use cottage cheese as well 😋
I tend to use cream cheese, I don't like ricotta or cottage cheese 😐
For the tater tot casserole I mix all the sauce with the meat. I also add shredded cheddar cheese sometimes. Yummy.

this is really good for budget
I really enjoyed this video. Just a couple of tips if interested ... I feel like it's a good idea before starting food prep/cooking to have soapy water in the sink. Doing so makes it easy to go put your hands right in to wash them off without having to touch a faucet. Also when bagging meats with marinades consider putting the marinade in first and then the meat and close the bag. Since you squish it all together anyway the end result will be the same but the marinade won't squeeze out of the top as you close the ziploc.
I have a whole list of things I am gonna grill this summer. One my mom use to do was steak or teriyaki chicken kabobs on the grill. I am gonna do those and probably freeze some since I have almost 5lbs of stew meat.
A splash of vinegar in ketchup or bbq sauce bottles will help empty them out easily. Just swoosh around and empty.

I know this is a year old, but I had to just laugh because last night I was going through my fridge to see what I need to use up and I have 2 open Sweet Baby Ray's BBQ sauce bottles of the exact same size and fill level in my fridge! SO crazy! Also, a marinade that I LOVE for grilling chicken legs is a mixture of mostly Dale's Original Steak Seasoning (it's a liquid - think they make a chicken one but I use the original steak one regardless of if it's chicken, steak, shrimp, salmon, etc.) with some mustard (I don't care for mustard usually but it is AWESOME in this marinade), soy sauce, melted butter and Tony Chachere's Creole seasoning. It is SO good! I just discovered you and have been binge-watching your videos! Thank you so much for sharing all your awesome food adventures!

Can you do a video on organizing your freezer. We have the chest type and everything gets pushed to bottom. Never know what is in there unless we empty it. 🤨

Thank you! I feel inspired!! We struggle every night between getting fast food or cooking. I love all the ideas. One question, would the crockpot meals and tator-tot casserole be thawed before cooking?
@Deb DeMark, in previous video she thaws out the casserole the night before and cooks on a temperature and bakes it. As for the crockpot meals she dumps frozen and cooks on low or high depending on the food. Probably the food being grilled like steak it is thawed first. Chicken could be grilled frozen just take longer but my opinion could thaw a little bit to separate pieces.
