3 Easy & Delicious Banana Bread Recipes

**** Blueberry Banana Bread ****
350°
2 C Flour
3/4 tsp Baking Soda
1/2 tsp Salt
1 C Sugar
1/4 C Butter - softened
1 C Bananas - Mashed (approx 3 large bananas)
2 Eggs
1/3 C Sour Cream
1 tsp Vanilla
1 1/2 C Blueberries + 1 Tbsp Flour
In medium bowl combine flour, baking soda & salt, set aside.
In large bowl, beat butter & sugar until light & fluffy, add bananas, eggs, sour cream & vanilla.
Stir 1 Tbsp flour into the blueberries, gently fold into batter. Pour into a 9 x 5 loaf pan sprayed with
cooking spray. Top with additional blueberries.
Bake @ 350° for 60 -70 minutes.
**** Easy Cream Cheese Banana Bread ****
1 pkg Pillsbury Banana Quick Bread Mix - prepared according to directions
1 C Chocolate Chips (optional)
1 Ripe Banana - mashed (optional)
8 oz Cream Cheese - room temperature
1 Egg
1/4 C Sugar
1/2 tsp Vanilla
2 Tbsp Flour
9 x 5 Greased and either flour or add parchment paper for easy release. I sprayed mine and it stuck a little on the bottom. Next time I will use the parchment.
In a medium bowl mix cream cheese, egg, sugar, vanilla & flour until well blended.
Mix bread mix according to directions. Add mashed banana and chocolate chips if using. You can also use 1/2 C nuts.
Pour into pan and top with additional chips.
Dollop the cream cheese mixture onto the batter.
Take a butter knife and swirl the cream cheese through.
Bake @ 375 F for 50 - 60 minutes or until a toothpick comes out clean.
Cool completely before cutting into.
**** Gluten - Free Almond Flour Banana Bread ****
2 C Almond Flour
2 Tbsp Brown Sugar
1 tsp Baking Powder
1/2 tsp Salt
2 tsp Ground Cinnamon
2 - 3 Banana's - mashed (approx 1 cup)
2 Eggs
1/2 C Butter - softened
1 tsp Vanilla
3/4 C Chocolate Chips
*Optional
1/3 C Slivered Almonds
In a medium sized bowl whisk the almond flour, baking powder, cinnamon & salt.
-set aside
In a large bowl cream butter & sugar. Add eggs, vanilla & banana's, mix until
well combined.
Gradually add dry ingredients to the wet and stir until combined. Fold in chocolate chips.
Spray & line a 9 x 5 loaf pan with parchment paper. Evenly spread the batter in the pan.
Top with slivered almonds if using.
Bake @ 350 F for 50 - 60 minutes or until a toothpick comes out clean.

I like original Banana Bread the best, my Grandmother "Nana" made the best whenever we went to visit. But from these 3 I would go with the blueberries. Good job on them Barb!
