  • **** Ground Chicken w/Green Beans & Pasta ****
    1 Tbsp Oil
    1 1/2 - 2 lbs Ground Chicken
    1 1/2 tsp Seasoned Salt
    1 tsp Italian Seasoning
    1 Small Onion -
    3 - 4 Cloves Garlic - minced
    1 1/2 C Cut Green Beans (I used frozen)
    5 C Milk
    1 lb Bowtie Pasta - uncooked
    1 C Parmesan Cheese - grated
    1 C Mozzarella - shredded
    Heat oil in large skillet, add chicken, seasoned salt, Italian seasoning & pepper, cook until
    chicken is no longer pink. Remove chicken & set aside.
    In same pan add a drizzle olive oil, cook onions & garlic until soft. Add cut green beans,
    mix together well. Add milk to the pan and bring to a boil. Add bowties and cook approx
    10 minutes or until pasta is cooked. Stir frequently so it doesn't stick or burn.
    Once pasta is done add chicken back to pan, stir in parmesan cheese & mozzarella.

    **** Hamburger & Potato Skillet *****
    1 1/2 lb Ground Beef
    1 Onion - thinly sliced
    5 - 6 Cloves Garlic - minced
    6 - 8 Medium Yukon Gold Potatoes - sliced thin
    Salt
    Pepper
    1 1/4 C Cheddar Cheese - shredded
    Scallions - sliced
    In large skillet heat ground beef, cook for 4 - 5 minutes then add garlic. Cook until
    browned. - Do Not Drain.
    Add sliced potatoes & onions, mix well. Sprinkle with salt & pepper, keep heat medium
    to low, stir & cover. Cook approx 15 minutes, remove lid and stir mixture bringing bottom to
    the top. Cover and cook approx 10 minutes more or until potatoes are fork tender.
    Sprinkle cheese on top, turn off burner and cover approx 5 minutes or until cheese is melted.
    **** Sausage & Peas with Pasta ****
    1 lb Pasta - cooked reserve 1/2 cup of Pasta Water
    1 lb Italian Sausage - casing removed
    3 4 Cloves Garlic - minced
    1/2 C Frozen Spinach - drained
    1 C Peas
    1 tsp Basil
    1 tsp Lemon Zest
    1 tsp Fresh Lemon Juice
    Cook Pasta according to directions and reserve 1/2 c pasta water.
    In skillet brown sausage, add garlic about 3/4 the way through. Add peas & spinach, stir until
    heated through. Add lemon juice, zest, parmesan cheese & pasta water. Stir. Add pasta to
    pan and mix thoroughly.
    Serve with additional parmesan if desired.
