- **** Sausage & Pepper Skewers ****
1 - 2 lbs Sweet or Hot Italian Sausage - cut in 1 1/4" pieces
3 Bell Peppers - cut in chunks
1 Large Red Onion - cut in chucks
1/3 C Olive Oil
1/2 tsp Salt
1/4 tsp Pepper
1/2 tsp Garlic Powder
1/2 tsp Oregano
Alternate sausage, peppers & onions onto skewers.
In small bowl mix olive oil, salt, pepper, garlic powder & oregano.
Place skewers onto heated grill and lightly brush with olive oil mixture. Cook until
nicely browned turning & basting occasionally until fully cooked.
**** Flank Steak Pinwheels ****
2 - 3 lbs Flank Steak - butterflied & pounded
5 - 6 cloves Garlic - crushed
1/4 C Fresh Parsley - chopped
1/4 C Olive Oil
Salt & Pepper to taste
1 C Baby Spinach
1/2 lb Provolone Cheese
Butterfly & pound flank as thin as you can. I like to score the meat as well.
Pour on olive oil garlic & parsley. Rub into meat. Place baby spinach on meat leaving
at least 1/2 inch on each side. Layer on provolone cheese.
Take meat and roll tight moving with the grain. Tie meat and place toothpicks to help keep
secured. Cut in between string.
Grill on medium heat until cooked to your desire.
For medium, approx 7 - 9 minutes per side
**** Grilled Shrimp & Pineapple Kabobs ****
2 lbs Jumbo Shrimp
1 Large Red Onion - cut in chunks
1 Green Pepper - cut in chunks
1 Red Pepper - cut in chunks
1 Pineapple - cut in large chunks
Sweet Chili Sauce
1/2 C Rice Wine Vinegar
1 Tbsp Cornstarch
1 1/2 tsp Red Pepper Flakes
1/4 C Water
1 Tbsp Soy Sauce
3 Cloves Garlic - minced
2 tsp Ginger - minced
2/3 C Honey
To prepare sauce, whisk together all ingredients in a saucepan and heat 2-3 minutes to thicken
then remove from heat.
Preheat grill to med-high heat
Prepare shrimp, red onions, peppers & pineapple onto skewers
Brush with oil and grill just until shrimp becomes opaque and vegi's start to char, 2 - 3 minutes
per side. Brush with sauce while grilling.
Transfer to serving platter and drizzle with remaining sauce.
Marinate chicken at least an hour or overnight if possible.
Assemble skewers and discard remaining marinade.
I usually make a little extra marinade so I have some left over for basting.
Grill skewers turning frequently brushing with marinade until golden brown on each side.
**** Grilled Pineapple Chicken Kabobs ****
2 Boneless Chicken Breasts - cut in 2" chunks
1 Medium Red Onion - cut in chunks
3 Bell Peppers- any color cut in chunks
1 Pineapple - cut in chunks
Bottle of Sweet Chili Sauce
8 Skewers
Olive Oil
Cut all vegetables & chicken and place in separate bowls. Arrange peppers, onions,
pineapple in chicken onto skewers.
Brush with olive oil. Place on grill and cook over low to medium flame turning
and basting with chili sauce until veggie's are softened & chicken is completely cooked.
Approx. 4 - 5 minutes on each side.
