Thanks Cuong for posting this!! I just got my pho spices in yesterday and am eager to try this out! For myself and for others, I took a stab at a written recipe using this video and adding a few extra traditional garnishes. Enjoy! Beef Pho in Instant Pot 2 lbs Ox Tail 1 Package banh pho (dried rice stick noodle) 1 large whole onion 1 root of ginger 1.5 lbs of brisket 1/2 piece of beef tendon (optional) 1 lb eye of round very thinly sliced 1/4 cup fish sauce 1 tbs sugar 1 package pho spices (star anise, coriander, cardamom, cinnamon, cloves) 1 bunch of Thai basil 1/2 cup of cilantro, chopped (garnish) 1/2 cup of green onion (garnish) 1 cup bean sprouts (garnish) 4 quarters of lime 1 jalapeno sliced (optional) 5-6 leaves of saw-tooth herb (optional) - Pre-boil oxtail for 5 minutes in instant pot. Remove oxtails and rinse and wash instant pot liner. - Char onion and ginger over open flame or broil for 5 minutes in oven and rinse off - Toast pho spices in dry pan, place them into cheesecloth bag - Place oxtail, brisket, tendon (optional), onion, ginger, sugar, pho spices, and fish sauce into Instant Pot - Add boiling water up to max line. - Pressure cook on manual for 45 minutes with a quick release. - Remove onion, ginger, and pho spice bag and discard. - Add fish sauce and/or salt to taste. - Ladle out top layer of grease/fat from broth. - Soak rice noodle in hot water for 2-3 minutes until pliable. - In a frying pan, boil water for rice noodles. Blanche noodles in pan, stirring for 30 seconds to 1 minute. Don't overcook!. - In same frying pan, cook thinly sliced eye of round if you prefer it cooked more than medium rare. - Combine broth, noodles, beef oxtails, sliced brisket, and sliced tendon in serving bowl. - Add raw sliced eye of round at this point if you like medium rare. - Garnish with Thai basil, saw-tooth herb, cilantro, green onion, and bean sprouts.
Correction vermicelli is not Pho Noodle , you can buy a dried Pho noodle then soak in water overnight to soften . Once is soften you can blench in boiling water until it soften .

My husband is Vietnamese and I make a pho traditionally. Over the stove for hours. I also use a few gallon pot to feed everyone for 2 days. I will try it for the 2 of us in my IP but won't tell him. 🤣😉

Except there's nothing remotely French about pho. If any country influenced or inspired that dish, it would be China, not France. French don't have anything like that in their recipe repertoire whereas we know the Chinese have lots of noodles in broth.

Hey there, first off, thanks for your video! I made this last night and it was pretty good. However, the broth didn't have the depth of flavour I'm used to, it was good but a little weak ... I followed your recipe, except I can't get the spice mix packets here in Canada so I had to assemble to spices myself. I have an 8 quart IP and I filled the IP to just under the MAX line. I used around 3 lbs of ox tail, with some brisket and tendon. What would you suggest to get a deeper flavoured broth? More spices, longer cook time? Anyways, thanks again for taking the time to film this!

And I just got my IP about a month ago and am very picky about recipes to try, and usually can tell whether or not something will be good. I have a good feeling about this one, and will def. be making it! Also, thanks for the sawtooth tip. I have some jamaican recipes that called for "shadow benny or culantro" and had no idea what it was by the name. Seeing it here, and your comment that it is alot like cilantro tied it together for me! SO YAY TO YOU! :) :). I can now also make Jamaican "green seasoning" since I can now find this one missing ingredient! :) Also, do you have a blog ? Looking forward to making it!

Here is the list of things I can't have, if you could recommend a replacement that would be awesome. No sugar- can have Stevia, eventually Honey, coconut sugar & maple syrup. would any of those be a good sub for the sugar? can't have any grains (I know it sucks) so do you know if the meatballs have grains? Until I can have Pho noodles I thought I could replace them with zucchini noodles (no where near as good but, better then no Pho at all) thanks
michele sauls I am glad you enjoyed the video. If you can't have added sugar then you can leave it out. It won't make the soup terrible to leave out the sugar. I wouldn't substitute with the other sweeteners but that's your choice. The meatballs are traditionally made with potato starch as the binding agent; however some manufacturers may use flour or tapioca starch. Not sure if that works for you? Finally, of course you may use zoodles (zuccchini noodles) instead of the white rice pho noodles. It will taste different but they are good for you. Best of luck!
Jalapenos are a garnish like the lime, cilantro, and green onion (and hoisin, sriracha sauce). You add it individually to your bowl when you're ready to eat, to your taste. Good luck and have fun eating!
I made this for my family tonight. I was able to find all the ingredients except the sawtooth herb. It was SO good! I like that the heat comes as an add-on at the end, which means I don't have to make an adult version and a kid version. Such great depth of flavor, great different textures. I haven't been this happy with an Instant Pot recipe in ...forever! thank you!

Yes, the addition of peanut butter to pho soup indicates the tradition of the Hmong people. The Hmong are super interesting - they are an ethnic group living in Laos, Vietnam, Thailand and a small part of China. That is, while they assimilate into the countries where they live, they are a separate group. Even within the Hmong there are distinct separations. Their culture and their traditions are fascinating.

I notice a lot of people do like putting peanut butter in their Pho but I personally do not like it as I feel it will lose the tradition and original flavor of the broth. That looks really good although I am vegetarian. I cook for others though. Not brave enough to try and make this yet. There is a restaurant in Virginia called Phoenix Garden that makes vegan Pho which I enjoy. The place is owned by Vietnamese family.
Hey Cuong, that layer of oil at the very top of the broth is crucial for flavor for ALL soup broths. It's actually the defining point of a well-made broth and though you may not prefer it, throwing it away all together takes away the flavor from the rest of the pot.
Yep. I hate the modern cooks whom skim all the fat off. It's flavor, people! If it's too much oil, then skim some off, but there should be some oil in the broth!
Cuong, I was able to get the same meatballs you use here, are they pre-cooked so they just need to be heated by the broth when you add them at the end? Thanks!
sorry but i want to clarify... Vietnamese using the "Latin" alphabet was not due to the French. it was due to Portuguese missionaries back in the 1500s using the Latin alphabet to transcribe characters to make it easier for them to learn the vietnamese language. the rest is history.
Vietnamese ascribe too much to the French and there's misinformation everywhere. Especially that pho is French. Pho is nothing remotely French (I mean, look around - any French recipe even resemble pho?). It's closer to Chinese influenced than anything else.

Is it okay to use those premade satchels of ground pho spices in the instant pot during the entire pressure cooking cycle? Or will it disintegrate?
L Wang yes it is fine to use. I prefer whole spices but the powdered pho hoa, ground up and in ready to use sachets work well too.

Hey Cuong, that layer of oil at the very top of the broth is crucial for flavor for ALL soup broths. It's actually the defining point of a well-made broth and though you may not prefer it, throwing it away all together takes away the flavor from the rest of the pot.
Yep. I hate the modern cooks whom skim all the fat off. It's flavor, people! If it's too much oil, then skim some off, but there should be some oil in the broth!

sorry but i want to clarify... Vietnamese using the "Latin" alphabet was not due to the French. it was due to Portuguese missionaries back in the 1500s using the Latin alphabet to transcribe characters to make it easier for them to learn the vietnamese language. the rest is history.
Vietnamese ascribe too much to the French and there's misinformation everywhere. Especially that pho is French. Pho is nothing remotely French (I mean, look around - any French recipe even resemble pho?). It's closer to Chinese influenced than anything else.
