I was almost 2 years old at the end of the Vietnam war when my family and I escaped the communists attacking from the North and were accepted as refugees into the United States. My dad was left behind and put into prison camp for a while, until 5 years later he was able to escape and join us here. I became a citizen when I was 16 years old, just in time to start voting. Philip, it is because of patriots like you who tried to defend freedom in the world, that I have had this opportunity. I studied hard, earning my bachelor's and then my MBA. I worked hard, saving properly and investing wisely. I am living the American dream - we have a house, smart investments, my wife and I have two lovely children, we eat well and we live, laugh, and love well. Philip, you don't know me, but your effort and sacrifice in Vietnam saved me. Some of the soldiers never made it back home; they gave the ultimate sacrifice. Everyday, I hope that as they are looking down on me from heaven that they know what blessing they have given me for this chance at a better life. "If you can't get this, don't make bo kho." 😂😂😂 This is my favorite so far because it simplifies something I probably wouldn't try without your guidance, and also uses an inexpensive cut so I can feed the teen boy for days without draining the bank!

Lucky for me, my sister and I who love Asian foods regardless of the country live very close (almost walking distance if not for the interstate in the way) to a Thai/Vietnamese-run Asian market owned by this really nice old lady in Springfield, MO and have those spice/marrow/cornstarch packs in bulk. :) We happen in fact to live in a town boasting one of the largest Asian communities in the US and one in three of the roughly 400,000 people in the area were born in Asia or have parents who were. Plus there are tons of markets and bakeries as well as legit authentic restaurants only the immigrants eat at while others the Anglos love but foreigners hate. Not to mention a large Buddhist temple, two mosques, a Korean "Moonie" church, a both Chinese Baptist and Chinese Nestorian church, a Hindu temple (Hare Krishna no less), a Sikh gurudwara, and several synagogues for Yemeni and Israeli Jews in addition to those for Americans of those religions plus services at different times in other languages at the Christian churches for those who come from various lands. Plus my family moved there from Dallas, Texas originally where it's the exact same way around the Overland Park and Cleburne areas with lots of people from all over. So Asian food and culture is nothing new to me and a part of my daily life in spite of not being Asian (Norwegian mom and Cherokee father in fact, so "other" type of "Indian", lol) but appreciating it all the same.

Great job on the videos. I've made the cheesecake and it turned out great! I am gathering the ingredients for the Pho Ga this weekend. My friend from work brought me some of the rice noodles as I couldn't find them. But all of your videos are educational and entertaining so I like them all. Just keep lubing :-) .I just need to find an asian store so I can find the spice packets you use.
I love all the videos but I think this one is my favorite so far! I don't need a spice packet because I have a great Asian market near me so give it to someone less fortunate. Question do you ever thicken the sauce in the end or is it supposed to be thin ? I have never used lemon grass do you eat it or toss it when the food is done?
Ellen, some prefer it thickened and use a cornstarch slurry. I prefer the purity without, as the tendon also adds a lending hand in the consistency. It also makes sopping up with bread easier.

Hi Harmony, I don't like ketchup in general. I don't use them on french fries, I don't put it on my hot dog. That's why I don't like it, but I absolutely use it in the bo kho. Tomato paste, even raw tomatoes, will suffice as a substitute, but there is something about the sweet, deeper flavor of the ketchup that makes it both easy to use and perfect for bo kho. Good luck with yours!!
To be honest, and as good as this looks, it isn't really "cooking". You use lots of preproduced ingredients, like spice mixes, ketchup and broth in a can. I agree it's easy that way and quick to do on a busy day - but not yet cuisine.
Rude...He made a short cut way for Americans or others to learn to cook it easily. Still taste very similar to traditional way if blindfolded. Vietnamese food is amazing & full of flavor. Im sure all the food you eat is straight from mother earth.

You should definitely use a damp towel under your cutting board so it doesn’t slide. Safety first!

And you can leave the lemongrass alone, don't eat it. It's too tough, we use it for the flavor.
Lemongrass in big chunks like that shouldn't be eaten as it's used for the flavor. Ground up lemongrass, you can eat. :)
