I recently soaked, pre cooked and completely dried the noodles before using them, and when the time came to serve the pho I just nestled them into the bowl and gave them the broth bath they were asking for. They rehydrated immediately and were nice and springy. No hassle. Perfect bounce ❤️

For the dry thin noodle, even 10 sec is too long. Literally dip and swirl. As soon as the noodles all make contact with the water for 2-3 sec just take it out family. Enjoy everyone!
I knew as soon as he said “I have a question for you Lao people” it was going to be the sugar question 😂 so lemme chip in from my point of view as a Lao American in the mid-west. The pho I grew up on was more of a beef/bone broth soup (sometimes deer when it was deer season) and it would have the bare minimum (MSG, charred onion, salt, and star anise) so we would spruce it up with sriracha, sugar, hoisin, bean sprout, green onion/onion/cilantro, a ton of chilies and a bunch more stuff to build on that beefy broth. Cause us Lao people, our food gotta hit us in the face with all types of flavors or it’s not good. So when you see a Lao person add sugar to their pho it’s no disrespect to the chef, it’s just our twist and take on eating pho.

So we have alot of Indians now who are known as Indo-Fijians, hence our second native language is Hindi.
As a Vietnamese, I used to add a bunch of hoisin and sriracha right into the Pho when I was little. Now, I learn to appreciate it as is and use those condiments as a dipping sauce instead. What the Laos want, its not Pho thats been abused with Hoisin but BBH. Sweet, Tangy, and Spicy, arguably even better than Pho.

Hi Quang, I’m from Australia. We have the Banh Pho factory here that makes fresh banh pho everyday which gets delivered to our local Asian grocery to buy. Is freshly made Banh Pho Tuoi available there?
My mom puts the aromatics in a mesh bag instead of pouring it all into the broth, and then draining it. So the easier way is to just buy a small mesh bag and just let it sit in the broth.
I'm Lao and we put sugar in it because we make pho a little different than what the traditional Vietnamese pho. It's also we put sugar to balance the spice :)

By the way there is a HUGE population of Vietnamese in here southern Laos and has been there since French colonial time. They are so intergrate into Laotians society. Some regions and probably over time have their twist on pho so it is not strange how they like it to taste.

I can’t find beef ribs anywhere unless it’s short ribs and they don’t sell them in racks like this. What other bones would you suggest besides the beef shanks?

Yes, chicken pho is very popular and doesn't take as long to cook. Different people use different aromatics for the chicken vs the beef, while others use the same. Check out SoSimYum, she has amazing details on Viet dishes...I cannot remember if she made chicken pho, though. Try Van's Kitchen, which has an older video that is probably the most authentic chicken recipe (she uses lime leaves, which a lot of people forego now). There are other channels, but I forget the names right now.
Bro we don’t put rock sugar in the broth before hand, but some Lao people like to add sugar to taste. We eat chili peppers with shrimp paste on the side too. SUPER PUMP THE CHILIES!

in vietnam we dont usually use ribs, you can use oxtail, tubular beefbone for the best broth

It might not be sugar, but MSG. A lot of the Isaan/Lao noodle places where I live have it as a condiment on the table along with the normal things.
