2:14 Red vs. green cabbage-which is healthier?
Today we're going to talk about red and green cabbage differences. I'm also going to tell you which type of cabbage is healthier.
Red cabbage vs. Green cabbage:
Benefits of red cabbage:
• 10 times more vitamin A than green cabbage
• More Vitamin C than green cabbage (sauerkraut has about 10 times more vitamin C than unfermented cabbage)
• 2 times more iron than green cabbage
• Anthocyanins (ant-cancer, anti-inflammatory, reduces free radical damage)
Benefits of green cabbage:
• More vitamin A than red cabbage
Both green cabbage and red cabbage contain:
• Phytonutrients
• Sinigrin-sulfur (anti-cancer)
• Polyphenols
• Flavonoids
• DIM
One of the biggest health benefits of cabbage (both types) is for:
• Ulcers and gastritis (juice of the cabbage, sauerkraut, coleslaw)
More cabbage benefits:
• Cabbage is good for the blood sugars
• Cabbage can help balance estrogen dominance
Which type of cabbage is healthier?
Both red cabbage and green cabbage are healthy. Red cabbage has a little bit more nutrients. I actually recommend consuming both types of cabbage.

Try consuming both red cabbage and green cabbage to get a ton of health benefits. Thanks for watching!
Cabbage is SOOO underrated.
Since keto, I enjoy some every other day.
Sometimes sauerkraut (fermented), sometimes slaw, sometimes steamed whole leaves as keto wraps, sometimes Asian stir fry; I’m still discovering ways to use this healthy cruciferous vegetable 🥬
How much? I don’t count the small amount of carbs for the best keto vegetables. I let it provide some balance to keto macros and eat until satisfied. 😇
I mix cabbage, Broc, celery, and onion into a medley, I primarily get green cabbage, but do drift into red cabbage and red onions.
1 cup of oats if I'm not feeling veggies
@Vasanthi
Thinking so!
@David Chaplin
Eating increases blood sugar and is anti-keto!!!
It's ok to eat oats if you're breaking ketosis anywaaaaay
It took keto, to get a clue?
I grow 36 heads of cabbage a year and ferment 10 gallons of saurkraut a year. I prefer to form my own retinol.
Can I just ask you, do you have a garden, & can you bury it in big vessels in the ground.? I've seen that done, & can't remember where. I just make a big jar every other week. Take care cruciferousvegetable. ❤🙂🐶
@@maxibake9323 I grow a quarter acre garden every year. My method is simple. I use food grade 5 gallon buckets with gasketed lids and wine airlocks. For every 5 lbs of shredded cabbage from the food processor, we add 3 tablespoons of sea salt, mix by hand and punch it down layer after layer into the bottom of the bucket. Cabbage juice creates the brine. We then use a dinner plate which fits the bucket to push down the cabbage below the surface of the brine and we put a weight on top of that. We put the lid on with airlock and let it age for 5 to 5.5 weeks at room temp.
Burying crocks in the ground lowers the temperature which will result in a different product with a beer like flavor. Kimchi is made this way. I haven't tried that yet but I love that stuff as much as saurkraut.
@@cruciferousvegetable Ahh I see. I was muddled up with my Saeurkraut & Kimchi. I make both, love both, but on a much smaller scale than you. I use 1kg cabbages, ( they don't seem to get any bigger here in the UK.) And ferment them in Kilner jars with a bubbler on top, one at a time. Take care, keep on fermenting, & Happy Sunday to you & yours. ❤🙂🐶
@@maxibake9323 Thanks for the well wishes. Good luck on your fermenting. I love exchanging this knowledge so we can save work and get better results. It's fun stuff.
Maxi Bake is it important to weigh it down and with what? I’ve never made it and I’m thinking of making it for the first time!
Once when I was a wee child I got caught in the veggie bin after bedtime eating raw cabbage! At the time I got scolded, but now my mom kicks herself for that! She said “what was I thinking?” She said actually it was so cute! Little girl in the dark kitchen eating raw cabbage right out of the refrigerator! I still love it more than ever!!
So cute! I would have clicked a tonne of pictures ❤️
@@Cheiko18 I see that little girl in my mind 58 years later!! Weird
❤❤❤❤❤😂
Thank you. I love these short and sweet info clarifying episodes 👍🏼
I ferment my own red and green cabbages which I grow in my garden organically. So for me I love them both. I also do cole slaw with a tiny bit of my homegrown carrots as they’re higher in carbs. Yummy
never wanted a garden until now :(
Ok no need to show off and beca jaagoff.
Isn’t fermenting white cabbage more easier than red cabbage?
Seems like white cabbage has more water content.
I love your videos. Dr. Berg! They are always interesting and informative.
In the area I grew up red cabbage salad is a local specialty. I loved it! But I haven't eaten it for years and I need to find how to prepare it. Thanks for reminding me 🙂
Short and informative, great video!
Dr. Eric berg. I made red cabbage juice today, and was looking for a video, and just like that! There you are 😍😍😍😍 thank you!
Love my cabbage!!!! In Hawaii. We have plate lunches and most of the time it was used as a garnish under a protein or they serve a side of Kim chee. Because there was teriyaki sauce on the cabbage, it made it more delicious. It’s nice to know their health benefits.
I eat all cabbages, works for me.
Hi dr., thank you for your videos, they certainly improved my life! I would like to know what you have to say about spices, hope you read this and are able to make a video, thank you in advance!
Another great description
Thanks so much for explaining.
Great video! I just shared you with two more of my friends. Dr Berg you just get better with time.♥️
Thanks Doc. Berg ,my go-to food Guru.
Very nice information you provided thumsup to you
YOU JUST ANSWER ALL MY QUESTIONS.. THANK YOU!
I love eggroll in a bowl. It only takes 30 minutes to make a very filling lunch with the cabbage blend, a lean ground meat, sesame oil, and rice vinegar.
Is there a recipe?
Sounds delish! Thanks for the lunch idea!
Good morning Sunday all! Thank you, Dr Berg, loves me some cabbage and homemade sauerkraut :-)
A good cabbage soup! Smells like the earth, smells like garden!! Smells like the rain 💪😍
Good evening dr Thank you so much
I love both and like to mix green and red for a quick salad. I have a very sensitive stomach and it helps me feel better.
Cooked red cabbage in a little oil with cinnamon is super tasty!
Oooh...never tried that. Will cook some over the weekend :)
Will try, g8 idea
@Cesare Borgia everybody's taste different. l love it, and its not a matter of taste or opinion in that it will makes it even more nutritious :) win win!
Cinnamon? Hmmmm
I never heard of cinnamon with cabbage. I'll have to try a little. Do you put anything else with it?
Thank you Dr. You are the BEST ONE!!
Thanks Dr sahib
Ferment them, both are beautiful! Add mustard seeds, juniper berries, etc. I add spinach and seaweed. Pepper and Tumeric too. It's anti kryptonite!
Can you write down the recipe please. Thank you, I would like to make it myself.
YES! Finally a very informative video 🙏
I have some red cabbage sauerkraut with lemon and ginger 😍
I'm coming over! Lol
I make my sauerkraut 30/70 red/green and also add grated turmeric, ginger and garlic. All organic as well. Then I use Celtic sea salt to finalize it. I weigh my mixture and multiply the grams by .02 which I find is the perfect amount of salt to start the fermentation process. This wonderful sauerkraut has a definite bite to it and for me it has really helped heal my gut!
شكرا💐💐
Thanks doctor berg 🙏
Dr Berg, can you explain what nutrients denature or is lost during boiling, frying, baking, and what not? Especially.on veggies because I hardly eat raw veggies
Great video Doctor , can you do a video on fermented kimchi benefits please thank you
Thanks Dr Berg for your great videos. I am your loyal viewer for many years. Sauerkraut is my friendly everyday food and cabbage also. I have a Q:Is sauerkraut heal stomach H-pylori? Thanks for your response in advance.
Red kidney beans and oysters decimate every other foods in the world 20X over for nutrients!
I love this man he is so informational and
AND…let’s not forget CUTE!😬
Great video! Can you do a video on radicchio. It gets confused for cabbage.
Thanks
Hi Dr. Berg, thank you for sharing all that you do. I find your content extremely valuable.
I wanted to ask you if you would consider commenting on the viral video about a mother helping to cure her son’s acne with mega doses of vitamin b5. I’ve heard you mention this before but it sounded like this was not a remedy you were in favor of. I think it would be helpful if you would expand on your position on taking high doses of pantothenic acid for the purpose of treating acne. Many people are trying this now due to this viral video posted. I value your insight on this matter and I think others world would too.
Amazing info. Thank you Dr Berg ❤️😀👍
Glad you found it so helpful!
Great info, thanks.
I love purple cabbage but I'm afraid it contains lectins and oxalate, to both of which I'm very sensitive. Please does anyone know anything about that (whether it really contains oxalate)?
Thanks Dr .Berg for these information !
Thank you for this good information
You're welcome! Glad you found it useful.
Red cabbage tastes better imo
As i said in your prior videos about probiotics and prebiotics FERMENTED CABBAGE is my one of my choices as well as CABBAGE JUICE from my juicer so the same advice here as well
Love your videos❤So much great information! Thank you!
You are Amazing, thankou so much!!!
You're very welcome!
Thank You Sir.
Absolutely!
I love boiled green cabbage with nothing added. Sometimes I just get really strong cravings for it.
Great thing to have a craving for!🌸
amazing vegetables more useful than traffic lights!!
LOL
Thank you
THANK YOU!!!!!!
Most welcome!
I love savoy cabbage. I keep the water and have it as a hot drink with black pepper. Not everyone's choice but I love it
And I put the cabbage leafs on aching joints
How much sauerkraut would you need to eat to get the 750Mg?
Also, could you do a video on the main types of cinnamon, Cassia and Ceylon, exploring the difference between them, and letting us know which one's better/healthier?
Thank you so greatly much for all you do and all the information and knowledge you dispense, creating a healthier world and mankind.
Edited: I also really love how clear, concise, and to the point all of your videos are.
2 years worth?
We eat Raw Ssuerkraut on our salads. WE LOVE IT!
An excellent tasty vegetable with long storage life. Good by itself shredded and refreshing after eating greasy or salty. Red cabbages in my experience have been milder tasting and also stain plastic tools. I prefer green which is also cheaper. Is more C vitamin made during fermentation? I thought it could only get lost over time. Shredded cabbage, through contact with air, loses all its sulphur flavor quickly.
Red cabbage is a great laxative. I eat it whenever I've gone several days without pooping. Clears out my system within an hour or so.
I love cabbage, but I usually lacto ferment beets. I suspect they are even more nutritious although they don't have the sulphur compounds.
A excellent video on red cabbage and green cabbage I know people that was sick they started to eat red cabbage everyday three times a day with salads today they're healthy and they see a doctor once a year for check-up so try it you like it 😀
I just made some dumplings for Chinese New Year wrapped in steamed cabbage instead of pastry. Delish!
Love cabbage yummm. Didn't know the differences 👌
So cool to listen to this as we’re having Dr. Bergs cole slaw with keto burgers today! By the way, we Live on your cole slaw and have for over a year...thanks so much...to Karen also since you probably created that recipe together🤷♀️
Good to know this! Love cabbage. Thanks, Dr Berg 🙏🏻💕
Glad to hear that! You're very welcome!
Dr Berg is getting leaner and leaner from video to video. His transformation seems phenomenal. I figure he must have below 2% body fat soon.
2:21 The Green one has a more (K too) not K2 for anybody wondering.
Eating both (Red and Green )will help a little bit with conversion of vitamin K to K2 within the body. Although that conversion is fairly minimal.
Wat help the conversion of vitamin k more in the body?
@@tazboy1934 fibres bot soluble and insoluble and microbes of the good kind, even then K2 is best supplemented or from eggs meats etc.
Thanks Doctor for this video 📹 👍
Awesome! Glad it could help.
Ever since I was a little kid, I liked to slice off some cabbage and snack on it. Now I know how good it was for me!
Homemade Sauerkraut is just an absolute must. It is super easy, super inexpensive, and has tremendous health benefits. Everyone should eat at least a small cup of it every other day at least.
The same goes for homemade hummus and broccoli sprouts, but that is a separate matter.
Good video
Благодаря! Късмет!
Please add a relevant playlist to each of your videos in a pinned comment, to allow us to watch a series of 10 to 20 videos from you on the topic.
You can cook cabbage in bacon fat too. Very tasty.
I actually did that last week!
Steam cabbage with fresh garlic, red onions, little salt/pepper, extra virgin olive oil....sooooo good!
@Terry White If I'm following a keto diet then piggy's will need to be harmed unfortunately. I'm an omnivore therefore eat both meat and veg. Also, bacon is not something I eat regularly, maybe once or twice a year when the mood hits me.
@commenter Evidence can be found in medical textbooks. Go visit this place called a library. Meat contains folates. Folate is one of the B-vitamins and is needed to make red and white blood cells. Do you think Dr Berg would advise people to eat meat if he didn't think it was for your wellbeing?
@commenter Also, we have canine teeth. Herbivores do not have that set of teeth in their mouths because it's not part of their dietary requirement. Being vegan is a lifestyle choice, it's not natural, but it's your choice to be that. So allow other people to eat meat if it's their choice. Vegans are also not faultless. What do you think happens to wild animals and plants when land is cleared to plant crops to pland fruit and veg and pulses etc?
Sure wish you would put the serving sizes in your videos - such as is it a half a cup, a bowl, a tablespoon etc
You the man
Very good

Is kimchi considered a good fermented cabbage? Thank you
What should my diet be like a month before a surgery? Thx so much to any who answer.
Thanks‼️🙏🏾💯💯
You're welcome!
Lots of fiber too
God be with you Dr Berg.
So good to know can help gastritis too!
Thanks.
What is gastritis
I just started juicing it for my gastritis. I’m not kidding it work!!
I have had a severe case for just over three years and have tried everything under the sun with no luck. I have high hopes with cabbage. Just utube it and you’ll get lots of info👍🏻
@@kathypalmer6445Did you use green or purple/red cabbage ?
Love sauerkraut but I have a sensitivity to histamine. I now have a craving for cabbage though :)
Super 👍
our beloved doctor
Eat both together!! Makes some lovely saurkraut!!
Good
Buttery roasted cabbage is probably the best flavor in the world. 🙏🏽🤑
Roasted cabbage?????????????????????
Would like to see a video about making herbal teas. Right now I use ginger, clove and lemon.
chamomile at late evening like 2-3 hours before sleep is great to improve sleep quality!
I don’t like lists of most healthy vegetables and comparisons between them because it distracts us from one of the most important rules; variety. Eat as many different species possible (and mix them with mushrooms).
Exactly what I do !
Eww, I hate mushrooms. I hate the texture...yet I have no problem with the texture of chicken livers. Am I strange?
K Fitz chicken livers are excellent, very nutritious.
And I love theses videos - been sick for a long time so I need all the help I can get with his knowledge.. thanks Dr. Berg!!!!! 😊
In my country we eat a lot of curtido (cabbage, onion, vinegar, salt and oregano) 💙🇸🇻💙
Add garlic!
You mean purple cabbage and green cabbage? Growing up, I never ate anything my mom did not eat, like cabbage. Once I started learning about nutrition, I learned to cook cabbage my style and now I love it. I need to pick up some tomorrow. I like both purple and green, but tend toward green
I have a few questions :
1) When we cook, which varries from place to place, e.g in countries like India it is fully cooked till it is soft unlike in western countries where it usually use it raw or ferment it (sour cabbage). My question is does the cooking process change the nutrient in them. I guess cooking it like in India it would make it more easily digestible. My quesis does the nutrient value of the cabbage (or any other vegetable for that matter) changes when and how we cook (Note: I understand that other ingredients like spices, oil etc would add value to the dish but the cooked cabbage from the dish would it have the same nutrient value per 100gms).
2) Almost everytime I see your video I get newer information about a specific nutrient. Like for Vitamins there is previtamin and converted vitamin (carotene and retanol, anthocyanins and other antioxidants etc). Is there any book or video with detail understanding of all the nutrient (for a newbie who wants to understand). This would help me understand your video.
Else I have to go search to know what the new things are.
3) Also a detailed video on different types of harmones and their effect and the glands that produce them.
4) Lastly is there a way to communicate with you directly (old school) like emails.
yeah, all that you asked is easily available, google them, i do all the time
Mmmmyummy! I make and drink cabbage ferment...amazing stuff! Mahalo for making videos for us! 🤗❤️🙏🌺
Eric I want to know about the estrogen promoting compounds found in cruciferous vegetables as well as other foods??
I am on eliquis dr. Said ok to eat greens,
at the very end....Dr Berg, di you say (green cabbage) "has more K2" or......"has more K, too". Please clarify!
Can you please do one explaining how to heal and prevent mouth ulcers? I get them all the time to the point that sometimes it’s hard to talk. Thanks so much!

Thank you for educating us. Presently, acid reflux is my major complaint. Painful bloating which is mistaken as a heart attack. Because of fight, I visited accident an emergency several times, ECG results are all good.
Drink baking soda with water or apple cider vinegar with the mother don't take it straight it can damage your esophagus!
Dr. Berg what is your opinion on the assertion that those following a strict carnivore diet don't need as much of the RDAs of specific vitamins that people who eat a mixed diet do? This has been posited by both Dr. Paul Saladino and Dr. Shawn Baker - two of the foremost advocates of a carnivore diet. The reasoning goes that because, on a mixed diet, vitamin intake has to compete with carbohydrates for the various transport mechanisms that allow for their absorption, the RDAs for those who eat large amounts of carbohydrates has to be as high as the conventional RDAs recommend. Both Dr. Saladino and Dr. Baker who both have been practicing the carnivore diet themselves for a long time, and who counsel people doing a carnivore diet, have noticed that neither they nor any of the people they are coaching are developing scurvy, despite being on the carnivore diet for months and years. Scurvy is something that you would expect on a carnivore diet, which only has a minuscule amount of vitamin C in muscle meat, if the RDAs were truly applicable to everyone. Yet scurvy is not running rampant among the carnivore population. What is your view on this?
@Andrew Jackson Yes. I gather that many people would be interested to hear Dr. Berg's opinion on this, given that the carnivore diet is rising in popularity, and because Dr. Berg is a pretty vocal proponent of getting a lot of your micronutrients from vegetables.
