    Today we're going to talk about red and green cabbage differences. I'm also going to tell you which type of cabbage is healthier.
    Red cabbage vs. Green cabbage:
    Benefits of red cabbage:
    • 10 times more vitamin A than green cabbage
    • More Vitamin C than green cabbage (sauerkraut has about 10 times more vitamin C than unfermented cabbage)
    • 2 times more iron than green cabbage
    • Anthocyanins (ant-cancer, anti-inflammatory, reduces free radical damage)
    Benefits of green cabbage:
    • More vitamin A than red cabbage
    Both green cabbage and red cabbage contain:
    • Phytonutrients
    • Sinigrin-sulfur (anti-cancer)
    • Polyphenols

      Sometimes sauerkraut (fermented), sometimes slaw, sometimes steamed whole leaves as keto wraps, sometimes Asian stir fry; I’m still discovering ways to use this healthy cruciferous vegetable 🥬
      How much? I don’t count the small amount of carbs for the best keto vegetables. I let it provide some balance to keto macros and eat until satisfied. 😇

      I mix cabbage, Broc, celery, and onion into a medley, I primarily get green cabbage, but do drift into red cabbage and red onions.
      1 cup of oats if I'm not feeling veggies

    I grow 36 heads of cabbage a year and ferment 10 gallons of saurkraut a year. I prefer to form my own retinol.

      Can I just ask you, do you have a garden, & can you bury it in big vessels in the ground.? I've seen that done, & can't remember where. I just make a big jar every other week. Take care cruciferousvegetable. ❤🙂🐶

      @@maxibake9323 I grow a quarter acre garden every year. My method is simple. I use food grade 5 gallon buckets with gasketed lids and wine airlocks. For every 5 lbs of shredded cabbage from the food processor, we add 3 tablespoons of sea salt, mix by hand and punch it down layer after layer into the bottom of the bucket. Cabbage juice creates the brine. We then use a dinner plate which fits the bucket to push down the cabbage below the surface of the brine and we put a weight on top of that. We put the lid on with airlock and let it age for 5 to 5.5 weeks at room temp.
      Burying crocks in the ground lowers the temperature which will result in a different product with a beer like flavor. Kimchi is made this way. I haven't tried that yet but I love that stuff as much as saurkraut.

      @@cruciferousvegetable Ahh I see. I was muddled up with my Saeurkraut & Kimchi. I make both, love both, but on a much smaller scale than you. I use 1kg cabbages, ( they don't seem to get any bigger here in the UK.) And ferment them in Kilner jars with a bubbler on top, one at a time.     Once when I was a wee child I got caught in the veggie bin after bedtime eating raw cabbage! At the time I got scolded, but now my mom kicks herself for that! She said “what was I thinking?” She said actually it was so cute! Little girl in the dark kitchen eating raw cabbage right out of the refrigerator! I still love it more than ever!!

    I ferment my own red and green cabbages which I grow in my garden organically. So for me I love them both. I also do cole slaw with a tiny bit of my homegrown carrots as they’re higher in carbs. Yummy

    Love my cabbage!!!! In Hawaii. We have plate lunches and most of the time it was used as a garnish under a protein or they serve a side of Kim chee. Because there was teriyaki sauce on the cabbage, it made it more delicious. It’s nice to know their health benefits.

    I love eggroll in a bowl. It only takes 30 minutes to make a very filling lunch with the cabbage blend, a lean ground meat, sesame oil, and rice vinegar.

    Ferment them, both are beautiful! Add mustard seeds, juniper berries, etc. I add spinach and seaweed. Pepper and Tumeric too. It's anti kryptonite!

    I make my sauerkraut 30/70 red/green and also add grated turmeric, ginger and garlic. All organic as well. Then I use Celtic sea salt to finalize it. I weigh my mixture and multiply the grams by .02 which I find is the perfect amount of salt to start the fermentation process. This wonderful sauerkraut has a definite bite to it and for me it has really helped heal my gut!

    Hi Dr. Berg, thank you for sharing all that you do. I find your content extremely valuable.
    I wanted to ask you if you would consider commenting on the viral video about a mother helping to cure her son’s acne with mega doses of vitamin b5. I’ve heard you mention this before but it sounded like this was not a remedy you were in favor of. I think it would be helpful if you would expand on your position on taking high doses of pantothenic acid for the purpose of treating acne. Many people are trying this now due to this viral video posted. I value your insight on this matter and I think others world would too.

    I love purple cabbage but I'm afraid it contains lectins and oxalate, to both of which I'm very sensitive. Please does anyone know anything about that (whether it really contains oxalate)?

    An excellent tasty vegetable with long storage life. Good by itself shredded and refreshing after eating greasy or salty. Red cabbages in my experience have been milder tasting and also stain plastic tools. I prefer green which is also cheaper. Is more C vitamin made during fermentation? I thought it could only get lost over time. Shredded cabbage, through contact with air, loses all its sulphur flavor quickly.

    Red cabbage is a great laxative. I eat it whenever I've gone several days without pooping. Clears out my system within an hour or so.

    I love cabbage, but I usually lacto ferment beets. I suspect they are even more nutritious although they don't have the sulphur compounds.

    2:21 The Green one has a more (K too) not K2 for anybody wondering.
    Eating both (Red and Green )will help a little bit with conversion of vitamin K to K2 within the body. Although that conversion is fairly minimal.

    Homemade Sauerkraut is just an absolute must. It is super easy, super inexpensive, and has tremendous health benefits. Everyone should eat at least a small cup of it every other day at least.
    The same goes for homemade hummus and broccoli sprouts, but that is a separate matter.

      @Terry White If I'm following a keto diet then piggy's will need to be harmed unfortunately. I'm an omnivore therefore eat both meat and veg.Also, bacon is not something I eat regularly, maybe once or twice a year when the mood hits me.

      @commenter Evidence can be found in medical textbooks. Go visit this place called a library. Meat contains folates. Folate is one of the B-vitamins and is needed to make red and white blood cells. Do you think Dr Berg would advise people to eat meat if he didn't think it was for your wellbeing?

      @commenter Also, we have canine teeth. Herbivores do not have that set of teeth in their mouths because it's not part of their dietary requirement. Being vegan is a lifestyle choice, it's not natural, but it's your choice to be that. So allow other people to eat meat if it's their choice. Vegans are also not faultless. What do you think happens to wild animals and plants when land is cleared to plant crops to pland fruit and veg and pulses etc?

      I just started juicing it for my gastritis. I’m not kidding it work!!
      I have had a severe case for just over three years and have tried everything under the sun with no luck. I have high hopes with cabbage. Just utube it and you’ll get lots of info👍🏻

      chamomile at late evening like 2-3 hours before sleep is great to improve sleep quality!

    I don’t like lists of most healthy vegetables and comparisons between them because it distracts us from one of the most important rules; variety. Eat as many different species possible (and mix them with mushrooms).

      Eww, I hate mushrooms. I hate the texture...yet I have no problem with the texture of chicken livers. Am I strange?

    You mean purple cabbage and green cabbage? Growing up, I never ate anything my mom did not eat, like cabbage. Once I started learning about nutrition, I learned to cook cabbage my style and now I love it. I need to pick up some tomorrow. I like both purple and green, but tend toward green

    I have a few questions :
    1) When we cook, which varries from place to place, e.g in countries like India it is fully cooked till it is soft unlike in western countries where it usually use it raw or ferment it (sour cabbage). My question is does the cooking process change the nutrient in them. I guess cooking it like in India it would make it more easily digestible. My quesis does the nutrient value of the cabbage (or any other vegetable for that matter) changes when and how we cook (Note: I understand that other ingredients like spices, oil etc would add value to the dish but the cooked cabbage from the dish would it have the same nutrient value per 100gms).
    2) Almost everytime I see your video I get newer information about a specific nutrient. Like for Vitamins there is previtamin and converted vitamin (carotene and retanol, anthocyanins and other antioxidants etc). Is there any book or video with detail understanding of all the nutrient (for a newbie who wants to understand). This would help me understand your video.
    Else I have to go search to know what the new things are.
    3) Also a detailed video on different types of harmones and their effect and the glands that produce them.
    4) Lastly is there a way to communicate with you directly (old school) like emails.

    Thank you for educating us. Presently, acid reflux is my major complaint. Painful bloating which is mistaken as a heart attack. Because of fight, I visited accident an emergency several times, ECG results are all good.

      Drink baking soda with water or apple cider vinegar with the mother don't take it straight it can damage your esophagus!

    Dr. Berg what is your opinion on the assertion that those following a strict carnivore diet don't need as much of the RDAs of specific vitamins that people who eat a mixed diet do? This has been posited by both Dr. Paul Saladino and Dr. Shawn Baker - two of the foremost advocates of a carnivore diet. The reasoning goes that because, on a mixed diet, vitamin intake has to compete with carbohydrates for the various transport mechanisms that allow for their absorption, the RDAs for those who eat large amounts of carbohydrates has to be as high as the conventional RDAs recommend. Both Dr. Saladino and Dr. Baker who both have been practicing the carnivore diet themselves for a long time, and who counsel people doing a carnivore diet, have noticed that neither they nor any of the people they are coaching are developing scurvy, despite being on the carnivore diet for months and years. Scurvy is something that you would expect on a carnivore diet, which only has a minuscule amount of vitamin C in muscle meat, if the RDAs were truly applicable to everyone. Yet scurvy is not running rampant among the carnivore population. What is your view on this?

      ​@Andrew Jackson Yes. I gather that many people would be interested to hear Dr. Berg's opinion on this, given that the carnivore diet is rising in popularity, and because Dr. Berg is a pretty vocal proponent of getting a lot of your micronutrients from vegetables.
