    For those who likes chiffon cake and has no tube pan/angel food pan, this is might be the recipe for you. It has a soft and spongy texture like chiffon cake. Wish you success for making this cake.
    Vanilla Sponge Cake
    4 Large Egg Whites (120 grams)
    1 teaspoon Vinegar
    120 grams Fine Sugar
    4 Large Egg Yolks (72 grams)
    120 grams Plain Flour
    1/2 teaspoon Salt
    30 grams Oil (30 ml.)
    40 grams Milk (40 ml.)
    1/2 Teaspoon Vanilla Essence
    Pan Size: 18 cm
    Oven Temperature: 150°C for 35 minutes, 170°C for 3 minutes

      Do not open the oven when it is not done yet it will deflate your cake mine did not deflate I opened my oven only when the cake was cooked i added a bit more vanilla it is fluffy and tasty

    I have made this cake multiple times and everytime the results were amazing!! Everyone especially praised the softness of the cake and its lightness. I won't be needing another recipe ever again. I even made a marble cake with these measurements dividing the batter into two and adding cocoa powder to one half. Still amazing as ever!!! ❤️

      @@isapardue508 Its not butter, its oil in the recipe. You need one third a cup of oil. And for the chocolate part you will need three tablespoons of cocoa powder. You can add the cocoa according to how chocolaty you want your mix. But three tablespoons are enough.

    I have been baking for such a long time and nobody ever mention to me that the oven fan shouldn’t be turned on, and here you come highlighted in one of your tutorial video, wow! The cake really turns out to be beautiful! The top part of the cake didn’t shrink much and the cake maintain its shape after it cooled down. You are genius, man!
    (Need to mention here, I follow exactly the steps and measurements)

    I've probably already commented this, but will say it again: thank you so SO much for this recipe! I've been making all my cakes with it and I don't even want to try out other recipes, because whoever tastes it says that they have never thought sponge cake can be this fluffy and just melt in your mouth. after so many times making it I found it easier and better to mix all the ingredients (except meringue) first in one bowl until smooth and then mix it with meringue. this way you mix meringue a lot less time therefore you don't deflate it at all! I'm living for this sponge cake, thank you again♡

      @@gudupapa45I think it's because your cake tin has non-stick coating. This type of cake needs to stick to the sides to rise properly just like chiffon cake which is made in aluminium tin for that reason. I usually use my old cheap cake tin, it's thin and although it says non-stick everything sticks to it like hell😆 which works for my benefit here. Or you can try another method. I've bought two 18cm non-stick tins (totally forgot that I should pick aluminium ones) and baked the same amount of batter as in this recipe, but divided it between two tins (baked at the same time, for 60 min at 150°C) And yes sides didn't stick as they should but I got really even beautifully risen cakes with flat top (the top eventually collapse just a little, you can just trim it)

      Hey, i tried mixing the eggs, milk,oil,vanilla essence then the flour separate from the sugar and egg whites, but it tightned up like a ball of glue and wouldnt mix with the marange , please help ive tried this cake so many times, even the cooking time and temp wasnt right for my oven.... help :(

    hiiiii ...
    i tried this recipie as my first ever baking project using my brand new electric oven !!!
    for a laymen like me ... who got no idea about anything..made such a superb cake ... the only issue was that it didnt rise much but that was because i didn't beat eggs properly..

    I made this cake today...O.M.GOSH! it was delicious! My family ate it in one...i didn't have any vinegar in the house so i used 1 tsp lime juice instead and i added finely grated lime rind to the egg whites before beating them. Thanks for sharing, this is a recipe for keeps.

    I tried this and made a mistake, I forgot to add sugar in the beginning, added it later after the yolks. Fortunately it turned out to be fluffy and good. Next time will do it without any mistake. Thank you so much for sharing this recipe. This one works guys you can give it a try.

    Notice he mixes stuff in the same direction (clockwise) and never in the opposite direction. I was told that is to ensure the air incorporated by the hand mixer doesn't escape (basically so that the bubbles don't burst inside)

    جربت الوصفه اليوم رائعه بس استبدلت الحليب بزعفران وهيل خليتهم ساعه بشوي ماء عشان تطلع النكهه واستخدمته، طلعت كيكة زعفران لذيذه وتشرب الصوص روعه
    I made the cake today and was so delicious. But I made a change. I infused little water with saffron and cardamom for an hour and then used it instead of the milk. Amazing saffron cake 😋😋 then I covered it with whipped cream, and made a sauce with milk, saffron and condensed milk to pour it over the cake when serving. I turned out amazing

    The sponge is unlike any I’ve made before from bbc, other videos etc. The sponges I made before were always crispy and tasted pretty homemade. This sponge though, wow it’s sooo tasty I can’t believe I ever made it! Honestly it looks and tastes store bought quality and if you looking for that perfect sponge recipe this is definitely it.

    I made this cake today. The recipe was easy to follow. The taste of the cake is good. I put the cake mold in the middle of the oven instead of at the bottom so I needed to add 160C for 15 mins baking time. My family loved it. 🙂

      @@gerardlebg9063 Thanks for giving the amounts in cups. Each cup is 8 ounces in contents or capacity, not weight, for anyone who is in doubt. The pan measurements should be 8" diameter (8 inches across), and you did very well. Greetings from Puerto Rico!

    Excellent recipe I tried it and it came out perfect so soft and spongy. After searching so many recipes .this one is the most perfect one. Thank you for sharing the recipe. And one more thing. I used 1/4 teaspoon of apple cider vinegar and 1/2tsp of baking soda. It was perfect.

      Remove cocoa powder from your chocolate sponge and add vanilla essence. Won't that make it a vanilla sponge?

    This recipe is legit !! In the past I tried 4 youtube sponge cake recipe's, none worked for me . This recipe is by far the best in youtube, from the other recipes i have tried previously on youtube so far . The cake taste good, looks good and the thing is I did small mistakes, but the cake turned out real good . I brushed the cake with hot caramel syrup, so good! I paid close attention , when it came to the folding technique he had.Great cake , now i want to switch flour with rice flour . Let's see how it will come out.

    I tried your receipt this very morning. With a mold of the same size as the video, the cake is just perfect. It is fluffy, tall, and the top is perfectly flat. Great if you want to add some whipped cream all around.
    I just had to bake the cake 10 more minutes. The key is to always check with a small bamboo stick, put it all the way through the middle of the cake to confirm that it is baked.

      @@rajendrakasar8377 I haven't made this particular recipe in cooker. Bu normally when u bake cakes in cooker it should be medium low flame. Keep in mind to remove tha gasket from cooker before baking .

    Best sponge cake recipe! If you have a stand mixer too, what i did was after making the merengue, i did everything he did except i used the stand mixed on the lowest setting. Ive never been good at folding in ingredients because i dont have a gentle hand. The batter came out perfect too! I just used the stir setting for maybe 8-10 seconds only and everything was fully combined already 😇 hopefully this helps other people!!

    This cake was sooooo good at first I had low expectations cause there was no baking powder but it turned out to be sooo good and fluffy and I bet I got half the measurements wrong but it was still perfect thank you ❤️

    I made this quickly this evening. FANTASTIC. A MUST TRY. Many videos from other you tubers claim their cake recipes are soft and fluffy but when you make them the lie detector determined what they said was a lie. This recipe is the best one so far and we have tried many others and not been impressed. Super soft, fluffy, spongy and moist. Forgot we had ran out of oil so i just used 3 table spoons of melted butter instead. Thank you so much a new family fav. We are now subscribed.

    I have used another video to make sponge cake but it all went flat on me even after 3rd attempt. I used your video guide for making the cake ... exactly the same ingredients (I didn’t use vinegar though) and similar method ... I am so proud that my sponge cake has risen and it’s soft and spongy🤗

    Hi Michael thank you so much for giving us inspiration to bake :) i've tried some of your recipe here like vanilla sponge cake ,swiss role, banana bread, bread loaf and even green tea macaron.. they all come out really good specifically the taste except the macaron kinda really tough to make its all about timing... you don't cheat and give the real ingredients and measurements unlike other are liars and lots of editing done when i tried their recipe totally different.. i enjoy watching your videos and become addicted to bake :) ... thank you very much please continue to share and show us more of your excellent skills... i truly appreciate your creations.. best wishes .

    I used your recipe but I made some error step. But I still got amazing cake. I weighed that cake is 472gram. Next time gonna try with correct step.

    Micheal I cant thank you enough ! You made the recipe soo easy to follow! I can finally make a cake that's fluffy! My cakes used to come out so flat and it would shrink and it would be hard around the edges but it came out exactly like yours! Cant thank you enough because I was gonna give up!

    Vanilla Sponge Cake
    Ingredients:
    --------------
    • 4 Large Eggs (48 Grams each)
    • 1 teaspoon white vinegar
    • 120 Grams of white sugar (a little more than 1/2 cup)
    • 120 Grams of white flour (a little more than 1/2 cup)
    • 1/2 teaspoon of salt
    • 30 ml of melted, cooled butter or vegetable oil (about 1/8 cup)
    • 40 ml of room temp. milk (higher milk fat content = better; a little more than 1/8 cup)
    • 1/2 teaspoon vanilla extract
    • **Suggestion: Pour cold milk in melted butter to cool butter and warm milk. Might as well add the vanilla too.
    Prepare:
    ------------
    • Put rack on bottom 1/3 of oven.
    • Preheat oven to 300 F. (150 C). Non-convection mode. Will cook to fast.
    • Divide yolks from egg whites.
    • Pan size: One 18 cm = 7 inch round pan about or spring form pan, about 4 inches tall; or, two 9 inch round (about 2 inches deep) pans. Aluminum is better versus non-stick.
    • Line bottom of pan with parchment. **NOT wax paper. It will burn in the oven and cause smoke and possibly fire.
    **No baking powder or baking soda. The incorporated air in the whipped eggs will suffice for rise of cake.
    Instructions:
    ------------
    • Beat Egg Whites and 1 teaspoon of white vinegar, on high for 1 minute.
    • Mix in sugar and beat on high until stiff peaks form.
    • From this point on, do not use a mixer, but a spatula or wire whisk using gentle mixing. Don't beat your mix to death.
    • Fold in egg yolk until incorporated with mix.
    • Introduce white flour 1/3 at a time, using a sifter.
    • Fold in flour until incorporated. Keep adding flour 1/3 at a time until fully incorporated, making sure to scrape the sides and bottom.
    • Use spatula to scrap bottom and sides and mix a few more times into batter.
    • Pour batter into prepared pan.
    • Run a table/butter knife through batter to remove large pockets of air.
    • Gently shake pan on table a few time to level batter and help bubbles rise out of batter. Lift pan a little and bump on counter using a gentle but firm smack. Rotate pan 1/2 turn and shake and bump again. Perform this process twice more.
    • Place in preheated oven for 35 minutes. (150 C)
    • After 35 minutes, increase oven temp to 350 F. (170 C.) and continue baking for another 3 minutes.
    • Remove from oven and let cool 20 minutes.
    • Using a flexible spatula or knife, carefully scrape sides between cake and pan.
    • Place a cooling rack or plate on top of the pan and flip both rack/plate and cake/pan over so that the cooling rack/plate is now on the bottom and cake/pan is on top and upside down.
    • Give a couple gentle smacks on top of the pan to release cake.
    • Remove pan and then gently peel parchment paper from top.
    Tadaaa! One awesome sponge cake recipe by Michael Lim!
    Let cool in a non-draft area. Use serrated long knife to cut horizontally for making layered cake.
