RECIPE BELOW Ingredients: 2 can lentils, drained 1 onion, sliced 3 thyme sprigs, stems removed 3 garlic cloves, crushed 1 thumb size of ginger (optional) ½ scotch bonnet, chopped 2 spring onions, chopped 1 cup mixed bell peppers, diced 1 can chopped tomato 2 tsp jerk seasoning 1 tbsp all purpose seasoning 1 tsp smoked paprika 1 tsp allspice 1 tsp miso paste 1 ½ cups vegetable/mushroom stock Directions: 1. Heat a large pan over medium heat. Add the sliced onions and thyme leaves. Sauté for 3-5 minutes or until the onions are soft and translucent. 2. Add the garlic, scotch bonnet, spring onions, jerk seasoning, all-purpose seasoning, smoked paprika and allspice to the pan. Cook for an additional 2-3 minutes until the vegetables are slightly softened. 3. Stir in the rinsed lentils. Then pour in canned tomatoes and the mushroom stock. Add the miso paste and mix well. Reduce the heat to low, cover the pan, and simmer for 8-10 minutes or until the stew has thickened slightly
