- If there was ever a recipe that you absolutely needed to try, it would be this one!
This can be eaten as a breakfast, a lunch, a dinner, a snack.....I mean, there's really no wrong time of day to enjoy this. I found myself wanting it for lunch AND dinner.
My parent's came into town to visit me when I made this. My dad had the genius idea of eating it for breakfast with a fried egg on top.....no regrets there! And reheating it in the air fryer gave the tater tots a nice extra crunch!

Ingredients:
1 lb 93/7 Lean Ground Beef
32 oz Frozen Tater Tots
15 oz jar Salsa con Queso
1 C Shredded Mozzarella
1 medium Green Bell Pepper, diced
1 small White Onion, diced
1 Tbsp Garlic Powder
1/2 Tbsp Onion Powder
1/2 tsp Chili Powder
1/4 tsp Cumin
Salt and Pepper to taste

This was delicious! How much would you say is a single portion. My cutting wasn’t very even and I think measuring it out next time or weighing it out would be super helpful so we don’t have some that are heavy and others that are lighter on the portion

I don't know if you've ever head sweet potato hash but maybe you could modify it to something similar? Red pepper, onion, eggs..
Is there anything that can be a substitution for the Salsa con queso? Would just using extra cheese work?
