Making a Japanese Chef's Knife (Gyuto)

  • In this video you'll see the process of making a Japanese chef's knife with a Gyuto shape blade. The handle is made out of cow horn and maple. The sheath is maple and ebony veneer and the blade is damascus steele.
    This is the first time I'm making a cooking knife and I wanted to try out making a wooden sheath.
    I'll definitely make more of them.

    Clipped nails for locator pins, and drilling/filling knots. 2 things I've never seen. Pretty smart. Cool to learn something new!!!

    An enviably beautiful knife. Why not choose a Japanese octagonal handle design, the D shape, or even a simple oval? Wouldn't your handle fit better in the hand if it had the oval at the top and the corners at the bottom? Sorry for my questions but I got a blade and I am trying to decide on the type of handle. Thank you for the video, great help.

    Great vid! What thickness of the blade are you recommending before heattteating so the edge dosen’t bend? I don’t have a belt sander so I have to file the knife before treating😢

      Hey, honestly I don't know since I don't forge the blades myself, i buy them already made.
      But I undesrtand the struggle cause when i first started with knife I used to file the blade like you do and it's a pain when heat treated

    What are the dowel type pieces of wood for in the handle?

      Those are to replace or fill up the knots int the wood. They are made out of the same wood as the handle, maple.
