2:18 What do you mean there is not much you can do with the stalk? The stalks are perfectly edible! You can cut them diagonally about 1/4 inch thick and saute the stalks in some olive oil with other vegetables. You could grill them too, or simply cut them real thin and add them to a salad.
I've done all of the above too, and sometimes ave the tops in the freezer along with other veggies and use it for veggie broth when my container is full. No waste and the most delicious broth no extra charge!

Always check the base of the bulbs before purchasing from stores, as sometimes the base is not complete, but has gaps in it. These can sometimes hide “nasties” inside the layers as they can be quite wide gaps. Try roasting with toms and peppers with chicken....very tasty....great vids.
I just discovered fennel today; fresh from a farm. I LOVED IT! Ate it all (bulb and stem) like a carrot. So delicious! Now a new 'Go-to' veggie in the produce department! Great recipe; I look forward to making that salad!

I make a root veggie dish with fennel, I chunk up sweet potato, purple sweet potatoes parsnips, carrots, onion, yukon gold potatoes, japanese yams, that are so so good, also chunk up some sweet apples like fuji apples and chunk up your fennel bulb, then make a sauce to drizzle over the top which is 2 tablespoons of Dijon mustard, 1/2 cup pure maple syrup, and 1/2 cup a nice oil such as avacoda oil or a grape seed oil, or a vegetable oil works also wisk all together and drizzle over the top and gently toss through and bake covered for 30 minutes and uncover to continue baking for another 15-20 minutes, I even gently fry some smoked sausage and chunk that up and toss it in and bake it all together and oh my what a very tasty dish. A must try.P.S. chunk up two fennel bulbs, its the best flavor ever. Bake it in a cake dish or a roaster pan with a lid. Whoever gives this a try, Hope you enjoy it.( I usually find the Japanese Yams in the organic section at you grocery store.)

If the stalks of fennel are missing at the store it's usually because they've wilted because it sat there for too long. And don't throw them away, if they're fresh just cut them in wheels and they add a nice crunch to salads, almost like fennel-tasting croûtons.
Yes, the stalks are great to use. I work in fine dining; I have seen them used by our chef as a fennel marmalade, or cut up and pickled. The marmalade was great with lamb.

Just toss in a bag with other veggie scraps in freezer until have enough and ready to make stock/broth, can be stir fried, etc. They are perfectly edible although best cooked until tender rather than eating raw due to woody. Can chop up thin or shred and freeze in small portions to add a bit to stews and soups also.

blanch the fennel in boiling salted water for a few minutes. drain. get a frying pan....add some olive oil and garlic, add the fennel to the pan. season with salt and pepper. then add a handful of sugar and a tablespoon of white wine vinegar. keep cooking until the sugar and vinegar almost becomes a syrup. then your fennel is ready. this recips is Italian sweet and sour fennel. goes great with grilled sea bass.
