THE BEST GROUND BEEF NACHOS - EASY QUESO ROTEL DIP

- Nachos are always a comfort food - who doesn't love cheese? Well I'm here to share a Nachos recipe made with ground beef, velveeta, and Rotel that you NEED to try! Can also be used more specifically as a Rotel Dip. These are the perfect snack or appetizer for any party or get together. I hope you enjoy!
INGREDIENTS:
- Garlic Salt to Season
- 1 TBSP of oil to cook ground beef
- 1 lb of ground beef
- 16 oz block of Velveeta cheese (Original)
- Your choice of tortilla chips
- One 10 oz can of Rotel (I used the Mild version)
- 1/2 cup of water
- OPTIONAL: Pico de Gallo or Guacamole
DIRECTIONS:
- Begin by cooking ground beef fully, set aside once fully cooked
- Cut Velveeta cheese into small squares (for easier melting)
- In a larger pot or saucepan, pour half of the cheese, the entire Rotel can, and 1/4 cup of water and cook over a Low heat. Stir continuously.
- Once most of the cheese is melted, pour the rest of the cheese in and melt completely.
- After all cheese is melted, add in 1 cup of cooked Ground Beef and 1/4 cup of water. Mix in completely.

I love this recipe! I've switched the beef for ground turkey, use a small jar of salsa instead of tomatoes, and and in a small jar of cheese dip as well. This recipe is extremely customizable, and anyone can make it to their taste!

Yes you do! And once you do it you'll never think of any other way. I will do half ground beef, half italian sausage. Gives that extra flavorful meat! That was the first way I had it, and it took me years to understand why one mom's queso was so good when I spent the night a kid at a friend's house! I've tried all sausage but makes a little bit more heavy in my opinion. Even with draining the meat. A 50/50 blend is good. But also do less if you don't want that much meat! But this is a great recipe and it's very easy!

Warming the chips in the oven brings out the oils they were originally cooked in. Great water to add flare to nachos!

I've always used this recipe except I add taco seasoning to my ground beef
It tastes so much more creamier if you use whole milk instead of the water
Do i put any more different seasoning in it?
No don’t worry the only think you will really need to season is the beef, if you prefer to add extra seasoning you can definitely adjust it to your liking :)

Hi Natalie! It’s a mix of diced tomatoes and green chilies, they have different heat levels like Mild, Medium, and Hot :)

Any oil should work just fine, I used very little olive oil :)
