Queso fundido is no dip. It's melted cheese. And that's what queso fundido means in Spanish too
The one thing I always liked about Mexican food was you typically do not see gross mushrooms in the recipe. Very surprised when he brought those out.
It isnt mexican unless the cartel told someone to make it while holding their family hostage. Its just cheese dip.
Were are the spicy peppers? (Poblano peppers aren't spicy), were is the onion, the tomatoes, the sauces?, we don't eat queso fundido alone like that, we mostly eat it with other food, etc, I get that this is a mexican dish because it is made with mexican ingredients but it is too simplified or americanized
not all Mexican food is spicy... It sounds like you want Tex-Mex food. Which is Americanized, but also where your sure to get the tomatoes, onion and spice

He's southern Mexican not northern. Remember the tamales? They were nacatamales not the easy northern ones
I like the northern ones too, but the southern ones and in Central America there a lot of similar dishes with less or no spice
