    I have made your recipe twice now, and it has been absolutely fabulous each time! This time I doubled the batch and made 6 loaves. I then cut them all in half and turned them into loaves of garlic bread with cheese, and froze them. Now any time I make spaghetti, I just pull out a loaf, toss it in the oven for 5 minutes, and it’s perfect every time! This is my all time favorite bread to turn into garlic bread…the crumb absorbs the butter so beautifully and the cheese contours the holes when it melts. Baking from frozen results in the bread being just as crispy and chewy as it was when fresh!

    I have been baking bread for nearly 30 years, making rolls, rye, sour dough, ciabatta, Italian, bagels... I swear this recipe is absolutely amazing, esp for how easy the process and simple ingredients. It is extremely light, airy and so satisfyingly chewy your jaw will hurt in the best possible way. So many of the 'no knead' recipes produce a very heavy, dense bread more akin to an English muffin - Not this. Only modification I make is a bit more salt. Thank you so much Bincy for sharing your time, and wonderful personality with us.

    I made bruschetta and used your ciabatta recipe, it was so good together! Probably never getting it from the store again. My husband couldn't believe I made the bread and raved about it to his family. Now they want it as a side dish for family get togethers 😊.

    I have finally found the perfect Ciabatta recipe! I made this for the first time today. When it came to shaping, I made 2 baguettes instead of the rectangles. Perfection! It was the lightest dough I have ever shaped. The crust was crispy and the center was full of air bubbles for that soft chew. I had several other recipes to try but they are in the trash now. No need to hunt any further with this gem. Thank you Bincy for sharing with all of us. Your video was so easy to follow and your calmness just made me want to do it too. Love, love, love this bread.

    Thank you so much after 2 years of stressful Covit ,and other ,like inflation with ridiculous high prices on everything ,we need to learn how to eat healthy,and saving 💰 money .Watching your video was absolutely relaxing and wonderful and this is for me first chiabatta bread.I know to bake regular bread easy way in standup mixer,but yours is very interesting and easy folding and I will stop buying ciabatta rolls from Aldi .Thank you very much .God bless you 🙏🏻

    I’m adding to my original comment as I make my second batch. We ate the first loaf and I froze the other two. I put them in the oven and they were amazingly crunchy and soft inside!

    I made it! And it actually worked! I've always had problems getting bread to do a plump final rise in the oven. But yrs worked beautifully. They arent as pretty and perfect as yrs are🤣 but they are wonderfully rustic and delishious! Thank you so much. I'm so happy, there's nothing better than having the smell of fresh bread in the oven and then eating it!! Thanks again.👍

    High hydration is often called for in recipes but the kneading process is never explained so patiently. I am definitely going to try your recipe. You have a lovely calming voice along with the warm bread to soothe!

    Chris. I just made this wonderful bread. I know you are supposed to wait until it cools a bit but I just pulled off a chunk slathered it with butter and had the best experience in taste, just as if my mom was here today. She used to make it everyday while I was growing up. What a wonderful memory. Thank you. Cookie

    Finally i sample recipe for bread, your video is so well explain with a great calm voice and no craziness. This year i started baking my own bread and I couldn’t understand why all my bread end up looking and tasting like sourdough bread. But now I get it. i was just kneading it too much. Air pockets is the trick. I’m not a baker just a simple mom who didn’t know the rules of baking bread but know i get it. Thank you so much, can’t wait to give my horrible baking another try.

      One of the joys of baking bread is there are few if any hard and fast rules. I would phrase it as guidelines and techniques.
      Hands on practice is your best friend for bread.
      I've been baking bread at home for many years, and I still have much to learn on techniques and how those techniques affect the results.
      To my understanding, to much kneading is only a thing if you have specific goals in mind. The usual result from more kneading is to result in a finer structure with less large air pockets. I'm unsure how the tasting like sourdough happened. Sourdough gets most of it's unique flavor from the natural leavening, and a very slow rising process.

    I've made this 4 times, twice as buns as they are formed here, and twice as long loaves resembling the Italian loaves I'm missing dearly from the store. They worked perfectly as buns, and worked well as loaves, but the crumb is much more dense as a loaf. I think they need to be thinner if they are in loaf form. Regardless, this recipe is flawless.
    I read on your website that you are from Qatar. Ramadan Mubarak, if you are Muslim. This Ramadan has certainly been a strange one, but we get by. I often hear the quote "Blessed are those who feed the fasting." These bread loaves have paired well with multiple meals, and you definitely had a hand in feeding the whole table after a long day of fasting. Thank you.

    when first making this bread I didn't read complete recipe. At first, I thought you just add ingredients & let it prove for 30 min's. It was only when I started doing everything as video played I realised the time it took 'proving' it & thought OMG!!!! However I persevered & was so glad I did!!! It didn't look as professional as the video but after cutting into slices and serving everyone loved it. Cant believe I made this!!!

    Delicious! I used plain flour because I didn’t have bread or all purpose and it still turned out AMAZING!! It’s so airy, light and soft on the inside and the outside was so golden and crispy it was just perfect all together! Definitely doing this again!

    I love this bread and have made it many times. Not only does it taste nice but it’s perfect for people who live alone, there’s no waste as you can make it fresh every other day if needed. This recipe gives me bread for two days, so it’s fresh bread and no waste, win win!

    My very first attempt at making bread, about 2 months ago, was this video. It turned out perfect! I have since followed your recipe for french baguettes. Again... Perfect! I am in the process of making this again (still proofing) and my son is so excited, as he is making fresh pasta. He said his wife tried making ciabata (different recipe) twice yesterday and ended up throwing it out. You're amazing ❤️

    I made this tonight and it turned out great. It was a lot of fun to make folding the dough.
    Instead of spraying issue the oven with water, I used a cake sheet with water to add steam.

    This is my go-to chiabata recipie. Great when you don't have time (or room in fridge) to do the whole poolish overnight thing. No knead is always a bonus! I am in fact just about to whip up another batch!

    Just made the ciabatta, mixing with stand mixture, then followed with stretching and folding method. Follow the recipe instructions. Baked on a stone. Delighted with ease & results. Delicious!

    I just made this today following the exact steps the soft spoken mellow voiced lady showed, only thing I forgot was the spraying of the water. They came out perfectly delicious!!! My family was impressed and very happy 😊
    Had it fresh and warm with butter as a side for lasagna my wife made for dinner!

    I’m trying this recipe right now!
    I like to make a bread olive oil dip
    All 1tbsp
    dried herbs
    Rosemary,
    Oregano,
    Crushed red pepper,
    Basil,
    Garlic powder,
    Black pepper,
    Salt,
    Minced garlic.
    A lot of olive oil.
    This stuff is also great spread on other stuff like pizza dough
    Tastes like the carrabas oil dip

    Just made this, we love it! My first time baking bread and I was nervous. But directions were very simple to follow and the bread baked up very well.     my hubby has been driving me crazy trying to learn to bake bread then he found your recipe. it's absolutely amazing and easy to follow. It's fool proof guys don't let it scare you give it a try. best bread recipe out there and we've tried about 10 in the last couple of weeks. crust is crispy and the inside is so light and air it's amazing. great recipe thanks for sharing 💕

    I am a beginner and this is the first recipe that has turned out exactly as shown in the end. Shows that anyone can bake this crusty crunchy bread. Thanks a lot.
    I added milk and an egg for additional flavor and used sea salt for extra saltiness. Also used a container with water in the oven for steam throughout the baking which I got from another recipe. Just love that crunchy crust.
    I have to get that parchment paper . The one I used began to smoke at 450F. Your time is a lot less than other recipes I have looked at.

    This one is baking looking good so far. Dutch oven some problem with the temperature I faced as I have C and not F. Also I added sesame seeds on top which actually burned on it top. But over all bread looks good. It is very soft and airy from inside. Will try it again soon.Thankyou very much Bincy Chris. Recipe is awesome 👌 I will only use your bread recipes from now onwards.

    I made them with whole wheat flour and serve them as sandwich with sauté shrimps lemon garlic avocados and harissa mayo, the bread hold the sandwich perfectly and very crispy.

    I made Italian rustic bread this morning and was not so happy just because I found no holes in the bread when I cut. Now I will try this technique next time, thanks for sharing!! It’s gorgeous!

      1.Take care not to deflate the air pockets completely while shaping.
      2.High oven temperature and steam inside the oven in the initial few minutes of baking helps in getting the crispy crackly crust.
      3.The bread may seem done at 20 minutes of baking but continue to bake for five -six minutes to get that rustic ciabatta bread

    Normally when I try to make bread my dough is tough, for some reason this recipe gave me pillow soft dough, and it even rose up like it was supposed to. I'm so amazed, this is a really great recipe!

    Ok, this might sound a little weird but this was fun to make. Something about pulling the dough to stretch the glutens that was satisfying to do and it just looked beautiful. Great job and I am now a fan.

    Made this tonight. Was so easy to follow and your close up's helped me get the consistency right along the way.
    Great "pillows" and taste but I had to make adjustments. Probably my very dry home (humidity is always way low) and the cooler day today. All my breads need a little twist, usually more water. Here's what J did:
    Needed a longer rise time and I did 5 not 4 stretch n folds because it didn't show enough gluten strength.
    Baking time needed adjustment too. Mine needed 7 add'l minutes and I bumped up the second oven temp from 400° to 420° (likely my oven).
    Finally, my disappointment was in the look of the bread. Though the oven was a little hotter I did not get the colorful crust you did. Mine was smooth and tan with a mild crunch despite the pan of boiling water on bottom and water spritz.
    It tasted really good so I don't think I'll play any further with your recipe UNLESS you have suggestions. Thank you for the recipe. I have about 4-5 more from you in my "To Try" list. 😉
