I’m just starting out in cooking. Why is the garlic germ removed as I have never seen this done before? Great video, thanks for posting!
Hello Jonathan. It's common thing in cooking. It is always advisable to remove the core ie. germ at garlic. This part often gives bitterness. The greener the germ, the more unpleasant the taste. A lot of garlic goes into this puree so it was necessary to do this. Try it!
Secerko's Kitchen Thanks for the reply, I am subscribed now. Great videos and recipes! Thank you for helping an inexperienced middle aged wannabe chef!
@@SlavkoStorm It has been proved that it doesn't change the bitterness factor, it's an old superstition mentioned in old school books and chefs, modern cuisine books as ell bulli or el cellar del can roca or the fat duck cook books series proves that. You can use it all on raw garlic recipe or cooked, same for.chili seeds. Hope i could help out.
Also there is a quicker way with a lot less garlic and onions used in modern restaurants, simply blanching the hard frozen peas in salty boiling water, cooling in iced water, then sautee 1/4 of the peas with 1/6 of garlic and shallots( not onions) with olive oil and a knob of butter then add hot water, until well cooked and soft then blending straight into the cold blanched peas, then strain it or place it straight into a ice cold container or blast chiller, the puree will have the colour of raw peas but they are cooked actually, to finish of you can add cream or butter or just living it as it is when reheating. Basically the hot mixture into the cold mixture creates a process of emulsion silky, shiny and elastic instead of a full body puree. Cheers
Simple he doesn’t know how to cook, he washes away all the flavors when he rinsed out the peas, this is no way of making a sauce I’ve seen this sauce made before by a chef and all this person did here is WRONG.
Thank you so much for sharing. Pls can this be kept for after use? What’s the shelf life
Yes. Couple of days in the fridge.
Super 🎉🎉🎉🎉🎉❤
Thanks 🤗
👌
Cheers
Did you blend it with that cold water or did you strain that out first
Strain that water. It is there just to keep nice green colour.
Where can you find the "scraper" you used for the plating the pea puree?
Aliexpress
@@SlavkoStorm I can’t find it online do you have a link for it?
@@oscareasley2245 There are many but for example: US $0.45 30%OFF | Portable 3PCS/Set Plastic Cake Scraper Decorating Tools Dough Icing Scrappers Kitchen Cake Decorating Accessorie

I personally prefer to blend the peas frozen then add the cooked ingredients followed by my warm stock
Nice. I don’t like pea membrane. I can never make a puree that would be as smooth as this one with it. It separates best when the peas are boiled a little.

Evet
I've seen the transparent one, how to make it? I'm new in cooking:(
do you think it is possible to use vegetable stock?
Yes, it is very possible!
What is the saw-edge tool called for plating?
Cake scraper.
Great recipe and all. But, spending an hour in garlic cloves yet, using frozen peas? Thought that was strange but, similar end result I suppose.
It is better if you have fresh peas, but you can also use frozen without any problem, although the most important thing is that it is tasty peas.
What's a substitute for chicken stock?
Water and stock pots.
Beware
Getting it this fine takes time
Use Xanthan Gum to thicken
Good recipe all in all
Thanks. I never use it, just do not overdo the liquid that is the trick. Cheers.
Hi, I’m just start cooking.. how Long this purée can last if I keep in the fridge? so I must to heat it up everytimes I need to use it?
It can last couple of days in the fridge. You can serve it cold or warm, as you wish. Cheers
I did mine in a blender
Good idea.
can you freeze this? Thanks
Yes you can.
How long it will last?
Hi. Couple of days in the fridge.
can we store it?
Yes of course, it last couple of days in the fridge.
Like i need light green puree
Hi. Add some heavy cream at the end and thats it.
Oh okay thanks
chicken stocks mean?
Chicken soup.
whether pure must be served warm or slightly warm
Slightly warm, do not overheat cause it will lose the color.
Any acid?
No, there's no acid.
Please what happens if you don't take germ in the garlic ???
A lot of garlic goes into this recipe. If the germ is not removed, the puree will taste bitter.
I watched it in 2.0 speed, which was not felt fast at all.
Big Like 19 👍👍👍 for my friend!!! соме visit .
All in slow motion
Tnx
What is crnog luka? It's in your description of ingredients 🤔
It is onions. I corrected descriptions.
Oh nice. Thank you
You're welcome!
maybe a pinch of cream and sparkles of red cayen pepper
Cayen pepper yes. Cream no. It would spoil beautiful natural color.
@@SlavkoStorm you're right
Needs a touch of xanthsn
what is wrong with the garlic germ?
A lot of garlic goes into this recipe. If the germ is not removed, the puree will taste bitter.
What do you mean extremely graphic 😂
It says it in your description.
If you don't like pea flavour why don't you cook something else instead of adding all that garlic in there
I like peas and I like garlic. And those two ingredients go perfectly together.
I think there's too much garlic on the puree
At first glance it may seem but no, it is not. Try it first. Cheers
Lost me @ Chicken Stock... Chickens are the most abused animals in the world
This is not restaurant recipie, onions need do cook for 30 min at least and peas are done in 3-4 min, everything more and you kill their flavour
Also, you dont put pepper in peas,it doesent go well
Thanks for watching.
