    Mashed peas are a great complement to many dishes - and very easy to make. Extremely tasty, refreshing, creamy and yet beautiful in appearance!

    Recipe for pea puree:
    600g peas (fresh or frozen)
    200g onions
    60g garlic
    about 1L chicken stock
    salt and pepper to taste

    I’m just starting out in cooking. Why is the garlic germ removed as I have never seen this done before? Great video, thanks for posting!

      Hello Jonathan. It's common thing in cooking. It is always advisable to remove the core ie. germ at garlic. This part often gives bitterness. The greener the germ, the more unpleasant the taste. A lot of garlic goes into this puree so it was necessary to do this. Try it!

      @@SlavkoStorm It has been proved that it doesn't change the bitterness factor, it's an old superstition mentioned in old school books and chefs, modern cuisine books as ell bulli or el cellar del can roca or the fat duck cook books series proves that. You can use it all on raw garlic recipe or cooked, same for.chili seeds. Hope i could help out.

      Also there is a quicker way with a lot less garlic and onions used in modern restaurants, simply blanching the hard frozen peas in salty boiling water, cooling in iced water, then sautee 1/4 of the peas with 1/6 of garlic and shallots( not onions) with olive oil and a knob of butter then add hot water, until well cooked and soft then blending straight into the cold blanched peas, then strain it or place it straight into a ice cold container or blast chiller, the puree will have the colour of raw peas but they are cooked actually, to finish of you can add cream or butter or just living it as it is when reheating. Basically the hot mixture into the cold mixture creates a process of emulsion silky, shiny and elastic instead of a full body puree. Cheers

      Simple he doesn’t know how to cook, he washes away all the flavors when he rinsed out the peas, this is no way of making a sauce I’ve seen this sauce made before by a chef and all this person did here is WRONG.

    I personally prefer to blend the peas frozen then add the cooked ingredients followed by my warm stock

      Nice. I don’t like pea membrane. I can never make a puree that would be as smooth as this one with it. It separates best when the peas are boiled a little.

    Great recipe and all. But, spending an hour in garlic cloves yet, using frozen peas? Thought that was strange but, similar end result I suppose.

      It is better if you have fresh peas, but you can also use frozen without any problem, although the most important thing is that it is tasty peas.

    Man muss die Erbsen gar nicht blanchieren (je öfter man etwas erhitzt desto mehr Inhaltsstoffe gehen verloren und die Farbe verblasst schneller) Zwiebeln und Knoblauch separat blanchieren und pürieren und erkalten lassen und dann einfach die aufgetauchten Erbsen damit blanchieren

      Kurz blanchieren in gesalzenen Wasser hilft um die grüne Farbe (Das Chlorophyll) zu erhalten. Längeres Kochen natürlich nicht.

    This is not restaurant recipie, onions need do cook for 30 min at least and peas are done in 3-4 min,everything more and you kill their flavour
    Also,you dont put pepper in peas,it doesent go well
