Designer Pancakes with Coconut & Jaggery Filling | Goan Alle Belle | East Indian Elijao | Crepes | Polka dot pancakes| Introz Special | Pancake Tuesday

Ingredients: (1 cup = 200 ml)
For the Batter:
1 Whole Large Egg
1/2 Tsp Salt
1/2 Tsp Vanilla Essence
1 Tsp Sugar
1 + 1/2 Cup (220 gms) Maida/All Purpose Flour
2 + Cups of Water (adjust water accordingly to get flowing batter)
Pink, Yellow & Green Food Colour
Divide into colours and keep more of the White batter.
Let the batter rest for some time.
For the Filling:
1 Cup (190 gms) Grated Jaggery
1 Tsp Water (if required to let the jaggery melt)
2 Cups Freshly Grated Coconut
1/2 Tsp Cardamon/Elaichi Powder (can use Rose Essence in place of Elaichi pd)
After mixing the batter, keep it to rest for 10 to 15 minutes.
Use a pan of 8 inches diameter (below diameter)
Cook on Medium to low Flame.
After pouring the batter, swirl the pan and cover thinly. Once the top of the pancake gets dry (Changes Colour becomes opaque), then cook for 1 more minute. The pancakes will the sides of the pan and start curling inwards, then get it off the pan and let cool.
Remain good for a day outside and can be kept in the refrigerator for 2 days, as it has eggs, and the filling will start giving out the juices.

No, these have to be consumed within a day, as the jaggery water starts to leave and it starts getting wet.
