The combination of dark chocolate and sweet cherries is a match made in heaven, creating a delightful flavor experience that will leave you wanting more. Whether you're celebrating a special occasion or just need a pick-me-up, these Eggless Chocolate Cherry Cupcakes are the perfect indulgence.
Ingredients: (1 cup = 200 ml)
1 Cup (220 gms) Dahi/Curds
1/4 Cup (40 Gms) Veg Oil
3/4 Cup (150 gms) Sugar - make powder in mixer (Add +1 Tbsp more if not using Ganache) Can use Castor sugar too.
1 + 1/2 Cup (200 gms) Maida/All-purpose flour
Pinch of Salt
2 Tbsp (14 gms) Cocoa Powder
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Tsp Vanilla/Chocolate Essence
1/2 Cup (100 ml) Milk - room temperature
Bake in pre-heated oven at 170 degrees centigrade for 20 to 22 mins with lower heating element on.
Bake over gas stove on medium to low heat for 20 to 25 minutes
Makes 12 Chocolate cupcakes
Chocolate Ganache Recipe: (2:1 ration)
2 + 1/3 Cup (300 gms) Dark Chocolate - I used Morde dark compound
3/4 Cup (150 gms) Amul Fresh Cream
Melt the chocolate & cream in microwave in 15 seconds interval till all the chocolate is melted. Let set in fridge to desire consistency for piping
