For what it is worth, may I offer you my tips from experience making tea sandwiches. Always use whipped butter and spread on bread lightly. This helps prevent the sandwiches from becoming soggy from the filling. Make larger sandwiches, wrap well in plastic wrap and chill in fridge until closer to serving time. Then cut them with serrated knife in a sawing motion. Once cut and arranged on serving plates, cover with a slightly damp tea towel and the some plastic wrap over top. I bought you a coffee last week! Another beautiful episode. I feel compelled to support your tea parties... In a previous life I was the supervisor for Afternoon Tea at Marshall Field and Company in Chicago. I've made hundreds, if not thousands of tea sandwiches! The keys to tea sandwiches are to have very sharp knives and to use day-old breads from a bakery: 2 to 3 types of bread: white, pumpernickel or a marble bread. Have your baker slice them lengthwise at the width you want to use. Make your fillings, cover and chill them. Chill your watercress and cucumber under damp paper towel or a tea towel. Steps are: FOR SAVORY: using the meat, vegetable and egg fillings pick contrasting breads. Butter your bread so the bread does not become soggy with wet fillings. Generously fill each bread pair, chill them and stack like sandwiches and cut off the crusts and slice them with that sharp knife. Clean the knife between fillings. FOR SWEET: Make a flavored (seedless fruit jam or vanilla) creamed cheese and use a fruit bread or cake. I make a fig or golden raisin bread but bakery bought works too. Be sure NOT to use packaged bread. If you are "sawing" your sandwiches, your knife needs sharpening to prevent squished, pinched edges. They should he square on all sides to show off your fillings. I was born and raised in north suburban Chicago. I always heard great things of the Marsha fields tea time...never had the chance to experience it though...feel like I've been there watching nicholas!
Nicolas, I construct all my sandwiches with the crust on. Then I place all the sandwiches back in the bread bag. I refrigerate overnight and a couple of hours before serving I can slice the crusts off and using a serrated knife cut the tea sandwiches. The sandwiches are firm and much easier to cut. Hope that helps!
Yes I always cover the sandwiches with wrap as soon as possible so the bread doesn’t get hard. Back in the bag is much the same thing. I also refrigerate and cut with a serrated knife. Works so well!

A couple of floral tips from a professional; never use scissors to cut a stem. By doing so you are sealing the end of the stem which makes water uptake difficult, therefore shortening the life of the flower. If you don’t have secateurs for cutting, then use a very sharp knife. Don’t throw away the leaves of the Flower-just put it in with the flowers for a more natural look.

Your teas always remind me of my departed aunt who was from London. She introduced me to tea when I was about 5 and I always looked forward to it when she visited. It's so difficult to do a tea now without her. I still haven't brought myself to the task. Both she and my uncle, who was my blood relation are both gone now, but even he, a gruff former military man, loved her teas.
My boyfriend’s birthday is on Sunday and this will be perfect for a nice picnic in the park. His birthday falls on the 4th of July and we never go out because all the restaurants here in America are closed on that day. We will go to a party his friends are throwing later on. But any party we go to is primarily a 4th of July party and so is not fully dedicated to him, even if we were to throw one ourselves. I think having a cute little picnic using some of these recipes would make the day special for him. Thank you!
Near Los Angeles. Odd. Almost all restaurants that you would want to take a significant other on their birthday is closed on July 4. Except of course places like McDonalds. Or Denny’s or IHOP if you do want to get fancy.
Get your bakery to cut the loaf slices lengthwise, fill and stack as many layers as you like, then cut crusts off and then slice crosswise to form finger width sandwiches . Very fast. Butter keeps bread from getting soggy from sandwich contents. You can also make circular sandwiches with these long slices of bread by putting filling along length of bread slice and then rolling it and slicing it crosswise to make spiral circles. Peanut butter on long slice of bread with whole banana sliced width of bread and then rolled up and sliced cross wise is nice for children. banana is in middle of circle and peanut butter forming circular lines .
i just gave some of this advice.....the bread from a bakery is also denser and you can have it sliced to any thickness.....i also have them cut off the crusts, which i save for croutons. so much easier.
To keep the sandwiches moist, I cover them with a damp paper towel before storing in the refrigerator. It makes such a difference. I so look forward to your video each week and am also looking forward to when your shop will be open to purchase a few of your items for my own home.
It's nice to know that you don't have to go out and buy one of those three tier plates for all your tea treats. Nicolas has set a beautiful table using pretty dishes which are also functional and add interest. The underlying message is, if you have nice things, don't put them in storage--take them out and use them!

What a beautiful tea table. I've heard if you dampen a knife with cold water it makes a cleaner slice of cake or bread. I've also seen some cooks use a baking piping bag to pipe the filling into the sandwiches to help make them so neat. Love the recipes. I too found that cutting single slices of bread in half first was the only way to keep light fluffiness intact. I made lunch for my 102 year old great aunt every Sunday for years. And always took a buttered sandwich for her to eat later. She enjoyed skipping a nursing home meal in favour of simple good bread & good butter! Happy tea time everyone!!
I love how generous you are with the filling Nicholas! One could achieve a terribly dainty tea sandwich with a tiny bit of filling but who wants that? I'd take a rich filling over daintiness any day! Having said that, your aesthetics are on point - love the table layout and treats!
I do think you could run a range of home-wears + home -wares.... Aprons + arm gauntlets for all that hand whisking fun / painting/ DIY.... And of course - Everything to do with teatime. Tea sets - table linens - spoons - jams/spreads - stands - tea cosies - sample set of different teas - how to booklets etc... Thanks to you i'm sure many have been turned back to the endearing ritual of tea-making and not just grabbing a grotty giant mug of instant coffee. - Teatime is time for pause - time for us....

It’s too hot to Barbecue here it’s like 100 plus degrees outside.🥵 A family affair making these delicious tea sandwiches and desserts. My husband and son cut the bread help me make the sandwiches! Comments from Aotearoa New Zealand: 1. In terms of kitchen knives I suggest you look at the range of Pallares Solsona knives. They're carbon steel not stainless steel so they have to be wiped immediately after each use. The benefit of these brilliant knives is that they have narrow blades that can slice white bread without the 'squish' effect. Also, if you use the paring knife to chop the boiled egg the texture is way better than when using a fork. 2. Salt the cucumber slices as you assemble the sandwich, not before. 3. Crush the Maldon salt before strewing some pinches over. Nico - I know you don't mind such feedback! I'm enjoying your VLOGS!

Hi Nicolas, a revolutionary tip from New Zealand.😅 An electric carving knife is a game changer for cutting your afternoon tea sandwiches perfectly and absolutely no squashing of the bread or contents! 👌 You can spread and fill them with the crusts still on and then stack them ready to be cut. With your hand placed lightly on top simply use the electric knife to cut the crusts off the sides then into halves, thirds, or even triangles for more dainty faire. I simply love using mine for this purpose. The blades are serrated and you do not ‘saw’ like using a normal knife as the two blades do a sawing action so just hold the knife handle and move it downwards as it cuts. I enjoy watching your videos.🫖🧁
I was looking at this old video and started going through the comments. I live a world away from you in the US Deep South. We here have always used an electric knife for tea sandwiches since they became available years ago. It makes the sandwiches beautifully neat and so easy. I sent the same advice to Nicholas but I don’t think he saw this or mine. If he ever tried it he would never go back.

You certainly do live a long way from me - I don’t know how far South USA you live but we toured there in 2018 and absolutely loved it! I have not served with tea, but it surely is good with cocktails! However, I don’t know if you partake. They are good anyway!! Onion Sandwiches 4 bunches chopped green onions, green tops and roots 1 pint mayonnaise 1/2 to 1 pound bacon, fried crisp and crumbled Mix the above. Spread on white bread. Remove crusts and cut each in half or in quarters. Store I lidded plastic container in refrigerator. Actually keeps getting better. I hope you enjoy! From Jan

Another chicken sandwich which is delicious is shredded chicken, crushed walnuts, dried cranberries minced, dash of sage powder and mayo, salt & pepper, Mix all together and start building your sandwiches. I have seen it made also with shredded chicken and chicken stuffing mix (cooked) They to added cranberries and crushed walnuts in the mix. Great for a Fall tea with roasted chestnuts. Nicholas your videos are very inspiring and you have a talent regarding social get togethers. Thank you for sharing. :) For a change the same recipes are good to make pinwheel sandwiches using wraps. Looks fabulous....as a frequent maker of egg & cress sandwiches, I would always add a teaspoon of salad cream to the mayonnaise..it just adds a little piquancy to the mix. The table setting is divine...love that Wedgwood design, so pretty.

What an incredibly beautiful afternoon tea table you set! The glasses with the green swirl are great! Really like the white basket weave plates with the green border. The sandwiches, scones and cakes all came together for the perfect tea! Your white and navy outfit looks good on you.
The problem is that you push the knife down before cutting. You have to cut cut cut, never push the knife or you will get that bread issue you are having. The knife should be not just sharp, but "I'm going to stab a dragon with this thing" sharp. Then simply cut (move the knife back and forth, very softly). The bread will recognize how awesomely sharp your knife is and will separate itself giving you a perfect cut.
When my mom made finger sandwiches she ALWAYS buttered the bread (keeps it from going soggy), firmly wrapped the "loaf" of stacked, filled bread in plastic wrap, and refrigerated it for several hours. This firmed up the sandwich stack which made it much easier to slice each "sandwich" into thirds or quarters. The extra time chilling really helped.
Lovely relaxing yummy wind-down, just before bedtime here in the UK. I tried to concentrate, honestly I did, but one eye was glued to that vase of beautiful peonies all the way through!

It's a sensation that you get in your body like tingles at the top of her head or down your body, or just a feeling of deep relaxation with certain "triggers". These can include, someone brushing your hair, the sound of crinkling paper or plastic, listening someone talk is a soft voice, or whisper explaining something mundane or even a role play but in a very soft, relaxing voice (this is my trigger). If you search ASMR in UA-cam you will get many videos. My favorites are Gentle Whispering, Whispers Red, Ting Ting, and Latte ASMR. Unintentional ASMR is like what our friend here is doing. He has a lovely, soft, calming voice and he is explaining a nice benign topic that puts one in a relaxed state. Another example people use for unintentional ASMR is old videos of Bob Ross the painter. Hope this helps. Check out some ASMR videos. They are addicting and great just before bed or if you are having anxiety or difficulty sleeping.

Great video. Just a tip, baking is more precise than cooking so using Tablespoons and teaspoons of table cutlery provides too much variation. You need a set of measuring spoons. By the way, the monogrammed napkins are very elegant.
I use bread that has been sliced lengthwise. Butter, add the fillings, wrap and put in the fridge to chill. Cutting it into fingers is easier when the bread is slightly chilled. Gently saw back and forth with a serrated knife to cut neatly. Don’t press down. Love cucumber sandwiches! Mint leaves are a good idea that I’ll have to try; sounds very refreshing.

Heavenly. Really enjoyed the live stream last week too. Top tip for keeping sandwiches fresh is to soak good quality kitchen roll, wring it out then place over the sandwich tops, put cling film over them and they will keep happily in fridge for up to 24 hours. Have a lovely weekend Nicolas xx

I like dill pickle, cream cheese and ham rounds. You spread cream cheese (with herbs, if you like) on a slice of bread. Place a bit of ham or salami down. Then a pickle and then wrap it. Slice the tupe of bread and pickle and you end up with rounds. Very good. Cute
I had no idea until now what scones were. My mom always called 'baking powder biscuits'. It sounds so much more elegant the way you say it. They are such a comfort. What i do is fold the dough over and roll it out again, and they come out so beautifully with delicate layers inside. Thats the secret to getting them tall and flaky.
So nice! Usually do a Tea like this when there is a Big Royal Event to watch ...which means having freinds come over at 5am - time difference. I use the Union Jack for a Table Cloth. Make everything the evening before and the morning is just put the food at and steep the Tea! Great Vlog as usual!

Slice cucumber using a vegetable slicer on the side of the upright cheese grater. It’s the part that is used to make potato crisps. A bowl of homemade salted potato crisps is beautiful with afternoon tea. Takes the sloppiness away from the sandwiches.

To get no spilling or overage use the serrated bread knife but make the knife do the work for you! Using very little pressure, saw back and and forth gently but often so the knife goes right through the bread and you'll get a clean edge but making sure to wipe the knife blade of fillings between cuts.
This was wonderful! I love long videos from you. That being said, you can totally make this a multi part series where one friday you focus on sandwiches, the next on teas, the next on scones, the next on cakes/baked goods, etc. Just an idea bc you have so much here for an amazing series! I bought you a coffee last week! Another beautiful episode. I feel compelled to support your tea parties... In a previous life I was the supervisor for Afternoon Tea at Marshall Field and Company in Chicago. I've made hundreds, if not thousands of tea sandwiches! The keys to tea sandwiches are to have very sharp knives and to use day-old breads from a bakery: 2 to 3 types of bread: white, pumpernickel or a marble bread. Have your baker slice them lengthwise at the width you want to use. Make your fillings, cover and chill them. Chill your watercress and cucumber under damp paper towel or a tea towel. Steps are: FOR SAVORY: using the meat, vegetable and egg fillings pick contrasting breads. Butter your bread so the bread does not become soggy with wet fillings. Generously fill each bread pair, chill them and stack like sandwiches and cut off the crusts and slice them with that sharp knife. Clean the knife between fillings. FOR SWEET: Make a flavored (seedless fruit jam or vanilla) creamed cheese and use a fruit bread or cake. I make a fig or golden raisin bread but bakery bought works too.
Be sure NOT to use packaged bread. If you are "sawing" your sandwiches, your knife needs sharpening to prevent squished, pinched edges. They should he square on all sides to show off your fillings. Hope this helps 💞

I was born and raised in north suburban Chicago. I always heard great things of the Marsha fields tea time...never had the chance to experience it though...feel like I've been there watching nicholas!
Nicolas, I construct all my sandwiches with the crust on. Then I place all the sandwiches back in the bread bag. I refrigerate overnight and a couple of hours before serving I can slice the crusts off and using a serrated knife cut the tea sandwiches. The sandwiches are firm and much easier to cut. Hope that helps!

Yes I always cover the sandwiches with wrap as soon as possible so the bread doesn’t get hard. Back in the bag is much the same thing. I also refrigerate and cut with a serrated knife. Works so well!

A couple of floral tips from a professional; never use scissors to cut a stem. By doing so you are sealing the end of the stem which makes water uptake difficult, therefore shortening the life of the flower. If you don’t have secateurs for cutting, then use a very sharp knife. Don’t throw away the leaves of the Flower-just put it in with the flowers for a more natural look.

I use pruning sheers, very sharp knife and works wonders, no leaves below the water line.

Your teas always remind me of my departed aunt who was from London. She introduced me to tea when I was about 5 and I always looked forward to it when she visited. It's so difficult to do a tea now without her. I still haven't brought myself to the task. Both she and my uncle, who was my blood relation are both gone now, but even he, a gruff former military man, loved her teas.

My boyfriend’s birthday is on Sunday and this will be perfect for a nice picnic in the park. His birthday falls on the 4th of July and we never go out because all the restaurants here in America are closed on that day. We will go to a party his friends are throwing later on. But any party we go to is primarily a 4th of July party and so is not fully dedicated to him, even if we were to throw one ourselves. I think having a cute little picnic using some of these recipes would make the day special for him. Thank you!

What part of America are you in? All restaurants are open in these parts. Never heard of such before.
Near Los Angeles. Odd. Almost all restaurants that you would want to take a significant other on their birthday is closed on July 4. Except of course places like McDonalds. Or Denny’s or IHOP if you do want to get fancy.
Get your bakery to cut the loaf slices lengthwise, fill and stack as many layers as you like, then cut crusts off and then slice crosswise to form finger width sandwiches . Very fast. Butter keeps bread from getting soggy from sandwich contents. You can also make circular sandwiches with these long slices of bread by putting filling along length of bread slice and then rolling it and slicing it crosswise to make spiral circles. Peanut butter on long slice of bread with whole banana sliced width of bread and then rolled up and sliced cross wise is nice for children. banana is in middle of circle and peanut butter forming circular lines .

i just gave some of this advice.....the bread from a bakery is also denser and you can have it sliced to any thickness.....i also have them cut off the crusts, which i save for croutons. so much easier.
To keep the sandwiches moist, I cover them with a damp paper towel before storing in the refrigerator. It makes such a difference. I so look forward to your video each week and am also looking forward to when your shop will be open to purchase a few of your items for my own home.

I surround mine with a mixed leaf salad then cover the plate with cling film. My Mum taught me this trick to keep the sandwiches from drying out.

It's nice to know that you don't have to go out and buy one of those three tier plates for all your tea treats. Nicolas has set a beautiful table using pretty dishes which are also functional and add interest. The underlying message is, if you have nice things, don't put them in storage--take them out and use them!

What a beautiful tea table. I've heard if you dampen a knife with cold water it makes a cleaner slice of cake or bread. I've also seen some cooks use a baking piping bag to pipe the filling into the sandwiches to help make them so neat. Love the recipes. I too found that cutting single slices of bread in half first was the only way to keep light fluffiness intact. I made lunch for my 102 year old great aunt every Sunday for years. And always took a buttered sandwich for her to eat later. She enjoyed skipping a nursing home meal in favour of simple good bread & good butter! Happy tea time everyone!!

1. In terms of kitchen knives I suggest you look at the range of Pallares Solsona knives. They're carbon steel not stainless steel so they have to be wiped immediately after each use. The benefit of these brilliant knives is that they have narrow blades that can slice white bread without the 'squish' effect. Also, if you use the paring knife to chop the boiled egg the texture is way better than when using a fork.
2. Salt the cucumber slices as you assemble the sandwich, not before.
3. Crush the Maldon salt before strewing some pinches over.

Hi Nicolas, a revolutionary tip from New Zealand.😅 An electric carving knife is a game changer for cutting your afternoon tea sandwiches perfectly and absolutely no squashing of the bread or contents! 👌
You can spread and fill them with the crusts still on and then stack them ready to be cut. With your hand placed lightly on top simply use the electric knife to cut the crusts off the sides then into halves, thirds, or even triangles for more dainty faire. I simply love using mine for this purpose. The blades are serrated and you do not ‘saw’ like using a normal knife as the two blades do a sawing action so just hold the knife handle and move it downwards as it cuts. I enjoy watching your videos.🫖🧁
I was looking at this old video and started going through the comments. I live a world away from you in the US Deep South. We here have always used an electric knife for tea sandwiches since they became available years ago. It makes the sandwiches beautifully neat and so easy. I sent the same advice to Nicholas but I don’t think he saw this or mine. If he ever tried it he would never go back.

Onion Sandwiches
4 bunches chopped green onions, green tops and roots
1 pint mayonnaise
1/2 to 1 pound bacon, fried crisp and crumbled
Mix the above. Spread on white bread. Remove crusts and cut each in half or in quarters. Store I lidded plastic container in refrigerator. Actually keeps getting better. I hope you enjoy! From Jan

Another chicken sandwich which is delicious is shredded chicken, crushed walnuts, dried cranberries minced, dash of sage powder and mayo, salt & pepper, Mix all together and start building your sandwiches. I have seen it made also with shredded chicken and chicken stuffing mix (cooked) They to added cranberries and crushed walnuts in the mix. Great for a Fall tea with roasted chestnuts. Nicholas your videos are very inspiring and you have a talent regarding social get togethers. Thank you for sharing. :) For a change the same recipes are good to make pinwheel sandwiches using wraps. Looks fabulous....as a frequent maker of egg & cress sandwiches, I would always add a teaspoon of salad cream to the mayonnaise..it just adds a little piquancy to the mix. The table setting is divine...love that Wedgwood design, so pretty.

What an incredibly beautiful afternoon tea table you set! The glasses with the green swirl are great! Really like the white basket weave plates with the green border. The sandwiches, scones and cakes all came together for the perfect tea! Your white and navy outfit looks good on you.
The problem is that you push the knife down before cutting. You have to cut cut cut, never push the knife or you will get that bread issue you are having. The knife should be not just sharp, but "I'm going to stab a dragon with this thing" sharp. Then simply cut (move the knife back and forth, very softly). The bread will recognize how awesomely sharp your knife is and will separate itself giving you a perfect cut.
I think the serrated knife would help too. I agree pushing down the straight edge squashes the edges of the bread.
When my mom made finger sandwiches she ALWAYS buttered the bread (keeps it from going soggy), firmly wrapped the "loaf" of stacked, filled bread in plastic wrap, and refrigerated it for several hours. This firmed up the sandwich stack which made it much easier to slice each "sandwich" into thirds or quarters. The extra time chilling really helped.
SLICE! Draw the perfectly sharp knife across the sandwich.

It's a sensation that you get in your body like tingles at the top of her head or down your body, or just a feeling of deep relaxation with certain "triggers". These can include, someone brushing your hair, the sound of crinkling paper or plastic, listening someone talk is a soft voice, or whisper explaining something mundane or even a role play but in a very soft, relaxing voice (this is my trigger). If you search ASMR in UA-cam you will get many videos. My favorites are Gentle Whispering, Whispers Red, Ting Ting, and Latte ASMR. Unintentional ASMR is like what our friend here is doing. He has a lovely, soft, calming voice and he is explaining a nice benign topic that puts one in a relaxed state. Another example people use for unintentional ASMR is old videos of Bob Ross the painter. Hope this helps. Check out some ASMR videos. They are addicting and great just before bed or if you are having anxiety or difficulty sleeping.

Great video. Just a tip, baking is more precise than cooking so using Tablespoons and teaspoons of table cutlery provides too much variation. You need a set of measuring spoons. By the way, the monogrammed napkins are very elegant.

I use bread that has been sliced lengthwise. Butter, add the fillings, wrap and put in the fridge to chill. Cutting it into fingers is easier when the bread is slightly chilled. Gently saw back and forth with a serrated knife to cut neatly. Don’t press down.

Heavenly. Really enjoyed the live stream last week too. Top tip for keeping sandwiches fresh is to soak good quality kitchen roll, wring it out then place over the sandwich tops, put cling film over them and they will keep happily in fridge for up to 24 hours. Have a lovely weekend Nicolas xx

A tip for the scones is dip the cutter in flour before each cutout. They won’t stick. Everything was lovely and looked delicious!

I like dill pickle, cream cheese and ham rounds. You spread cream cheese (with herbs, if you like) on a slice of bread. Place a bit of ham or salami down. Then a pickle and then wrap it. Slice the tupe of bread and pickle and you end up with rounds. Very good. Cute

I had no idea until now what scones were. My mom always called 'baking powder biscuits'. It sounds so much more elegant the way you say it. They are such a comfort. What i do is fold the dough over and roll it out again, and they come out so beautifully with delicate layers inside. Thats the secret to getting them tall and flaky.
Scones are not flaky. They are crumbly. I think you are talking about something different to English scones.
So nice! Usually do a Tea like this when there is a Big Royal Event to watch ...which means having freinds come over at 5am - time difference. I use the Union Jack for a Table Cloth. Make everything the evening before and the morning is just put the food at and steep the Tea! Great Vlog as usual!

Slice cucumber using a vegetable slicer on the side of the upright cheese grater. It’s the part that is used to make potato crisps.
A bowl of homemade salted potato crisps is beautiful with afternoon tea. Takes the sloppiness away from the sandwiches.

I love you! I never really knew how to do a proper tea on my on. So I often went to tea restaurants, here in Dallas, Tx. But, I just like doing it on my on. Sometimes you need to treat yourself! So...Thank you very much!
Thank you for your lovely video, I love afternoon tea! If you swizzle your cutter around in a little pile of flour each time before you cut out a scone, it'll help the scone come out onto the baking tray xx

To get no spilling or overage use the serrated bread knife but make the knife do the work for you! Using very little pressure, saw back and and forth gently but often so the knife goes right through the bread and you'll get a clean edge but making sure to wipe the knife blade of fillings between cuts.
This was wonderful! I love long videos from you. That being said, you can totally make this a multi part series where one friday you focus on sandwiches, the next on teas, the next on scones, the next on cakes/baked goods, etc. Just an idea bc you have so much here for an amazing series! Keep them coming! :)
