I grew up with “tea time” but it was down home Gullah style. We used to have these tea sandwiches and cakes that’s took all morning to make... all the moms and married women made them, the grannies brewed the tea (they were the only ones who knew what combinations went into infuser or cheese cloth because we made our own teas) and the young girls did the lemonade and iced teas. We’ve done this in our family since the revolutionary war... my favorite is cream cheese herb and cucumber sandwiches( or cream cheese, herb, and smoked salmon) , gooseberry sponge cake with cream cheese frosting and tea made with dried pea flower, lemongrass, and honey suckle...

I’ve been trying to think of a word to describe what I appreciate about this video. The word isn’t sophistication, because that has a pompous connotation. Very elegant. I’m from New Orleans and had a French Creole Mother who lived a bit of refinement though we were not toffs by any means. We were extremely well-schooled and taught. Tea was a weekly ritual. Every meal had a proper place setting of flatware in the French manner, cloth napkins, never a paper plate or plastic cup. No bottles or anything with a label allowed on the table. Candles in the evening and a vase with a flower or even greenery from the garden. Soft music playing in the living room. Quiets talk at the table, asked to be excused and clear own plates without stacking. Of course a tablecloth. We were just basic Americans (though I think a little unique being in New Orleans). However my Mother thought it necessary and appropriate to know proper behavior. Having learned great manners has helped me my entire life personally and in business. I continue the way I was raised and perhaps have influenced others. Thanks for the video.

@@melinamaria8523 I can't hear any Midlands in his voice at all, but I did notice he says "master" without the southern "aar" vowel sound, as in "maarster". I am from the North, and I do know lots of people who speak "posh" as you put it (me included), but it is still evident that they/we are from the North because of those vowel sounds. So I am not sure if he is affecting his accent, but I must say that I do know people who speak like him 🤷♀️

I live in Canada and belong to a Reading Club that has been meeting consecutively for over 125 years on Tuesdays. We meet at 3:00 p.m. for high tea served from a silver tea service. The table is formally set with lovely tea cups, plates and silver. The desserts and sandwiches are always delightful. After tea a paper is presented by one of us and a lively discussion follows. It is most wonderful. Our ages range over four decades. We meet ten weeks before Christmas and ten weeks after Christmas. It is a wonderful way to spend cold snowy afternoons.

I feel so at ease...I haven't wanted to binge watch a youtubers content since 2010...a tip on eggs, I know you said you aren't opposed to eating friends free range eggs, but if you must buy them at the store, be sure to get eggs that are "pasture raised." In america, "free range" only means that the chickens have access to a door in their house. It can be any size door, and it doesn't mean the chickens are trained to use the door. That's why there isn't much of a price difference between regular eggs and free range or cage free eggs, since pasture raising is truly more labor intensive/expensive. With pasture raised, you can be sure that for most of the day, the chickens are living how they were meant to, pecking at bugs and stuff, not just corn :)
This is a great video! My late partner was a wonderful chef. I tried to learn cooking but he always critiqued my efforts and because it took him a fraction of the time I would spend, I decided my role was table setting and washing up. I did, after 20 years of watching and assisting, absorb some of his ability. Though admittedly I am not the natural he was, I can cook. I've always loved savory tidbits as well as sweets, so tea is a tradition I admire. I also have lovely china, both ours and inherited sets with teaware, and now these recipes inspire me to try my own version of tea. Thank you!

This video has reminded me of the tea parties at my Nana's. Or even our family reunions. I feel so lucky for having such a wonderful grandmother. Fortunately the tradition continues through my mother and aunts. My Nana's tea parties were a real spread: sandwiches, cake, cream meringues, eclairs, scones,... ❤ It is really nice to keep these traditions and not forget them. Luckily I keep family videos that go back to 1939 where I can still watch how they enjoyed life at parties, weddings, horse races, swimming at The Lakes or going to the beach and even I can see them all dressed up comming out of a Pub making funny faces pretending they were drunk😂 (or maybe they were indeed a bit "happy"! ). Good old times. Not that I don't enjoy life too, haha. But now I live in Spain and I do miss these things sometimes so these videos are so wonderful to watch. Thank you Nicholas.❤

The Victoria Sponge was the first cake I learnt to make at age ten, using a recipe book. I then had to bake one every Sunday for the family until I left for uni.
I loved watching this, it’s my mum and my grandmother and her mother before her (although I never met her). Preparing this kind of food has been a way of life and tradition on my maternal line for generations. The tea cups, plates, decor and everything about it was like home for me. Quintessentially English I guess. Thank you for posting this.
Please know that this is not how the majority of the Brits make sandwiches like this. The rich or the elite enjoy these kind of sandwiches and usually have someone like this you tuber making them.

My parents grew up in Ceylon during the Colonial times and they both studied in boarding schools run by the British. So we are familiar with afternoon tea. I remember my mother's specific instruction to make a perfect pot of tea. One spoon of tealeaf per person and one for the pot, and it was always perfect. I watched a programme where a man lived on his own and he made 1 Victoria sponge sandwich (using 1 tin) and when it was baked and cooled cut it in half and put in the cream/frosting and jam and had made himself half a Victoria sponge cake as two sandwiches would have been too much for him.

I’m from New Orleans and had a French Creole Mother who lived a bit of refinement though we were not toffs by any means.
We were extremely well-schooled and taught.
Tea was a weekly ritual.
Every meal had a proper place setting of flatware in the French manner, cloth napkins, never a paper plate or plastic cup. No bottles or anything with a label allowed on the table. Candles in the evening and a vase with a flower or even greenery from the garden. Soft music playing in the living room. Quiets talk at the table, asked to be excused and clear own plates without stacking. Of course a tablecloth.
We were just basic Americans (though I think a little unique being in New Orleans). However my Mother thought it necessary and appropriate to know proper behavior.
Having learned great manners has helped me my entire life personally and in business.
I continue the way I was raised and perhaps have influenced others.

Hello! I’m also and English lady! So I wanted to ask as your not American if you can notice a slight putting on with the posh accent because I can hear some midlands accent coming through almost like he’s tried to change it to posh? What do you think?
@@melinamaria8523 I can't hear any Midlands in his voice at all, but I did notice he says "master" without the southern "aar" vowel sound, as in "maarster". I am from the North, and I do know lots of people who speak "posh" as you put it (me included), but it is still evident that they/we are from the North because of those vowel sounds. So I am not sure if he is affecting his accent, but I must say that I do know people who speak like him 🤷♀️

I live in Canada and belong to a Reading Club that has been meeting consecutively for over 125 years on Tuesdays. We meet at 3:00 p.m. for high tea served from a silver tea service. The table is formally set with lovely tea cups, plates and silver. The desserts and sandwiches are always delightful. After tea a paper is presented by one of us and a lively discussion follows. It is most wonderful. Our ages range over four decades. We meet ten weeks before Christmas and ten weeks after Christmas. It is a wonderful way to spend cold snowy afternoons.

It is my experience that many families here have lived with this level of refinement since the earliest days in this country, however elegance has become an almost lost art here in the last 20 or 30 years. Many of us, the world over, are attempting to bring it back.

I feel so at ease...I haven't wanted to binge watch a youtubers content since 2010...a tip on eggs, I know you said you aren't opposed to eating friends free range eggs, but if you must buy them at the store, be sure to get eggs that are "pasture raised." In america, "free range" only means that the chickens have access to a door in their house. It can be any size door, and it doesn't mean the chickens are trained to use the door. That's why there isn't much of a price difference between regular eggs and free range or cage free eggs, since pasture raising is truly more labor intensive/expensive. With pasture raised, you can be sure that for most of the day, the chickens are living how they were meant to, pecking at bugs and stuff, not just corn :)

This is a great video! My late partner was a wonderful chef. I tried to learn cooking but he always critiqued my efforts and because it took him a fraction of the time I would spend, I decided my role was table setting and washing up. I did, after 20 years of watching and assisting, absorb some of his ability. Though admittedly I am not the natural he was, I can cook. I've always loved savory tidbits as well as sweets, so tea is a tradition I admire. I also have lovely china, both ours and inherited sets with teaware, and now these recipes inspire me to try my own version of tea. Thank you!

This video has reminded me of the tea parties at my Nana's. Or even our family reunions. I feel so lucky for having such a wonderful grandmother. Fortunately the tradition continues through my mother and aunts. My Nana's tea parties were a real spread: sandwiches, cake, cream meringues, eclairs, scones,... ❤ It is really nice to keep these traditions and not forget them. Luckily I keep family videos that go back to 1939 where I can still watch how they enjoyed life at parties, weddings, horse races, swimming at The Lakes or going to the beach and even I can see them all dressed up comming out of a Pub making funny faces pretending they were drunk😂 (or maybe they were indeed a bit "happy"! ). Good old times. Not that I don't enjoy life too, haha. But now I live in Spain and I do miss these things sometimes so these videos are so wonderful to watch. Thank you Nicholas.❤

The Victoria Sponge was the first cake I learnt to make at age ten, using a recipe book. I then had to bake one every Sunday for the family until I left for uni.

I loved watching this, it’s my mum and my grandmother and her mother before her (although I never met her). Preparing this kind of food has been a way of life and tradition on my maternal line for generations. The tea cups, plates, decor and everything about it was like home for me. Quintessentially English I guess. Thank you for posting this.
As an American, I find your tea videos to be fascinating. I might even try to host a tea, now!
Please know that this is not how the majority of the Brits make sandwiches like this. The rich or the elite enjoy these kind of sandwiches and usually have someone like this you tuber making them.

My parents grew up in Ceylon during the Colonial times and they both studied in boarding schools run by the British. So we are familiar with afternoon tea. I remember my mother's specific instruction to make a perfect pot of tea. One spoon of tealeaf per person and one for the pot, and it was always perfect. I love the British way of doing things with class and tradition. You are a true Englishman. Please don't change. You are like a breath of fresh air. Love all your videos. Good Luck !
Try using a serrated knife when you have a fuller sandwich and more of a sawing motion - you’ll get less spillage of your filling! 😊

I watched a programme where a man lived on his own and he made 1 Victoria sponge sandwich (using 1 tin) and when it was baked and cooled cut it in half and put in the cream/frosting and jam and had made himself half a Victoria sponge cake as two sandwiches would have been too much for him.
