To make maida puri crispy you have to add one fourth qty of ghee in the flour and mix until the entire ghee is absorbed by the flour. To test, we have to take the ghee mixed flour in our fist and press tightly, it should remain as it is and then if you leave the flour loose it should fall off. Just like samosa flour. Then we have to knead adding water little by little and make a neat dough. If you add correct proportion of ghee the flour will never stick to the vessel nor your hand. Such dough must always be rested for half an hour. Then your puris will be kasta as you say in Hindi. Since you both are very homely, this suggestion.
