You did it again! As you did with your chicken tikka Massala recipe. ‘I’m going to just add a teaspoon of salt’ she adds and sprinkles two teaspoons. Looks fab though, wish I could eat that. Thank you , ‘know what I mean Hari? ‘

Making this tonight. I am looking for a knock out recipe to make for my son and his new girl friend when they next come to visit. They are both chefs, so no pressure. I thought a Biryani would be nice, such an elegant dish. I have tried a couple of other recipes so far. They were good but not the home run that I was looking for. I have a very good feeling about this one. The samples that I have tried while getting it ready were delicious. To make it even more interesting, I am allergic to garlic ( Yeah, I know, sighs...) and my wife can only have tiny amounts of dairy. I use coconut cream instead of yogurt and no ghee. I did do the saffron in milk. I love Indian cooking. So much flavor. The next day. I loved it, my wife loved it. Looks like a keeper.

I bet I make it at least once a month, she likes it that much. If I left it up to her, we would have it once a week. She just had her 64th birthday in February, guess what was requested for dinner. I have tried a few other recipes, one was for a "quick" version, I'll refrain from commenting on how it turned out, but I always come back to this one. Hi they are based on traditional authentic cooking. Looks great! But the Indian Rose Water which is essential for Briyani scent is missing. To be fair there many versions out of tis recipe but traditional versions usually require rose water in the last stage. Just sharing.
Hi Thanks so much for watching and sharing your thoughts. Traditional biryani especially lamb ones have screw pine water. Recipes are always a guide and you can tweak them as you feel. Personally I prefer not to add rosewater in my chicken version. Thanks so much for your thoughts.

I noticed you don't recommend roasting each spice first before ground them as most versions do. Any particular reasons please? @@babycake5566 Hi yes there is - when you apply heat to spices they release their natural oils which make them fragrant. If you are making a batch of garam masala and toast the spices and then grind them - it makes them easier to grind but the aromatics are released much more readily which mean that the masala should be used straight away and not kept. @@peggyplaye6729 Hi Peggy - For this biryani you only need to cook your rice for 6-7 minutes. Remove from the hot water and spread out to let the rice cool. Does that help?
Almost perfect. Lose the tomatoes, add mace, nutmeg, fresh mint and lemon juice. Par poil the rice in a lots of water and then drain. And you will have the perfect biryani. Also saffron better dissolves in water
I've watched this video quite a few times now and I really must give cooking it a try. It's the pre marinating and waiting for a day that kinda puts me off......Although I do really want to try making Tandoori chicken soon so I could kill 2 birds with 1 stone. Plus, every recipe of yours that I've tried have all turned out great. We made your keema pie recipe the other day, and that was the dog's bollocks as well 👍

how long do you cook it in its water to expect a crunch to it and prevent it from being overcooked? I always seem to overcook my rice

@@peggyplaye6729 Hi Peggy - For this biryani you only need to cook your rice for 6-7 minutes. Remove from the hot water and spread out to let the rice cool. Does that help?

Whatever gas mark corresponds to 180 Celsius. There's bound to be a conversion available on line.

Grind the saffron into a powder with a pinch of salt or sugar, and heat the liquid before hand.

Almost perfect. Lose the tomatoes, add mace, nutmeg, fresh mint and lemon juice. Par poil the rice in a lots of water and then drain. And you will have the perfect biryani. Also saffron better dissolves in water
