Update: I'm eating this right now. I never had much luck keeping omelettes together so I was skeptical. But when I flipped it over the egg and cheese had set up perfectly. I actually said, "wow, it worked!" The rest was just a matter of flipping until the outside was crispy. Even I could do that. Great recipe!
I've got a tip for you. When the omelette is ready to be flipped, just put a large plate over the skillet and flip them. You should end up with the half cooked omelette on the plate, cooked side up. Now just slide it on the skillet again. Just don't use too much oil and don't do it in slow motion, you don't want boiling oil on your skin.
This breakfast quesadilla is my favorite. One reason is because I love quesadillas and the second reason is because you mentioned the video for your homemade tortillas. My wife has been looking to make tortillas and I can’t wait for her to give yours a try.

I love the Mountain Man breakfast. As a Civil War reenactor I cook outdoors a lot and this feeds my crew.
No matter where we ARiAT we take our cast iron skillet, fried eggs have gotten better since watching your perfect egg in a cast iron skillet video. The butter for none stick and the water with lid make all the difference. My wife and I watch all your videos together, we’re not allowed to watch them without the other being present! Already did, plus the 3lb bags for backup. I put the Red River on dang near everything, and the Mesquite is quite good for some grilling.
I'm only able to get little at a time but I plan on trying everything. May have to splurge on the 3lb bags

I’m in love with this quesadilla recipe and can’t wait to make it. I love a good quesadilla with salsa and sour cream on it. We’ve been watching your videos while we’re waiting to close on our new house. We’ve decided to build ourself a chuckwagon and start cooking like you do. High on the list is making your biscuits too. That looks soooo good. This is my favorite but I really learned a lot from your video about caring for cast iron skillets.
I tried your waffle breakfast casserole and biscuits and gravy, and loved them both. but nothing gets a day started better then your coffee. made in my grandpa’s coffee pot that he had when he started drinking coffee. Gives me a reminder of him and what he taught me and I carry with me.

We make quesadillas all the time. Of course the quick and easy cheeseadillas. It’s nice to see how easy it is to just add some ingredients to make something different that is delicious and goes outside our daily box. Thank you for all you do. What a fantastic recipe! I really like the idea of cooking your eggs very gently and slowly while adding a layer of cheese to help bond the tortilla. This is so much better than simply stuffing a tortilla with scrambled eggs. Your method really does make the most even and consistent quesadilla by having an equal distribution of eggs and filling. Well... after a lot of thought about this, the breakfast recipe and video that stands out for me is your "Mountain Man Breakfast Casserole." You do a mean biscuits and sausage gravy but the Mountain Man beats them all. Now, I have a question for you. Have you ever made something that turned out so bad, that it made your face sour; followed by the death march rather than the happy dance? You really should bring the little lady out from behind the camera, set up a table and two chairs, and video tape your selves enjoying a good meal. Can't wait to see that.

My favorite breakfast video was on how to scramble eggs in the cast iron. Maybe that's more of a cast iron video, but the technique really works! I get a nice fluffy scramble with little or no sticking. I gotta say, this recipe looks like a winner. I'm gonna have to try it.

I have a question have you ever cooked in or used a VINTAGE 2 TONE BROWN & BEIGE SMALL CERAMIC STONEWARE POT WITH LID AND HANDLE? Cowboy Chef Collins, up to you but regular butter burns at 274F. Clarified butter, No Ghee, burns at 482F. Easier. You have taught me much my friend (Can I call you that)? Now I am always the cook on hunting trips or fishing I am from Texas. People have forgotten the old ways wth cast iron, Now I gotta watch your home made tortilla recipe. That you sir and God Bless. Cooking helps me heal for war combat. I am happy and concentrate on it.

@@CowboyKentRollins Sometimes, I find myself tearing up when I take all the boy scouts camping. They must learn life skills. I have even taken girl scouts. They must learn. Ain't much of a difference. The land is the land. They all learn shooting with my collection of Henry Rifles. Safety is a priority. They must make their tents, police up every bit of trash, and wash their clothes in the river. I have a full medical kit and an SAT phone in case someone gets hurt. We march and do PT. But I also put them in the lake with pants or jeans and their shirts and show them how to make those pants a flotation device. Boys separate from girls. I find this healing and I joined a culinary school in Dallas. God bless. You re-awoke my liking for living in the country
