Update: I'm eating this right now. I never had much luck keeping omelettes together so I was skeptical. But when I flipped it over the egg and cheese had set up perfectly. I actually said, "wow, it worked!" The rest was just a matter of flipping until the outside was crispy. Even I could do that. Great recipe!
I've got a tip for you. When the omelette is ready to be flipped, just put a large plate over the skillet and flip them. You should end up with the half cooked omelette on the plate, cooked side up. Now just slide it on the skillet again. Just don't use too much oil and don't do it in slow motion, you don't want boiling oil on your skin.

My oldest boys girlfriend is a very picky eater, I made this actually for supper one night she was here, she really enjoyed it, next day her mother calls me for the recipe, I directed her to your you tube channel. I use cast iron a little each week. But watching your shoe I use them almost every day. I even gave a 15” lodge skillet as a wedding gift . It may not seem like much but that’s what he wanted and you know I added some grilling gloves to go with it . Ty be safe and keep cooking. 🙏🇺🇸

My favorite breakfast video is actually from several years ago "Cowboy Breakfast at a Cowcamp" You are not going over a specific recipe but you are going over why you do what you do and, the meaning of togetherness in the morning for breakfast at camp. I have watched it so many times and it always takes me back to when I was small and being in my grandma's farm kitchen on a cold Wisconsin morning as she was cooking breakfast SO early in the morning and it was just me and her. She would give me some coffee (with lots of cream) the smell of bacon and fresh biscuits filled the air. This video is just wonderful! Everyone bowing their heads before the first bite. Thank you for the realness and feel of it!!

What a fantastic recipe! I really like the idea of cooking your eggs very gently and slowly while adding a layer of cheese to help bond the tortilla. This is so much better than simply stuffing a tortilla with scrambled eggs. Your method really does make the most even and consistent quesadilla by having an equal distribution of eggs and filling. Honestly couldn't choose a favorite video they are all so good very good recipes and very entertaining. We have tried most of them and eatin wise just depends on what sounds good at the time .we probably eat more biscuits and gravey than the rest but has always been a family favorite for us
My favorite breakfast video was on how to scramble eggs in the cast iron. Maybe that's more of a cast iron video, but the technique really works! I get a nice fluffy scramble with little or no sticking. I gotta say, this recipe looks like a winner. I'm gonna have to try it.

Love the classic biscuits and gravy because that's purty close to how I've made the for years now, but the mountain man breakfast has got to be the winner. I used to make one over my kettle with hardwood similar to it a few years back when my young daughters and I would spend the entire day on the mountain cutting firewood. Also have my own version of this breakfast among many other old west (my neck of the woods) inspired recipes. Almost every meal I make is with cast iron-you just can't get any better. I thought flipping the quesadilla would be a problem, but I followed your directions and it flipped without a hitch. Alas, we didn't have ham available, so I used chicken and it still tasted fabulous. We also used your Red River Ranch seasoning and added some Chipotle Chili salsa. Yum! It's SOOOO hard to pick!!. But I was very grateful for the potato pancake recipe. My grandmother used to make them whenever we accidentally had leftover mashed potatoes and I was never very successful at making my own. Yours look even better than her!. Honestly I really loved this Breakfast Quesadilla video because I have never seen that technique of cooking the egg first in the pan and then topping it with the cheese and tortilla. Brilliant! Thanks Kent, I’ll have to try this one for sure 👍

We make quesadillas all the time. Of course the quick and easy cheeseadillas. I use cast iron a little each week. But watching your shoe I use them almost every day. I even gave a 15” lodge skillet as a wedding gift . It may not seem like much but that’s what he wanted and you know I added some grilling gloves to go with it . Ty be safe and keep cooking. 🙏🇺🇸

Well the biscuit's and gravy was my favorite, but my 8 month pregnant wife is a quesadilla junky...soooo this has moved into the number 1 spot for now...I've learned Happy Wife, Happy Life!!! Kent has gotten me into cooking over campfires, Cast Iron cooking, and just a huge interest in learning to cook. My favorite part of camping is now cooking over the fire 100% My all time favorite recipe though is the Green Chili Mac and Cheese with bacon!! I make it every Christmas and/or Thanksgiving!! My favorite breakfast video is actually from several years ago "Cowboy Breakfast at a Cowcamp" You are not going over a specific recipe but you are going over why you do what you do and, the meaning of togetherness in the morning for breakfast at camp. I have watched it so many times and it always takes me back to when I was small and being in my grandma's farm kitchen on a cold Wisconsin morning as she was cooking breakfast SO early in the morning and it was just me and her. She would give me some coffee (with lots of cream) the smell of bacon and fresh biscuits filled the air. This video is just wonderful! Everyone bowing their heads before the first bite. Thank you for the realness and feel of it!!

What a fantastic recipe! I really like the idea of cooking your eggs very gently and slowly while adding a layer of cheese to help bond the tortilla. This is so much better than simply stuffing a tortilla with scrambled eggs. Your method really does make the most even and consistent quesadilla by having an equal distribution of eggs and filling. It reminds me of when our girls were little - our youngest was obsessed with cooking shows instead of Saturday morning cartoons. She's now a chef in Branson. Honestly couldn't choose a favorite video they are all so good very good recipes and very entertaining. We have tried most of them and eatin wise just depends on what sounds good at the time .we probably eat more biscuits and gravey than the rest but has always been a family favorite for us
My favorite breakfast video was on how to scramble eggs in the cast iron. Maybe that's more of a cast iron video, but the technique really works! I get a nice fluffy scramble with little or no sticking. I gotta say, this recipe looks like a winner. I'm gonna have to try it.

Oh, my absolute favorite is your Breakfast hash Video. Where I'm from, in Canada, I had never seen or heard of that before. I think I make that recipe at least once a month, it's so good ! I have also saved the video to view later, because I have to watch it everytime I make the recipe 'cause I can never remember the ingredients. Love the classic biscuits and gravy because that's purty close to how I've made the for years now, but the mountain man breakfast has got to be the winner. I used to make one over my kettle with hardwood similar to it a few years back when my young daughters and I would spend the entire day on the mountain cutting firewood. Also have my own version of this breakfast among many other old west (my neck of the woods) inspired recipes. Almost every meal I make is with cast iron-you just can't get any better. Keep up the tradition. Great work.

So we now have our improved method provided by yall for preparing, cooking and, serving this wonderful quesadilla. It's fun, quick and easy. Most of all...best quesadilla method we have ever used. Oh my, Kent and Shannon, what a delectable dish! I made this quesadilla for my wife this morning for breakfast and she loved it! You are right Kent, it is so easy to make. I thought flipping the quesadilla would be a problem, but I followed your directions and it flipped without a hitch. Alas, we didn't have ham available, so I used chicken and it still tasted fabulous. We also used your Red River Ranch seasoning and added some Chipotle Chili salsa. Yum! Up to this point my favorite breakfast video was the omlette in a cast iron skillet. Thanks for a great video and recipe. Blessings to you both.

It's SOOOO hard to pick!!. But I was very grateful for the potato pancake recipe. My grandmother used to make them whenever we accidentally had leftover mashed potatoes and I was never very successful at making my own. Yours look even better than her!.
