I used to work in a Greek restaurant in FL. I remember watching the owner stand at the stove and stir in the slow time in the afternoon. It was delicious. I prefer mine when it's still warm. Wow! This turned out great!. Used arborio rice. Letting it cool now, then sprinkle with a touch of cinnamon, just like the Greek diner does. No raisins, no whipped cream on the top. Perfect. Thanks, Ken.
Omg. I come from Ottawa and ate a most wonderful rice pudding at a local restaurant. I have scoured the internet searching for a recipe that used a 'risotto' method. I want to thank you so much. I was missing the milk to rice ratios. I would have never guessed 6:1 or a 'congee' method. I laughed. We had others from Ottawa looking for rice pudding too. Thank you very much!!

So~we lived on the Rideau Canal for 17 years. The village close to us had a restaurant ~ run by Spiro and Maria. Spiro and Maria made rice pudding To. Die. For! We were, of course, frequent visitors, (his pizza is still my favourite in all the world.) If we happened to be in the restaurant when they made rice pudding ~they'd bring out a big bowl and serve it up to all present. He kept saying it was a "test" batch, 😂! I laugh every time I make a foreign dish they tell me they are amazed at my cooking because they thought all American women do is eat chocolate and sit on the couch and watch tv. For me using that much Vanilla is like using concrete in a life preserver. I love Basmati Rice in Rice Pudding. I also add Cloves, Cinnamon Stick, and Green Cardamon. Love Raisins in my Rice Pudding. As well I use a pressure cooker and hit the Rice button, 12 min later perfect Rice. Pretty much the only time I have ever disagreed with you, love you channel.
Monkfruit works lovely..I just letting you know..ken passed a yr or so ago..so may be why no reply... I use the monkfruit from Costco blend. Good luck..you can also use half rice and half cauliflower rice..I know sounds strange but works or quinoa..you may have to add a thickener agent tho.. goodluck
Forgive my ignorance but you serve them 'set' and cold, is that right? I used to adore my grandfathers rice pudding, oven cooked with a 'skin' formed on the surface, served hot straight out of the oven. Your recipe looks incredibly all the same. Thank you from Cymru
Never made it before and thought I would stuff it up: rice would stick, wouldn't thicken, not sweet enough..... but followed your video and it came out perfectly. Wife wants a bigger ramekin next time! Bravo Ken. Other recipes suggest Arborio rice - what do you think?
You're free not to like raisins in your rice pudding, but there's no reason to say it looks like dead flies. It is possible to state your position without demeaning other people. Thanks for the recipe.
