    We just made this! There are three different rice amounts. The recipe calls for 3/4 cup; one comment from Joe calls for 1.25 cups and another call for 1.50 cups. We went the 1.25 cups and it is perfect!! Looks just like the video and tastes so wonderful. My wife mixed a dollop of the rice mixture into the eggs and quickly wisked it up and the we mixed that into the rice mixture. Perfect. I tasted it warm and it is the most delicious pudding you can imagine . Thanks Joe

    Awesome!! I like these older videos where I can hear your music! I’m such a music lover..Dino, Sinatra, Cole, etc. etc. Your newer videos barely transmit the wonderful music you play, so it’s not quite as much fun..almost though😉 I really love your recipes and style of cooking..brings me back, for sure!

    Hi Chef Borio! My husband's wonderful Grandmother died 22 years ago, and her amazing Rice Pudding recipe disappeared. I have searched for years for one like hers, and Voila, your recipe is 95% similar. Thank you SO much for sharing. Great tutorial, super great music in the background.     What I love about this whole video is that you give respect to a simple recipe that a lot of people turn their nose up at, thinking it's poverty food or something from the olden days .. like bread pudding.     I really love your recipe my Aunt did the identical recipe .. though I feel like you should lower the background music because it drowns your narration. Promise I am Italian, Romano and love the music. Some of your music is lower when you are by the stove

      2% works as well as full fat because you use full fat cream.

    Love your videos Joe. You answered that the amount of rice is 1 1/4 cups yet the recipe on your web site says 3/4 cup of rice. Can you confirm which is the correct amount of rice? I also enjoy the music in the background and your stories. Thank you for sharing all of your wonderful recipes.

    For many years I designed and then later switched to building and installing kitchens in the Carolina's, Mostly Charlotte. I had more fun with Italian and Greek families. The passion and generosity of those family kitchens could change the world. This will be a dessert I will surprise the family with in the upcoming holiday season.     My step mother born in France, used homemade preserves, on top, just a tiny drop… I love it with whipped cream on top. Just love rice pudding, no nuts for me tho…..I like the way you fold in the whipped cream also…Have fold in, instead…So smooth and creamy …Thanks…

    The vanilla bean "syrup" that you speak of is really vanilla bean paste (it's on the label). I have and use that brand.

    I wanna know what he did with the little bit of sugar that was left over and how much would cream did he use? Anyone

      Joe used one cup of heavy cream. He took the quarter cup of sugar he held back and blended it in the heavy cream. He said the whipped cream was unsweetened because actually the sugar is meant for the rice pudding. I would just keep it simple and put all sugar in pot with rice. The whipped cream topping can be sweetened or not, your choice.

    My mum made us the perfect rice pudding as children in an oven proof Pyrex dish large one cos we're big family and it was so creamy and delicious and out of this world with a perfect layer of brown crispy skin id that not how it's meant to be done like caramelized on the top with delish tasty nutmeg oh my days way better than pan method !

      Absolutely agree with you on the oven method with crispy skin on top served hot with a blob of jam. (Traditional English way?) Rice pudding Italian way seems to be served cold, nice for a change in summer.

    Joe, love your channel, I just am driven off the deep end b/c that sound needs to COME DOWN with the music. If you are going for ambience with the music, it's so distracting, and it interes with my concentration of trying to listen to what you're saying. Kudos to you for adding the eggs/yolks. Finished product looks delish! No nuts though. Texture issues!

    Your recipe is on the money, I'm in my 60's and have been making Rice Pudding since I was 12. I've made your recipe many times and every one loves it.
    I do one thing more, in the beginning when your add the sugar, the rice, vanilla, salt and the butter I add about a shot of Ouzo. It's a Greek liqure similar to Sambuca but a little stronger.
    Stir that for about 5 minutes, then you add the milk. I follow the recipe to the T except for the Ouzo. To me it give the Rice pudding, how can I put it! Oh yeah it gives it that Bada Bing zing to it... Fuhgeddabodit!!!

    My recipe calls for using butter to cool the mixture before adding egg yolks. I use a vanilla bean and a teaspoon of vanilla extract.

    He sure is a friendly guy. Really appreciate how he explains in detail about how easy it is to make and throws in a little family that's Italian.He reminds me of John Travolta when John was young. ( 1 1/4 cups of rice.) Should shut off his music in the background. Distractio

    !Need Help! Okay a couple questions. I'm making this recipe right now and I've watched the video more then a couple of times to get it right lol. Unfortunately you never say exactly how much rice you use only a reason for what kind of rice you use. So first how much rice exactly?Also if you only have vanilla beans how much do you think I should use? One whole one? Or maybe a half of one? This recipe looks amazing and I just want to get it right is all. Im making it for my husbands itailian family and cant mess it up lol. Thanks again for all your amazing videos!     I use a bit of farro to give the pudding a nutty sweetness which allows me to add less sugar.

    I followed directions to a tee and mine didn’t thicken like yours. I cooked mine a lot longer…..the rice cooked but was disappointed that mine didn’t turn out like yours 😔. I also didn’t smell it cooking like you did but maybe it was because I used plain vanilla and not the bean. Hope to hear from you. I did forget to mention that I used a diffuser so the milk and rice wouldn’t scorch. Maybe that had something to do with it?

    I enjoy the music but I believe the problem people are having is that you have to be louder, and that is the problem. Glad you are cooking it all on the instead of in the oven. That is how my mom did it and, like her, you are folding in whipped creme. Thanks for this recipe.

    I would really wash the rice two or three times before cooking it to eliminate as much arsenic as possible.

    I like to use heavy cream and coconut milk, even some fine coconut, a bit of crushed macadamia nuts.

    Joe ! Your recipe is awesome but you don't tell the viewer how much rice to use or how much heavy cream you are whipping up to fold in. It looks like it might be one cup of the cream but I couldn't see the markings or measurements on the cup. How much heavy cream should I use ? Love the Playlist !

      the recipe is right except for the rice. its 1 and 1/4 cup rice.

      Unfortunately I used 3/4 c of the rice and it never thickened……a real flop! I would only use 1/2 c of the sugar because it was way to sweet.

    When u mention the ingredients for rice pudding u said 1 cup heavy cream. Yet you folded whip cream into rice. You should put up the receipe.
