  • Beef Fajitas with Migas on the plow disc aka disco aka cowboy wok.
    FAJITAS (Tex-Mex) any grilled meat usually served as a taco on a flour or corn tortilla. The term originally referred to the cut of beef used in the dish which is known as skirt steak.
    MIGAS (Tex-Mex) Eggs, crispy corn tortilla strips, diced onions, sliced chile peppers, diced fresh tomatoes, or cheese, as well as various spices and condiments (e.g., salsa or pico de gallo).

    So good to see you posting again, Yakima. You were sorely missed.
    What a great combination. I can't wait to try it. I like that you used several colors of bell pepper - so colorful and so much more inviting.
    Quick question: The meat looks really tender. How long do you let your fajitas marinate?

      The colorful peppers add to the flavor as well as to the curb appeal! As for the marinating, these fajitas were cut into pieces before marinating, so it probably works faster than an uncut skirt steak, so a minimum of 2 hours up to overnight. The fajitas in this video marinated for about 4 hours. Thank you for the comment!

    This looks great, going to have to try it. Only thing is, isn't better to cut meat against the grain? Your cutting with the grain.

    What size is that disc? And what kind of burner are you using?

      It's a 24" disc from www.maverickfab.net in the Fort Worth area. The burner itself...... well it isn't a jet burner and it isn't a banjo burner. I switch back and forth between my very old high pressure cast burner and also this one which is a very old low pressure cast burner. The high pressure cast burner gives me a small hot spot of about 8" in diameter. This low pressure cast burner gives me a slightly larger hot pot of about 11" to 12".

      I've ordered mine last week on Monday afternoon, I've had so much trouble ordering it. It took me 2 weeks to get it ordered and now it's taken 7 days so far (today's monday) and I'm still waiting. I live in the Houston area, 5 hours away

      Basically migas is scrambled egg ala Mexicana (onions and pepoets) cooked with crispy corn tortilla strips or pieces. Crispy to start but not after cooking with the eggs. Many households cheat and use Fritos corn chips.
