How To Cook The PERFECT Steak!

  • This is my quick and easy recipe on how to cook the most PERFECT steak!

    / @tastybitesmike
    INGREDIENTS
    12oz sirloin steak
    30g unsalted butter
    2 garlic cloves
    3 sprigs of rosemary
    Salt
    Black pepper
    METHOD
    1. Rest the steak at room temperature after seasoning (approx 30-45mins)
    2. Pat dry with a paper towel
    3. Season with salt and black pepper
    4. Rub in well
    5. Oil in a cast-iron skillet on a medium-high heat
    6. Crush and peel the garlic cloves
    7. Cook the 12oz steak for 6 minutes, turning over every 1 minute 30 seconds
    (Use a cooking thermometer if required - Medium cooked = 140F/60C)
    8. Add butter, garlic and rosemary for the remaining 2 minutes
    9. Baste the steak with the melted butter
    10. Sear the fat
    11. Leave to rest for 5 minutes
    12. Season with salt and black pepper

    Nice video, just few questions.
    1, Whats the temperature of the stove? Medium? Medium high? High>
    2, Once you heat up the pan to a certain temperature do you turn down the stove or leave as it is.
    3, 1:14, in the video you said add butter for remaining two minutes, are you referring to the additional 2 minutes or the last two minutes within the six minutes?

      1. Medium high but make sure you use a cast-iron skillet!
      2. I’ll leave it as it is.
      3. Add the butter in the last 2 minutes within the 6 minutes.

      You constantly baste on a medium high heat (tilting the skillet) for the juices to really absorb the steak, enhancing the flavour ☺️

    What kind of cooking oil are you using? I’ve used avocado oil and my kitchen keeps filling up with smoke… not sure what I’m doing wrong

    Can you clear something up? Near enough everyone peppers there steak before cooking but pepper can burn so I've herd it's always best to put pepper on the steak after cooking not before, I cant seem to do this though I love seasoning my steak before 😅

      @@sethterwilliger9434 Season well, and baste in unsalted butter! Also, buy a meat thermometer then you can’t go wrong. Bear in mind, the steak will continue cooking when resting. Usually goes up by another 5f or so. In my most recent videos description i have added an internal temperature guide for doneness ☺️

    I've been cooking steaks for over six decades, and hands down, the best way to get _your perfect_ steak is in an air fryer with a wireless probe.

    This guy wipes the top of the steak dry,,then flips it over on the wet spot, to dry the other side ? On that whole cutting board,he couldnt find a dry spot ?

      @TastyBitesMike it sux. But I just can't digest it anymore. I have a minor anbilocal hernia and food that sits in my stomach too long irritates it. I just eat ground turky or chicken for that reason.

    The steak has enough fat in it without adding butter. Try grilling it.

    Do not use his time suggestions unless you like your steak medium or medium -well done. 1 min 30 sec per side is too long. 1 minute to 1-10 max! Ruined a prime cut ribeye using his 1 min 30 sec time. Or tell us what heat setting you are using.

      Sorry your steak wasn’t cooked to your liking! My timings are for a medium 12oz steak, on a medium-high heat. I do state it all in the description and to use a cooking thermometer if required.

    You lost it when you added salt and pepper before frying. That is done after everything else is done. Also, vegetable oil is essentially water, so that you really cook it instead of frying. Use cooking fat. And please-please turn it over only once, as soon as juice seeps up. That will be a good steak.

      @@TastyBitesMike The original recipe specifically mentions unseasoned meat, and that for a good reason: any seasoning pulls water out of meat, and that is detrimental to the process of cooking and then final taste. Just give it a try. You'll probably never go back. :) By the way, they add only pepper afterwards: meat naturally contains just the right amount of salt.

    1. rest to room temp? did u checked how much it gained during that time? bet it was not room temp - its unnecessary, no restaurant does that, its imposible to know when customer will came etc. and its make no difference 2. grill pan is bad too, it will get bitter on this strips, no one wants that, just use plain pan. 3. dont cook on time, every meat is different, use cooking thermometer with probe and cook to desired temp and flip every 30s to cook evenly

      Leaving to rest with salt ensures a more even cook. Correct, restaurants don’t have time to do that, however us home cooks do ☺️ what pan is a personal preference! A cooking thermometer is handy if needed, I just go by the feel however the timings is recommended for 12oz thick steak ☺️

      @TastyBitesMike But your video doesn't say all that. You rested first and season later its not all the same. Sesoning long time before have special name for it. Ok you are right pan may be a preference. But if someone looking for a guide, goes to store and pick up random steak with different size or part type then it's not good to stick to time cook. Cooking thermometer cost couple of bucks. Steak will be not with desirable degree of doneness. We don't want anyone to be discouraged if they don't succeed.

    Looks like a thick piece of leather.never should butter or oil during grilling,it will make the meat very tough

    Le poivre avant la cuisson : grossière erreur.
    Le poivre s’abîme à haute température.
    Ne l’ajouter qu’en fin de cuisson.
    Ne pas retourner le steak aussi souvent. La réaction de Maillard, fondamentale, ne se fait pas correctement.
    Too much faults : this is not the perfect steak.
