On another note, cutting the steak vertically shows that the meat is consistent all the way through, rather than cutting it horizontally where the cross section is much smaller.

I liked what they did in Masterchef Australia once, where during a pressure test, the decision was so close that they decided not to eliminate anyone since it was literally down to the tiniest of details which the judge decided wasn't worth someone going home for.
Marissa's steak looked the best in my opinion. Great sear and perfectly cooked. The other two ladies overcooked their steaks.
Nadia’s steak was Well Done.

As a steaks & burgers grillman, I have to say that only 1 dish that can be considered to be a medium rare steak is the first guy contestant. The 2nd and 4th was a medium. And lastly, the 3rd and even the example is closely to be medium well already. Medium rare supposed to have some of rare part like 25% or less, but make sure that it still have some rare part. that's why it's called medium-rare.

It’s the easiest way to see if the steak is cooked the whole way through in the very center? I’m sure he wouldn’t cut it that way if he weren’t judging.

imho first guy's stake was not medium rare, it was rare, pinker than the example
This is a pretty easy challenge, I mean as far as cooking goes. I'm honestly surprised this appeared so late in the show with just 8 contestants. This is gotta be one of the first things you should learn when learning to cook for yourself. You can cook a variety of different meats with this technique. Pretty essential for pork chops - can make them taste far better than the $3-4 they cost to buy.
While its rather easy but its also so easy to screw up, little too high heat and your butter is done for, little too low heat and your steak is too raw etc. Its such simple dish that it also makes people overconfident really easily causing them to get sloppy and make the small mistake and ruin their steak.
I think that’s the beauty of it. You give them such an easy challenge that any chef should be able to do, but it’s a stress test. When everybody’s overthinking everything, see if they can get back to the basics and fundamentals.

To be fair, last two steaks were edging being overdone, especially the second last one, definitely more than medium rare. I too would prefer a well seasoned steak over a slightly less done steak however.

I biggest pet-peeve with seasoning steak right before grilling led me to put salt on my steaks several hours before grilling. It has made a huge difference in flavor and helps to absorb the excess moisture for a nice sear.
Agreed. Making sure that the steak is dry will help you to get a good sear, and seasoning even a 1/2 hour before you put it on the heat will help the steak absorb more seasoning (massaging it in works too but many people don't like touching the raw meat... I guess because they don't like washing their hands?) these poor chefs only have minutes to season

@Matt Medium? Sure. Pushing medium well? No you're just shitting on it for the sake of it at that point. The difference between a single grading can occur simply via lighting differences. If its lightly pink all the way through its not a medium well steak.
It also has to do with the cameras they use, that could affect the color we see when watching

I switched to sous-vide last year. I basically score them on the grill, vacuum-bag them, and put them in a 145*F tub for a few minutes (depends on the temp of the meat). Medium-rare is what 90% of my guests want anyways...
I think they ALL watched at least one episode of Gordon Ramsay and GET it now. Medium and Well Done are BAD and a little red & pink is GOOD!
I sell a lot of Bavette, and it's the BEST way to do it. ALWAYS perfect.

It seems that each candidate took out the steak for cooling down in last 5 mins, but would it be possible that the steaks from 3rd and 4th candidates will be less bloody, as their steak were tasted later (residual heat inside the steak might mitigate the residual blood) ?

My 15 yr old son and I tried to cook steaks for the first time ever tonight. They were thinner than recommended/watched here so they were overcooked for our liking (160 degrees), it was a tad too salty for my liking but not horrible. We have learned from the mistakes we made, but overall were really happy with the outcome. We're committed to eating our mis-steaks while we learn. How do you keep multiple steaks going for a family of four though? two large pans? sheet tray in the oven while cooking one at a time?
A lot of time had passed between the first steak that was cut to the time the last steak was cut. That would make a difference

A couple of those were definitely more on the side of medium than medium-rare. 4:45 is the only one I would say is genuinely a perfect medium-rare.

In my own opinion, the only medium rare steak was the first one. I am also a believer that everyone has different understandings of steak temperatures and doneness so to each their own.
Degree of doneness is defined differently in every country. None of the ones in the video could be called medium-rare in France.

If resting is so important why cant the judges cut up everyone's steak at the same time?

The resting before basting is what they were talking about, because by letting it rest you can cool the steak down so when you put it back to baste the inside won't cook ad quick as if you didn't rest. That would ensure a nice crust and good caramelisation.

The last steak waited for almost 5 minutes before it was cut. It looked like medium but could be medium rare.
filet mignon is so easy. cast iron pan on medium high, butter with salt and peper both sides. 4 mins each side and then 4 mins each side in a 350 degree oven (still in the pan). perfect medium rare every time
Ha! I just cooked steak like this tonight! Getting my cast iron pan was a game changer. I never get tired of cooking and eating a steak! Was it just me or did the judges demonstration steak look a lot more 'medium' than 'medium' rare? I cook my steak between 2.5 - 3 mins per side and it is medium rare. 4 mins on each side seems a little more cooked to me.

It dude looked a lil more medium than medium rare but it’s also how long they rested the steak cuz like the first two people there steak there steak wasn’t rested enough while the third one was rested enough and the fourth was almost fully rested like you can test it out like cut a steak right away and cut a steak 5 minutes or more and see the difference
Honestly probably due to lighting. Lighting can make things look brighter or darker and it’s specifically evident with steak.
Keep your pan on medium high to able to cook medium rare
