I remember when studying abroad in Taiwan, the scallion pancake shop near my university offers a lot of additional for it (From veggies, tuna, bacon, cheese, etc) even laced it with eggs so u need two pan, one for eggs and one for pancake dough one the pancake is done, u pour eggs and add the additional of your choice while the eggs is half done, close it with pancake, wait a while and flip it BEST FOOD EVER!
Guys! You can lessen the ingredients if these are too much. The ratio of flour to water is 2:1, so if you only want to make two pancakes (for about 1/2 people), put 2 cups flour and 1 cup warm water. The rest is is easy. The amount of scallions is up to you

I love scallion pancakes! My mom used to make them when I was a kid. She used a lot more oil to kinda deep fry them tho. To me scallions, bacon AND cheese is the best combo *_* but dried shrimps are good too!
When I've made scallion pancakes before, I just used my bread machine & prepped real bread dough (with yeast) & then rolled the crap out of the dough (wrists = OW!!). It makes for scallion pancakes fluffy in the middle crisp on the outside. They are thicker but fluffier than traditional ones like this - I think I'll try this kind next time b/c I can't handle the wrist pain anymore. BTW, I think you should include the Chinese for your recipes, for those studying or curious. These are 葱油饼 or 蔥油餅 in Traditional pronounced: cóngyóubǐng.
i agree, most of celebrity chef in food network even chinese chef tend to fail at cooking chinese food. Seriously get someone with real street cred in cooking chinese food.
You are reading my mind :) I had no idea what scallion pancakes were, but once I saw your first scallion pancake, the first thing I thought was to add "duvan čvarci" into it (apparently, you have the same thing, but call it rousong). The second idea was cheese. I'll definitely try this once there are young onions on the markets (so in a month or two).

I learned how to make Jian Bing myself because I missed it so much, but I always thought that scallion pancakes took too much time to make. Because of the fluffiness, I thought it was like puff pastry, that you had to roll it and fold it many many times ! You actually revealed the mystery with this great video :D Thank you so much ! This type of flat bread exists in many culture with variation of types of filling and sometimes none. In Indian, it made plain to eat with curry. In Turkish, it made with sesame paste. It is pretty amazing how food similar in various culture. Experiment and have fun! Your video is fun to watch.

Working with the dough was a pain in the ass but damn Mike, you didn't promise too much! The pancakes taste too good. I was planing on giving some to my friends but i couldn't stop eating them...although I need to massage them more next time for ultimate fluffiness
Very similar to the way I make onion pancakes...except I use sesame oil AND toasted sesame seeds in the pancake before I roll it up. For my sauce I just mix light soy, black vinegar, chopped dried chills and LOTS of fresh sliced ginger. One of my favorite comfort foods, thanks for sharing!
Dear Mike, Thank you for this recipe. It is just like the pancakes my husband and I used to get from a great restaurant where we had our first date. Sadly the place suffered a fire and never reopened. My husband has given me the challenge of recreating his favorite meals from this restaurant. I was curious if you knew of a dish called that was named Chicken three ways. It included a chicken stir fry with vegetables and white sauce. A fried chicken similar to General Tso or sesame and finally a dish called Scallion Chicken. I cannot figure out how to make the scallion chicken. The best way I can describe it is a pounded and breaded cutlet which after fried is then sliced and served with a thick brown sauce and sliced scallions on top. Knowing that you are a fellow foodie, I was hoping you could lend any suggestions to recreation of this amazing meal.

After watching a couple of your videos where you work with dough I would like to make a suggestion; place a couple of damp paper towels under your cutting board to keep it from sliding around. You could also use this stuff that comes in a roll that is used to line drawers with to keep things from sliding. I love your videos and can't wait to make this one.

Actually, if you wanted a relaxed dough, you should knead it as little as possible. Kneading for 10 minutes is normal. But dough gets tough if overworked.
Cardinal thunder my grandmother used to the knead the dough for 30 minutes. She used to sing devotional songs and she had a set list at end if which she would stop kneading . The dough used to be fluffy and the rotis/chapatties she made had layers and were silky soft and remained so for 2 days. She used to say more you knead the better. It was when I watched westernrecipes especially pie recipes I was surprised that you should not knead it.
Strictly Dumpling, Off the Great Wall, and the Double Chen show have eaten many an hour for me in a great past time.. Not to mention the time I've spent recreating and playing with recipes!! :)
One combo you have to try for this is spinach and FETA cheese! Just do the spinach in a pan so it "wilts" and cooks first, then sprinkle it on the pancake together with your spinach. I am sure it will be great with the scallions too, but it is not necessary, just spinach and feta is a great flavor as is! i love this in turkish børek, in small pastry pockets and in pies, it is just so yummy. But you don't need salt on your pancake, I don't think, the feta will make it more than salty enough... I was just sitting here watching your videos while waiting on a customer support on live chat. After half an hour, I am now starving, so think I will have to take a break and cook a little, can't wait for pancakes though, think I will go for tortellini, LOL! :)
My thought exactly, watched a lot of paratha vids a while ago... seems a bit time consuming compared to the pancakes I am used to (crepe type mostly and lately a lot of chickpea pancakes)... Wonder if you could make these with chickpea flour too... :)

This is basically the Chinese version of our roti. XD My grandmother makes roti in basically the same way, just without the scallions/salt. THIS LOOKS SO GOOD THOUGH, I MUST TRY!

Thank you for sharing such a delicious recipe...I can NOT stop making these for my family & friends (just like you warned us). lol I made some the "BACON-SCALLION-THIN POTATO-CHEESE" pancakes with some shredded cheddar cheese. I did have to gently "pre-cooked" the potato...then let cool, then slice thinly (like scallop/au gratin style) then I added the scallions (as directed), along with the rest of the ingredients & of course, the sliced "pre-cook, preseasoned" POTATOES! So GOOD!!! I'm looking forward to "trying" all the other ones you spoke of...this is so much FUN! ;-D YOU SUPER ROCK!!!!

Cold water prevents the premature denaturing of the proteins in the flour, leading to a less dense dough as it rests. In essence you're cooking your mixture as you form it with hot water, which is sometimes desired. His mixture of cold and boiling water helps created lukewarm water which is usually most desired when working with dough. It really comes down to what mouth feel your aiming for, for example you were making something like ciabatta rolls, you'd use hot water in order to reach the desired texture.
+Tim Lim so why not just use warm water? why hot + cold?. that's just an unecessary complication. why not just specify a temperature? afterall, everyones "cold" water is a different temperature.

Thank you for this recipe. It is just like the pancakes my husband and I used to get from a great restaurant where we had our first date. Sadly the place suffered a fire and never reopened. My husband has given me the challenge of recreating his favorite meals from this restaurant. I was curious if you knew of a dish called that was named Chicken three ways. It included a chicken stir fry with vegetables and white sauce. A fried chicken similar to General Tso or sesame and finally a dish called Scallion Chicken.
I cannot figure out how to make the scallion chicken. The best way I can describe it is a pounded and breaded cutlet which after fried is then sliced and served with a thick brown sauce and sliced scallions on top.
Knowing that you are a fellow foodie, I was hoping you could lend any suggestions to recreation of this amazing meal.

We're a proud Amerasian Family that LOVES scallion pancakes...They go with anything & everything...Sometimes I'll add black sesame seeds, few drops sesame seed oil & a little cilantro...BTW Mike...I think you're an absolute DOLL... : )

After watching a couple of your videos where you work with dough I would like to make a suggestion; place a couple of damp paper towels under your cutting board to keep it from sliding around. You could also use this stuff that comes in a roll that is used to line drawers with to keep things from sliding.

Also: What about spreading hot oil on the pancake instead of regular vegetable oil?
Hey Mike, thanks for the recipe. You ever feel out of place? I'm sure everyone has. Well that's me at the breakfast table when North American pancakes are being served! Can't stand them. OK if I was starving. So one day about 25yrs ago I thought of putting onions in my pancake mix and I was the laugh of the times. I swear people in my neighborhood of friends laughed so hard for at least 5 yrs. So now I can call on them with some Chinese scallion pancakes!!! Thanks Mike, I knew I was on to something back then. Actually, if you wanted a relaxed dough, you should knead it as little as possible. Kneading for 10 minutes is normal. But dough gets tough if overworked.
Cardinal thunder my grandmother used to the knead the dough for 30 minutes. She used to sing devotional songs and she had a set list at end if which she would stop kneading . The dough used to be fluffy and the rotis/chapatties she made had layers and were silky soft and remained so for 2 days. She used to say more you knead the better. It was when I watched westernrecipes especially pie recipes I was surprised that you should not knead it.

One combo you have to try for this is spinach and FETA cheese! Just do the spinach in a pan so it "wilts" and cooks first, then sprinkle it on the pancake together with your spinach. I am sure it will be great with the scallions too, but it is not necessary, just spinach and feta is a great flavor as is! i love this in turkish børek, in small pastry pockets and in pies, it is just so yummy. But you don't need salt on your pancake, I don't think, the feta will make it more than salty enough... I was just sitting here watching your videos while waiting on a customer support on live chat. After half an hour, I am now starving, so think I will have to take a break and cook a little, can't wait for pancakes though, think I will go for tortellini, LOL! :)

Looks good!! Ive used chopped onions before instead of scallions when i ran out. The flavour profile is rather similar.
This is very similar to making a Indian Paratha only with white flour

My thought exactly, watched a lot of paratha vids a while ago... seems a bit time consuming compared to the pancakes I am used to (crepe type mostly and lately a lot of chickpea pancakes)... Wonder if you could make these with chickpea flour too... :)

This is basically the Chinese version of our roti. XD My grandmother makes roti in basically the same way, just without the scallions/salt. THIS LOOKS SO GOOD THOUGH, I MUST TRY!

I made some the "BACON-SCALLION-THIN POTATO-CHEESE" pancakes with some shredded cheddar cheese.
I did have to gently "pre-cooked" the potato...then let cool, then slice thinly (like scallop/au gratin style) then I added the scallions (as directed), along with the rest of the ingredients & of course, the sliced "pre-cook, preseasoned" POTATOES! So GOOD!!!
I'm looking forward to "trying" all the other ones you spoke of...this is so much FUN! ;-D

Cold water prevents the premature denaturing of the proteins in the flour, leading to a less dense dough as it rests. In essence you're cooking your mixture as you form it with hot water, which is sometimes desired. His mixture of cold and boiling water helps created lukewarm water which is usually most desired when working with dough. It really comes down to what mouth feel your aiming for, for example you were making something like ciabatta rolls, you'd use hot water in order to reach the desired texture.
+Tim Lim so why not just use warm water? why hot + cold?. that's just an unecessary complication. why not just specify a temperature? afterall, everyones "cold" water is a different temperature.
