      The people on the streets of Taipei say she is still eating pancakes made on that day ;) I considered subscribing and wanted to check for other videos and was surprised there is only one such high-quality video on the channel! I am slightly worried for the folks in Taiwan because some experts call the war in Ukraine the first battle for Taiwan.

    I've watched half the video without even the intention of doing these Pancakes but just fell in love with it.     I appreciate the presentation of different rolling techniques and the commentary on the way they differ in texture. Also, so far, after watching at least 10 different videos on making scallion pancakes, this is the only one that mentions the benefits of resting the dough for a long time. Mahalo!

    Thanks for your analysis and recipe. It’s the best guide to make scallion pancake. I rested the dough in the fridge overnight and made #2 and it’s so much better than all the ones I made before. So scrunchy and so many soft layers. Thanks again. Hope you will post more videos in the future.

    I totally agree. I always keep dough in fridge overnight. Been watching many videos about making scallion pancake and yours and one more are the only ones that recommend it.

    yes! my mom always did the first version but actually folded and rolled it up twice! idk if the number of layers will be noticeably different. also the oil flour paste is so much better than what I've always done, which is straight oil and raw scallions.

    I rested mine for 24 hours. I did not put a plastic wrap to protect the dough from drying up before covering with a lid to rest the dough. Slighting regretting that but after kneading it the dried part was tucked inside so it was ok. I did the scroll and cut thread method. Both came up really crispy but the cut thread was the crispiest. Also I made a roux instead of pouring hot oil on the fillings. I think I made it too thick cause it made my pancake slightly dry. Overall this such a delicious recipe. I wish you can upload more recipes in the future.

    My wife and I have always enjoyed store bought scallion pancakes and I've always wanted to learn to make my own. After watching your wonderful video I decided to take the plunge.     This has got to be one of the best guides I've even seen for scallion pancakes. I used to follow Angel Wang's recipe which was really good but your video allows me to expand my understanding and make these scallion pancakes my own! Amazing video!

    Thank you! I've tried other recipes and they didn't turn out as tasty and crispy as these. With the thorough research and explanation, it could only be good.     I just made your scallion pancakes tonight. I didn't have Chinese flour so I used Gold Medal All Purpose Flour. I also let the dough rest in fridge over night. Oh my god. Hands down this is the best recipe ever!!! Thank you for making the effort to perfect this recipe. I used the second folding method and achieved so many layer!! I have been looking for a legitimate recipe for 2 years. Some of the ones I've tried was close but still missing that flakey chewiness. I'm definitely going to remaking this over and over again!
