    Scallion pancake is a pan-fried flatbread. So easy to make but very delicious. We usually eat this with plain porridge. It is a cheap Chinese food but so delicious. In This video, you will learn how to make a perfect scallion pancake which is multilayered and delicately flaky

    *LIST OF INGREDIENTS*
    10 ounces [283 grams] of all-purpose flour
    7 ounces [198 grams] of warm water
    1 tsp of salt or to taste
    2 tbsp of all-purpose flour
    1 tsp of black pepper
    1/4 cup of vegetable oil
    Some green onion
    *HOW TO MAKE SCALLION PANCAKES*
    - Mix 10 ounces of all-purpose flour with 1 tsp of salt. Pour in 7 ounces of warm water in batches. In the same time use chopsticks stir it.
    - knead it for 5-8 minutes or until it becomes a soft dough. Feel free to use some dry flour so it will be easier to handle.
    - Put this in a bowl which is brushed with some oil in advance. Turn the dough over a few times inside the bowl until the surface is coated lightly with the oil. Cover it with a plastic film. It needs to touch the dough directly. Push out all the air. Because we are going to let this sit in the fridge overnight. If you have a little bubble of air in it, then there will be a spot with a layer of dry skin tomorrow. Be careful with that.
    - Let’s make the flour-oil. In a small sauce bowl, add 1.5 tbsp of all-purpose flour, 1 tsp of black pepper. Heat up 1/4 cup of vegetable and pour it in. Mix it up carefully. This just a basic oil. If you want to be creative, you can add some chili flakes, Sichuan peppercorn, or cumin.
    - Shape it into an even long piece. Cut it into 6 even pieces. Each one should be about 3 ounces.
    - Roll each piece into a thin sheet. Try to get it into a rectangle shape. But doesn’t have to be so perfect.
    - Brush the thin sheet with some flour oil and sprinkle some scallion on it.
    - Roll it from one side like this. Then roll it into a cake shape.
    - Use your rolling pin to roll the cake into a round sheet. Once you get it about 7-8 inches across. You can start to pan fry it.
    - Put some oil in the pan, just a little bit to cover the bottom. Put your scallion pancake in and fry it on medium heat. 3-5 minutes on each side or until it is golden brown. Do it one by one and you are done.
    *HOW TO SAVE IT*
    - Wrap it with plastic film before frying and put it in a sealable bag. It will last 30 days in the freezer. Whenever you want to eat them again. Take it out, don’t need to defrost. Just directly pan fry it. Now I am going to show you how to do this.

    When I went to Kenya my friend taught me how to make chapati. This is basically chapati with onions. A wonderful shared tradition between Africa, India and east Asia.

    Your Scallion Pancake Recipe was AWESOME!!!! I used it as the base for a kind of Asian inspired Taco.
    It was literally, the best thing I've ever eaten thanks to that amazing Scallion Pancake!
    I put a layer of Sriracha Mayo, Korean Bulgogi, and Asian Slaw with a Kiwi Mayo onto the Pancake. O.MG.! Yummy!
    The Scallion Pancake was and remained crunchy, layered and delicious & held up beautifully to the other strong & distinct flavors.
    Thank you again for this recipe. I will be using it again & again. :)

    Thank you Mandy! I made these tonight and I love the scallions! It has such an interesting texture. It was getting late and I ate the pancake with hommous! I also thought it would be great with lamb or chicken curry! Then I noticed below, someone said it reminds them of an Indian chapatis with scallions. It only shows we are all connected in some way. Learning to use different techniques in cooking, is like learning another language. There are different ways to express yourself and it can be so insightful. I hope that makes sense?

      It is quite similar to the South Indian paratha that is commonly sold in Singapore, Malaysia and Thailand. The difference is Indian Paratha do not use scallions but can add shredded red onions or eggs upon request. Normally it us sold as plain crepe or pancake. It goes well with chicken or lamb curry and is usually eaten as a breakfast meal or a light snack. In Thailand, it is normally eaten with condensed milk or chocolate cream or peanut butter.
      In Singapore and Malaysia, the dish Paratha will change its name to Murtaba if friend minced chicken or Lamb is used as the fillings. The minced chicken or Lamb are normally pre-fried with spices until dry. The fried minced chicken or Lamb will be sprinkled onto the dough exactly like how is done with scallions. The ready pancake will have lamb or chicken curry as dip.
      The Indian cooks instead of using the roller will use flipping techniques until the dough is very thin sheet and it is amazing to watch them do it.

    I am making this today. The dough is resting in the fridge as we speak. The dough was such a pleasure to work with.
    From a comment on Chef John's video of the same, I'll add the white part of the green onion to the oil while heating it for more flavor. I won't get creative though. Just your basic recipe and I'll see how I like it.

    Thank you for sharing this recipe. We have eaten a store bought scallions pancakes once and didn't like it. But I decided to try your recipe. I am glad did. Easy to follow and taste so delicious. I added a little bit of sugar as well to the flour. This is a keeper.

    My daughter and i made these and they were so yummy! Thank you! After 25 years i finally had scallion pancakes again but i never had ones like this. Would love to hear about a dipping sauce. Also we refrigerated the dough only about 5 hours.

      Her recipe is different from the traditional recipe which does not take that long and definitely does not require it be left overnight. It typically only takes about 10 minutes.

    This is "wonderful Pancake not in any Chinese/American restaurant menus on the USA east coast.
    I am a retired chef. I have been cooking since 7 years old (Easter, 1965).
    I took eggs from my brothers "Easter" basket treat package & mine to make 'Deviled Eggs', but I put too lmuch mustard in the batter.
    This was my first "Fail" breakfast meal, and my family was not happy!
    My Mom had colored the eggs with a beautiful design the night before..
    I have made these wonderful Scallion Pancakes but I like and/ or I will be using your method going forward!
