It is best to remove the pearls very quickly, I found that the larger the drops, the better the consistency! The consistency of these does not last very long, so be sure to consume immediately! There are other methods of making this that should last longer like reverse sphereification. I will post an updated video once I have a better, more consistent recipe. Stay tuned!
You don't need distilled water for spherification. We use distilled water to make sure there are no traces of calcium. But here we are adding calcium lactate to the water. If we do reverse spherification, we will need distilled water. If you have a RO at home, water treated by RO works just as fine for reverse spherification
This is great idea! I have been making these with alcohol, for shots and cocktails with different flavors. I tried making boba with starch but these with alginat looks so much better

I tried making this last night, but the problem is that after I dropped the coffee in the calcium water, it wouldn’t go all the way down and just sit on top of the calcium water making it flat 😭 do you have a solution for this?
Submerge a mesh strainer in your solution before dropping in the peals that way you can just lift it out with them all in it

What are the ratio ...like if i want to make it with 2 litre Juice then how much alginate ?
