Seeing Eric get the approval of his very strict parents, including his mom who very clearly believed in him and was jumping up and down, it melts my heart. So, so beautiful.
I believe Chef Alvin really saw the potential in Eric, like his demeanor towards Eric is similar to that of an Asian parent trying to teach his/her kid to walk on a path but without their support, knowing that they will have their kid's back when they fall. He never wanted to become a crutch and I think that was one of the major reasons behind Eric winning MasterChef.

From what I seen Eric has always seem to impress Alvin all the time. His first impression in getting his apron wasn't nice but every comment Alvin gives to Eric about his dish afterwards is always positive. (I only watch a few episode but this is just my opinion) He ended up working with him too! I'm not surprised.

He also directly showed his improvement with that Lobster entrée. In the original lobster challenge he overcooked the lobster, and he redeemed himself by cooking it perfectly. I loved how the chefs switched places with the finalists. This really shows how humble they are and how much respect they have for others.
Masterchef Canada is literally the most respectful and politest cooking competition I have ever seen.

I am from Hong Kong as same as Alvin and Eric's parent. I have got to say, you are very HARD to find a similar quality dish in Hong Kong even it looks very Asian and very Hong Kongish.
