Hello! Filipino here! I’m a huge fan of yours! Thank you for cooking our famous dish! Btw, there are still different kinds of Adobo here, depending on some parts of the Philippines. Yours is more likely the classic one that we usually cook. Hope you could also try the other kinds. More power to your channel! ❤️

Yes, some people like to add coconut milk, or pineapple. Also sometimes pork is used. Pork ribs are really good with pineapple 😋

Hi, Seonkyoung! I saw this video the morning it came out and made this for dinner that very night. I'm Filipino and I really enjoyed your recipe! Adding the sake and fish sauce really enhanced the flavor! I added about a tablespoon of grated ginger to the sauce to make it feel like my mom's. And I really appreciated that there was plenty of sauce to drizzle over rice at the end. Amazing recipe. Thank you for giving Filipinos a shout out and for helping other people get a taste of our food! ❤😁

Hi, I'm a Filipino, I aslo experiment with our traditional adobo, I tried red wine, sometimes with balsamik vinegar instead of white one, and apples.
Adobo is versatile dish and can be adopted anywhere.
Thank you for appreciating our National dish! Hahaha

I’m not Filipino, but asked many of them how they cook this dish and I took bits from all of them. First off I now cook it in an Instant Pot and it gets ever so tender. America’s Test Kitchen went to a Filipino restaurant in NYC a few years ago and the head chef marinated the chicken in 4 oz. of soy sauce, then fried it in a cold pan to brown it. Then that sauce went into the coconut milk. Next a Filipino friend in our church choir gave me some annatto seed paste made in her village in the Philippines. I’ll add Sake as you recommend. Another twist is adding diced potatoes to the mix. My family is from Shanghai and I was born in Macau and we put potatoes in our curry. They absorb the tasty gravy. Thanks so much for your version!

Hi, Seonkyeong! I think the addition of sake is brilliant. It removes the unnecessary smell from the chicken especially when one uses dark meat cuts. I’m gonna try this recipe! 화이팅 누나!

Looks so good. No Filipino will ever say an adobo's not an adobo as long as you have the basic components of an adobo. If you want to buff up the adobo, you can add potatoes as well. My mom forgot to turn off the flame one time and the sauce reduced more than usual and concentrated into something magical.

You can make it with white vinegar only
By then that would be Adobong puti (white adobo)

my dear SL, sorry it took me 3 wks to try out your recipe. I was busy and I'm always wanting soup when I'm tired. I did pork ribs in mung beans with yard long beans and bittermelon leaves, and pork ribs sinigang (sour soup).
today, Aug 14, I cooked this for lunch. 2 things different that I did. I forgot to buy lime so I just used a tad bit lemon juice. and I used rice cooking wine instead of sake. I already poured the rice cooking wine when I saw "salt added" waah!!! its going to be salty!!!
the verdict: dear Lord, this is THE BEST TASTING VERSION OF ADOBO I have ever had in my entire life next to my father's version (which I never learned to cook). I was chatting with my sister in the Phils while I ate lunch I ended up sharing your recipe to her. your version of adobo is soooo good, I ate 2 cups of rice!!! I'm not suppose to eat that much hahahaha
I'm going to share this with my American friends and I will make a spicy version for my husband this coming weekend.
I really, really, really love your recipes. keep it going girl.
by the way... it maybe too much for me to ask but I will try nevertheless. is there any possibility you can make cake recipes using 6 inch pans? the mini cake is becoming popular. I'm following a few channels on youtube but their measurement is in grams and liters, not cups or tablespoon. its very confusing and frustrating.
I look forward to your next recipe.
this is Jordan Droxford from Eldon Missouri, USA.

We add sprite in our adobo. Adobo from Mindanao or I think some parts of Visayas also is different from Luzon where the sauce is not so thick. While ours in Mindanao (Southern part of PH) the sauce is almost gone. so tasty & good to eat with hands. Finger lickin' good! In the Bicol Region, adobo is with coconut and chilli. While some, instead of soy sauce, they would use salt.

Adobo has always been a no-fuss comfort food recipe for me: just throw all ingredients in a pot with enough water to cover and then boil down to 1 inch of liquid. This is a refreshing take on chicken adobo, I’ll definitely try it out next time. I especially love that you added lime. You’re right: it makes sense to add lime!

  • @friedtofu704

The key to the BEST filipino adobo is a gazillion of garlic and well balanced and cooked off vinegar. Its all about the proper balance of saltiness cutting thru the acidity of vinegar, the aroma and flavor of garlic +hints of spice aromas from peppers and bay leaf.
I just feel like your adobo is heavy on soy sauce and overpowers the needed acidity. But Id definitely still enjoy it over rice :)

Making for the first time. I love adobo. We used to eat it in the Philippines when we were stationed at CLARK AB in 1990 before Mt Pinatubo erupted. I have never made adobo and was just researching how to make it yesterday. I got all of my ingredients at the Asian market but couldn’t find any sake. It is on the stove right now. I used 1/4 cup of sherry and 1/4 cup of water instead of the sake. Just test tased the sauce and it is so good. Can’t wait till it is finished cooking

I made this and it was more sour from the vinegar. I used all the same brand products except for the soy sauce- which I used the Swan brand for my authentic Filipino flavor. The flavor was good but too sour so I added more water, some chicken bouillon and more sugar to balance the flavor out.. turned out perfect!!

One thing to know is that depending on where you live, the concentration of the vinegar varies. I made my normal recipe in Europe and their vinegar is stronger than in the Philippines. It was so sour that we had to leave the kitchen when it was boiling. It was too sour to eat
