    I always boil some eggs, peeled off shell, use fork to poke some holes on eggs, after chicken is done, take out chicken, put in the boiled eggs let it boil in the sauce for 5 minutes, that way we have adobe chicken and adobo eggs, both very yummy

    Just a tip...marinate your chicken with soda ( coke, sprite or fanta) for at least 30 min , or more ...doing so will tenderize the meat and will significantly reduce your cooking time....adding lemon/ lime and brown sugar in the end will enhance the flavor as well...you can add Magic Sarap or Aji ginisa if you want a different twist...theres literally a hundred ways to cook chicken adobo.. experiment with ginger, coconut milk, coconut water, bbq sauce, Old Bay's seasoning, Cajun, Cayenne powder, rice wine, ...the possibilities are endless

    The Adobo recipes (both chicken & pork) in your first cookbook are the only Adobo recipes I use, any more. They are very tasty and so easy. I usually make extra meat since the leftovers are out of this world...so glad to see you back and posting one of my favorite recipes!

    This was SO tasty - one of my favorites and one that I will make often! Thank you, Flo! I added a few fresh shiitake mushrooms and some bok choi leaves that were rolling restlessly in the fridge.     Flo--so happy you are on the mend! We were concerned when we heard of your injury days ago, but are sure God is helping you to recover. You don't show any sign of a problem while you are cooking!     I was introduced to this recipe at a very small restaurant in a nearby community. The owner is super friendly and told me that he goes through gallons of soy sauce making this as one of his most popular dishes. It’s a little further than I prefer to drive so nice to know it’s not difficult to make at home!

    Oh, Dude is definitely all about the mouth feel. Gotta love it! Flo, we're all about ur recipes, ur tastes, ur foods. Can I share with you a a few Southern seasonings we gotta have that I wish you'd at least TRY. Down here in the states we love: Lemon pepper seasoning, Garlic/Onion powder, Tony Chacheries, Worstershire Sauce, basic soy sauce, Old Bay Seasoning, paprika, dried Thyme, black pepper, crushed red pepper & Italian seasoning. These are essential seasonings to have for any southern cook. Most dried seasonings are $1 at our local store; maybe that's why we love em'. If nothing else try the Tony's an Old Bay, they're life changers.

    You can add slice potatoes also when the adobo nearly cooked while still boiling, it will add the adobo taste to the potatoes and some add coconut cream,atsuete powder or turmeric powder for color.

    oh wow!!! chciken adobo is the same as chinese dish hehehe! my grandma (ahmah) used to cook pork adobo chinese style with star anise in it without vinegar so yummy🤤
    and the style you made looks so YummyLicious!!! will try that to my Filipino chinese family 👍🏻

    Looks delicous. If you add sugar tonadobo, it's called Humba. Humba is a different filipino dish.

      Just the green part, I suppose? 🤔 I never pull the whole thing out and just clip the greens which is why I end up still buying green onions from time to time when I want the white parts.

    Pork adobo is actually more common than chicken in the Philippines, especially pork belly. Try it the traditional way too without soy sauce, just using coconut vinegar, garlic, bay leaves, pepper corns. Simmering in vinegar and letting the rendered pork fat out are supposed to make it like an ancient type of pork confit, which was how we preserved meat prior to refrigeration.

    It's such a simple recipe but it delivers so much flavour! My tip for chicken adobo is to add a bit of dark soy sauce - it really makes the colour deeper and more pleasing! I like using apple cider vinegar, but don't hesitate to use regular white vinegar. It adds a sharper flavour which I think is nice!

      Why stop there, add condensed milk like Filipinos in California do. The apple cider will also work well with a drizzle of Chinese cooking wine and some lemon zest.

      We don't use dark soy sauce in Filipino adobo. In fact, precolonial adobo before Chinese influence came in just used coconut vinegar. Try using Datu Puti or Silver Swan soy sauce, Filipino brands of soy sauce and coconut or sugarcane vinegar for legit Filipino flavors.

    The wife and I cook tremendously authentic meals. W/ original seasonings.
    No fake stuff !
    We are latin, and full blooded texans Ha ha
    We also faithfully follow christ as our savior.
    Wife : cooks alot of latin foods, I cooks the same as well, and cook like yaw'l guys as well, BUT most I can cook all meats straight from the grill. We will have some day a small resturant w/ less than a handful of family staff...
